APPLE RING PIES

Apple Ring Pies image

These adorable hand-held pies don't require any apple peeling. Each round is cleverly filled with one slice of apple and a bit of caramel candy that melts and turns gooey as the pies are baked. The no-fuss prep makes these perfect for holidays and bake sales.

Provided by Food Network Kitchen

Categories     dessert

Time 55m

Yield 8 servings

Number Of Ingredients 9

4 tablespoons unsalted butter, sliced
1/4 cup light brown sugar
1 teaspoon ground cinnamon
2 small Golden Delicious apples (about 5 ounces each)
One 14.1-ounce box refrigerated pie crust (2 crusts total)
All-purpose flour, for dusting
1 large egg, beaten
2 square soft caramel candies, such as Kraft, cut into quarters
Granulated sugar, for sprinkling

Steps:

  • Preheat oven to 375 degrees F. Line 2 baking sheets with parchment. Microwave the butter, brown sugar and cinnamon in a medium microwave-safe bowl until melted, about 1 minute.
  • Cut the apples, crosswise, into slices between 1/4-and-1/2-inch thick, using only full size slices from the center of the apple. You should get 4 slices from each apple, each about 2 inches in diameter. Remove the cores from the apples with a small round cutter or apple corer to make rings. Add the apples to the butter mixture and turn to coat well, taking care not to break the slices.
  • Unroll the pie crusts and roll each on a floured surface into 13-inch rounds. Use a 4 inch round cutter to cut 8 rounds from each piece of dough (gathering the scraps and rerolling the dough as needed). (See Cook's Note.) Arrange half of the rounds on the prepared baking sheets and brush all over with the egg. Center an apple slice on each round and spoon any juices left in the bowl in the center of the slice. Place a caramel piece in the center of each slice.
  • Lay the remaining dough rounds over each apple slice and press the edges gently to seal, then crimp the edges with a fork. Cut small slits in the dough for air vents. Brush the tops with beaten egg and sprinkle generously with granulated sugar.
  • Bake, rotating the trays from top to bottom halfway through baking time, until the crust is golden brown and crisp,18 to 20 minutes. Cool on the baking sheet at least 15 minutes before serving.

BABAS AU CALVADO WITH GLAZED APPLE RINGS

Babas au Calvado with Glazed Apple Rings image

Categories     Cake     Liqueur     Mixer     Dessert     Bake     Apple     Gourmet

Yield Serves 6 to 8

Number Of Ingredients 18

For the babas
1 1/2 teaspoons active dry yeast
1 tablespoon sugar
1/4 cup lukewarm milk
3/4 cup all-purpose flour
1 large egg
1/4 teaspoon salt
3 tablespoons unsalted butter, cut into pieces and softened
1/2 teaspoon cinnamon
For the syrup
1/2 cup sugar
1 cup water
1/3 cup Calvados
For the glaze
1/4 cup apple jelly
2 tablespoons Calvados
1 tablespoon sugar
glazed apple rings and crème fraîche for garnish

Steps:

