My brother in New Zealand sent me this, it's incredibly simple and delicious. I have no idea where he got it, I think he made it up.

Steps:
- Rinse rice, add coconut, and cook rice according to package directions.
- Let cool a couple of minutes when done.
- Seed& peel avocado, dice it up, and add to rice.
- Add mustard and chili powder.
- Stir well and serve.

- Heat the oven to 220C/200C fan/gas 7. Tip the broccoli onto a baking sheet along with the red onion and 1 tbsp of the sesame oil. Roast for 20 mins or until the broccoli is tender. Leave to cool a little.
- Whisk the remaining sesame oil, soy, rice wine vinegar and honey in a small bowl. Toss the broccoli, rice, onion and dressing together in a large bowl, then gently mix in the avocado and coriander. Divide between bowls and top with the sesame seeds and chilli.

NAVAJO AVOCADO RICE
This is a different rice dish. It has a great combination of spices along with small chunks of avocado. It is pretty tasty.

Steps:
- Place butter and oil in 2-quart pan over medium heat.
- When butter is melted, add onion and garlic; cook until onion is tender.
- Add rice; cook, stirring constantly, 3 minutes or until rice looks milky and opaque.
- Add salt, oregano, cumin, turmeric and broth.
- Bring to a boil.
- Cover, reduce heat and simmer 20 to 25 minutes or until rice is tender and all liquid is absorbed.
- Peel and pit avocado; dice.
- Fluff up rice with fork; add avocado and toss gently.
- Turn off heat; let stand 5 minutes before serving.
JAPANESE SALMON AND AVOCADO RICE
This dish contains the goodness of sushi without the painstaking rolling and shaping. The salmon is marinated in lemon juice and soy which 'cooks' and flavors the fish. Sushi rice is available in most stores, but if you can't find it use basmati rice instead.

Steps:
- Rinse the rice in a sieve until the water runs clear. Drain and put in a large pan with 1 3/4 cups cold water.
- Bring to the boil, turn the heat to low, cover then cook for 10-12 mins until the rice is almost cooked.
- Remove from the heat then leave, covered, for 10 minutes.
- Thinly slice the salmon the arrange on a platter with the sliced avocado.
- Drizzle over the lemon juice and soy, making sure everything is evenly covered.
- Leave in the fridge to marinate for 10 minutes.
- Carefully tip the juices from the salmon platter over the rice then stir with a pinch of salt.
- Divide the rice between four bowls.
- Scatter the seasame seeds, scallions, chili and cilantro over the salmon and avocado and serve with the rice.

BLACK BEAN, TOFU & AVOCADO RICE BOWL

- Heat the grill to High. Heat 1 tbsp oil in a frying pan, add the onion and cook, stirring, for 5 mins or so until soft. Add the garlic and sizzle for 30 secs more, then stir in the cumin and black beans. Cook for 5 mins until the beans start to pop and are hot through. Stir through the lime zest and juice, and season.
- While the beans cook, put the tofu in a bowl and gently toss through the remaining oil, the paprika and some seasoning. Line a baking tray with foil and arrange the tofu on top. Cook under the grill for 5 mins each side until charred all over.
- Heat the rice following pack instructions, then divide between bowls. Top with the beans, tofu, avocado, coriander and a wedge of lime. Add a few slices of chilli too, if you like it spicy.
