1/2 cup butter, cubed
1/4 cup all-purpose flour
2 teaspoons Italian seasoning

4 cups 2% milk
2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
2 cans (14-1/2 ounces each) diced tomatoes, undrained
2 cups shredded part-skim mozzarella cheese
1/2 cup dry bread crumbs
2 tablespoons butter, melted

Steps:

  • Cook macaroni according to package directions., Meanwhile, preheat oven to 350°. In a small saucepan, melt butter. Stir in flour, Italian seasoning, salt and pepper until smooth; gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from the heat; stir in cheddar and Parmesan cheeses until melted. Drain macaroni., Spread 1 cup cheese sauce in a greased 13x9-in. baking pan. Layer with half of macaroni, tomatoes and cheese sauce. Repeat layers. Sprinkle with mozzarella cheese. Combine bread crumbs and butter; sprinkle over top., Cover and bake 40 minutes. Uncover and bake 10-15 minutes longer or until golden brown and bubbly. Let stand 5 minutes before serving.

3/4 cup Rocchetta Cheese, cubed

Steps:

  • Bring a pot of salted water to a boil. As soon as the water comes to a boil, add the pasta and stir. While the pasta cooks, prepare the cheese fondue. Heat the cream in a saucepan over medium low heat until it is steaming but not bubbling. Add the rocchetta cheese, and stir until it melts. Keep it steaming hot until the pasta is ready. Undercook the pasta just a little, you want to let it finish cooking right in the cheese fondue. Once the pasta is very very al dente, drain it and add it to the cheese fondue and let it cook in the sauce for 2 minutes. Then add the parmesan, stir, and divide the macaroni and cheese between two bowls. Top with freshly ground black pepper, and toasted breadcrumbs if you like, and serve.

1 pound ziti rigate, penne rigate or cavatappi (ribbed, hollow corkscrews)
1 pound Italian bulk sweet sausage
2 tablespoons extra-virgin olive oil
1 tablespoon butter
3 or 4 cloves garlic, chopped
12 crimini mushrooms, sliced
Salt and pepper
2 tablespoons all-purpose flour
1 cup chicken stock
1 cup heavy cream
1 (10-ounce) sack, 2 1/2 cups, shredded Italian 4 cheese blend, available on dairy aisle
1 can diced tomatoes, drained well
1 teaspoon hot sauce (recommended: Tabasco), optional
1/2 cup Parmesan, a couple of handfuls

Steps:

  • Bring a large pot of water to a boil. Salt water and cook pasta to a chewy al dente, about 8 minutes.
  • In a nonstick skillet, brown and crumble the sausage. Drain cooked crumbles on paper towel lined plate. Return pan to heat and add extra-virgin olive oil, butter, garlic and mushrooms. Season liberally with salt and pepper. Saute 3 to 5 minutes, until mushrooms are lightly golden.
  • Preheat broiler to high.
  • To mushrooms, add flour and stir, cooking 2 minutes. Whisk in stock, then stir in cream. Bring cream to a bubble, then stir in 2 cups of 4 cheese blend. When cheese has melted into sauce, add tomatoes. When sauce comes to a bubble, remove from heat and adjust seasonings, adding hot sauce if desired.
  • Combine cheese sauce with sausage and pasta, transfer to flameproof baking dish, casserole or flameproof serving platter. Sprinkle remaining 1/2 cup of 4 cheese blend and the grated Parmesan over the top and brown under hot broiler.

1 ¼ lb (600 gr) of Italian celentani (tubular curly pasta shape), macaroni or other short pasta
2 cups (500 ml) milk
8 oz (230 gr) Italian Fontina cheese
8 oz (230 gr) Parmigiano Reggiano grated
8 oz (230 gr) Mozzarella cheese
8 oz (230 gr) Emmentaler or Gruviera Swiss cheese
3 oz (85 gr) flour
2-3 Tbsp (30-50 gr) of butter
2 Tbsp (30 gr) breadcrumbs
1 pinch of nutmeg