  • Make the babas:
  • Butter eight 1/3-cup ring molds. In the bowl of an electric mixer proof the yeast with the sugar in the milk for 5 minutes, or until the mixture is foamy. Stir in 1/4 cup of the flour, stir the mixture until it is smooth, and let the sponge rise, covered, in a warm place for 20 minutes, or until it is double in bulk. In a small bowl whisk together lightly the egg and the salt. To the yeast mixture add the remaining 1/2 cup flour in 2 batches alternately with the egg mixture, beating well after each addition. Beat in the butter, 1 piece at a time, beating well after each addition, and the cinnamon and beat the dough, scraping down the side of the bowl, for 3 minutes. (The dough will be very soft.) Divide the dough among the prepared ring molds set in a jelly-roll pan, let the babas rise, uncovered, for 15 minutes, or until they are just even with the tops of the molds, and bake even with the tops of the molds, and bake them in the middle of preheated 375°F. oven for 15 minutes, or until they are golden. Transfer the babas in the molds to a rack set over another jelly-roll pan and let them cool for 10 minutes, or until they are only warm.
  • Make the syrup while the babas are cooling:
  • In a small saucepan combine the sugar and the water, bring the mixture to a boil, stirring until the sugar is dissolved, and simmer the syrup for 3 minutes. Remove the pan from the heat and stir in the Calvados.
  • Make the glaze:
  • In a small saucepan combine the jelly, the Calvados, and the sugar, bring the mixture to a boil, and simmer it, stirring, for 2 minutes.
  • Run a thin, sharp knife around the center and side of each mold and invert the babas onto the rack. Reserve 1/2 cup of the syrup in a measuring cup, spoon the remaining syrup, heated to warm, over the babas, reusing the syrup that drips into the pan, until it is all absorbed, and let the babas stand for 15 minutes. The babas may be prepared up to this point 1 day in advance, kept on the rack set over the jelly-roll pan, and covered with foil.
  • Brush the glaze, heated to warm, carefully over the babas. The babas may be glazed 1 hour in advance.
  • Reserve 6 to 8 small apple rings. Arrange the remaining apple rings decoratively in overlapping rings on each of 6 to 8 plates, top them with the babas, and garnish each baba with a spoonful of the creème fraîche. Fold the reserved apple rings in half and roll the halves into cones to resemble flower buds. Garnish each baba with an apple-ring "bud" and drizzle some of the reserved syrup around it.

Yield Makes 4 servings

Number Of Ingredients 19

For the Baba
3 1/2 ounces flour
A pinch of salt
1/2 ounce sugar
A pinch of baking powder
2 eggs
1 ounce butter
For the syrup
1 quart water
18 ounces caster sugar
Lemon zests
Orange zests
For the finishing touch
2 ounces of apricot coating/glazing
Add Rum according to your taste
For the whipped cream Chantilly
7 ounces double cream
1 ounce sugar
1/2 vanilla pod

Steps:

  • Prepare Baba:
  • Mix all the ingredients without the butter and then beat with a wooden spoon for about 15 minutes. When the dough starts to unstick from the spoon, add the melted butter. Mix.
  • Cover the dough with a cloth and let it rise. When the volume doubles spread the dough halfway up the 4 buttered moulds. Make sure that the dough is evenly spread and than leave it to rise in a warm area (86 - 95°F). The Baba should slightly overflow the moulds.
  • Cook it in the oven for 25 minutes at 392 - 400°F. The cooking time can depend on the size, color, and desired moistness of the Baba. Turn out the Babas as soon as they are cook.
  • Make syrup and cream:
  • Mix all the syrup ingredients and bring to boiling point. Leave to infuse. Place the Babas in the syrup and leave to soak for about 40 minutes. Verify that they are well soaked, and then place them on a grid to let them drip for about 5 minutes.
  • Slice the vanilla pod in two lengthwise and scrape out the grains that will be mixed in with the cream.
  • Beat the vanilla grains with the sugar and cream to obtain a Chantilly.
  • Put the Baba on a plate and glaze with the apricot coating.
  • Serving at the table, cut the Baba in two (lengthwise) and pour on the rum according to you taste. Served it with the Chantilly cream.

BAKED APPLES WITH CALVADOS SAUCE

Baked apples with Calvados sauce image

This favourite dessert of Maman Blanc is an ideal way to use up an autumn apple glut

Provided by Raymond Blanc

Categories     Dessert, Dinner

Time 1h

Number Of Ingredients 15

4 Adams Pearmain or Reines des Reinettes, or similar Russet apples
50g unsalted butter , melted
4 tbsp caster sugar
50g caster sugar
20g unsalted butter
40g Braeburn apple , peeled, cut into 5mm dice
80ml apple juice
½ tsp arrowroot , diluted in a little water
1 tsp Calvados
15g brown bread , cut into small cubes
15g icing sugar
15g pistachio nuts
10g whole almonds
5g flaked almonds
1-2 tsp Calvados

Steps:

  • Heat oven to 180C/140C fan/gas 4. (When cooked with the fan, it's better to use a lower equivalent heat as the apple skins can burst before the apples are cooked if the heat is too intense.) Trim the bases off any apples that do not sit flat, without removing too much. Insert a small knife about a quarter way down the apple through to the core. Insert the corer at the base of the apple and slide up to the incision, twist the corer, then remove the core, keeping the apple's stalk intact.
  • Brush a shallow ovenproof dish with some of the melted butter, then sprinkle over some of the sugar. Brush each apple with the remaining butter, then roll them in the remaining caster sugar. Place the apples in the dish and bake for 30 mins.
  • Meanwhile, for the sauce, heat the sugar in a small heavy-based pan over a medium heat until it reaches a dark golden caramel. Stir in the butter and the diced apple. Cook for 30 secs without moving the pan (use a spoon to cover the diced apples in the caramel mixture). Pour in the apple juice and bring to the boil. Stir in the diluted arrowroot, a little at a time, until it has thickened slightly, then remove from the heat and add the Calvados.
  • For the garnish, toss the bread with half of the icing sugar, then scatter onto a baking tray. Mix the nuts, Calvados and remaining icing sugar together until well combined, then spread onto the same baking tray, mixing with the bread. Bake for 8-10 mins, stirring halfway through, or until the nuts and bread cubes are golden brown. Set aside to cool. 5 To serve, place one baked apple into the centre of each of 4 serving plates. Spoon the Calvados sauce into the centre and around the apple, then sprinkle over the toasted garnish.

APPLE PIE WITH CALVADOS

Apple Pie With Calvados image

Calvados is a brandy made from apples. It heightens the apple flavor. This recipe is heavier on the spice and lighter on the sugar than average. Adapted from Vegan Planet by Robin Robertson. We use dairy butter instead of a vegan product, and changed up the spices. Note that baking temperature and time are specific to our oven, and may need to be adjusted for yours.

Provided by Jacob Galley

Categories     Dessert

Time 3h

Yield 1 pie, 6-8 serving(s)

Number Of Ingredients 12

2 1/2 cups unbleached all-purpose flour
1 1/4 teaspoons salt
7/8 cup butter, room temperature, cut into small pieces
1/4 cup ice water, as needed
5 large Granny Smith apples
1 tablespoon fresh lemon juice
1/2 cup light brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
1 tablespoon arrowroot
2 tablespoons calvados or 2 tablespoons brandy

Steps:

  • Sift and combine the flour and salt. Mix in 5/6 cup of butter gradually with a dough wisk (leave 1 tbsp for step 5). Mix in just enough ice water until the dough just starts to hold together. Transfer to a work surface, divide in half, and flatten to form two disks that are about 3/4" thick. Wrap in plastic and refrigerate for 30 minutes. (You can do this ahead of time and refrigerate for longer. It's okay but will take longer to warm up and roll out in next step.).
  • Preheat oven to 425 degrees F. On a lightly floured work surface, roll out 1 piece of dough to fit a 9-inch pie plate. Fit the dough into the pie plate, and trim and flute the edges. Refrigerate the pie plate. Roll out the remaining dough for the top crust, and refrigerate.
  • Peel, core, and slice the apples, and place in a large bowl. Pour the lemon juice over the apples and stir so that all pieces are covered. Add the brown sugar and stir again.
  • Mix together the spices, starch, and calvados. Add a little of water if needed to mix evenly. Pour the mixture over the apples and stir.
  • Spoon the apple mixture into the bottom crust in the pie plate. Dot with the 1 tbsp of butter. Place the top crust on the fruit, seal with the bottom crust, and flute the edges. Use a knife or awl to create several steam holes in the top crust. Bake for 10 minutes, then reduce the oven temperature to 375 degrees F and bake until golden brown, 40 to 45 minutes more. Let cool to room temperature before serving.