  • To make macaroni and cheese first remove the rind from all the cheeses. Then turn on the oven to 350°F (180°C) and put the water for pasta to boil.
  • Next we have to prepare a cream of cheeses, so in a saucepan put the butter and once melted add the flour then stir it to make it like a paste.
  • Keep stirring and when the mixture begins to brown (just a little) pour the milk in the same pot, and continue stirring until you get a creamy mixture (this is called bechamel). After done you can add salt, pepper and nutmeg to your personal taste.
  • Add a part of the grated cheeses keeping aside a tablespoon of each, then stir until all ingredients are well mixed. Let it cook a few minutes until it's all melted and you have formed cheese sauce.
  • Cook the pasta following half of the cooking time written on the package, just a few minutes are enough because the pasta must be very al dente.
  • Drain the pasta and bring it back in the same cooking pot so you can add the cheese sauce. Combine the cream of cheeses to the pasta and stir well.
  • Now you must butter well a large baking casserole, and you can do this easily with a pastry brush or simply with your fingers. Cover the base and sides of the casserole with enough breadcrumbs.
  • Immediately after pour the cheese and pasta in the casserole. Sprinkle the top with an handful of the cheeses that you had previously kept aside.
  • The last thing to do is to cook for about 20 minutes at 350°F (180°C), or until the surface has acquired a golden color and the classic crust is formed. Once ready, remove the casserole from the oven and serve these Italian style baked macaroni and cheese piping hot.

1 lb ground pork
1 lb ground beef
1/2 lb pork side ribs (for flavoring)
1 (28 ounce) can of imported Italian plum tomatoes (plain no seasoning)
1 tablespoon tomato paste
1 large red onion
extra virgin olive oil
salt and pepper
1/2 cup romano cheese (no simutlated cheese)
1 (20 ounce) package penne pasta
1/2 cup parmesan cheese (no simulated cheese)
1 (8 ounce) package Velveeta cheese, cubed

Steps:

  • In a large saucepan saute in extra virgin olive oil (1-2tbs) half of large onion until transparent, then add ground pork and beef season with salt and pepper until cooked. Set aside.
  • In another saucepan saute in extra virgin olive oil (1-2tbs) the other half of onion until transparent and then add spareribs and cook for about 10 minutes. Then add whole can of tomatoes, salt and pepper and the tomato puree and cook on medium heat for about an hour-hour and a half. If sauce is evaporating quickly add a bit of water and lower heat. When cooked set aside.
  • In a large pot, bring water to a boil and add the pasta, under cook by a minute. Pasta should be a little firmer than "al dente". Strain.
  • In a baking dish layer beginning with tomato sauce, pasta, ground meat, followed by velveeta cheese and sprinkling of romano and parmesan cheeses. Continue layering until all ingredients are used. Baked in oven at 400 degress until cheese is melted.
  • Stir and serve.

1 lb macaroni (I prefer large elbows or medium shells)
6 tablespoons all-purpose flour
6 tablespoons butter or 6 tablespoons margarine (I prefer butter)
2 cups milk (I use skim)
8 ounces extra-sharp cheddar cheese, shredded
1 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 450 degrees.
  • Cook macaroni according to package instructions.
  • Drain, rinse and set aside.
  • In same pot over low heat, melt the butter.
  • Add flour, salt and pepper and whisk into melted butter until smooth.
  • Simmer and stir until mixture thickens into a paste and is golden.
  • Slowly add milk and whisk into butter mixture until smooth.
  • Bring to boil and then simmer until thickened.
  • There is no way to tell you how thick, except to say it should be thicker than gravy but not as thick as pudding.
  • If you have made basic white sauce, you will know when it is thick enough.
  • Remove pot from heat.
  • Add cheddar cheese and stir until cheese starts to melt.
  • Add macaroni and stir until coated.
  • Pour into a 9 x 12 baking dish or 2 quart casserole.
  • As an extra indulgence, you can sprinkle 4 oz more cheese on top.
  • I only do this if I happen to buy a 12 oz bag or block instead of 8 oz.
  • Bake about 20- 30 minutes, when you see top getting a bit crispy and brown.
