TOMATO AND AVOCADO OMELET
A fresh and easy breakfast, this omelet features halved cherry tomatoes and diced avocado, with a sprinkling of melted cheddar cheese.

- Heat a drizzle of olive oil in a medium nonstick frying pan over medium-high heat.
- In a small bowl, whisk together the eggs and salt. Then pour this mixture into the hot pan and spread it around.
- Cook for 3-4 minutes without stirring, until the thin edges begin look slightly dry. Use a thin spatula to lift up the edges while tilting the pan to allow the liquid egg to flow underneath the cooked bottom layer, about another 3-4 minutes.
- Once the omelet appears dry on the top and easily releases from the pan, carefully flip it over. Add cheese to one half, cover the pan, and cook for another 1-2 minutes to melt the cheese.
- Turn off the heat, and then add tomatoes, and avocado on top of cheese. Use the spatula to fold the omelet in half and transfer it to a plate.
- Cut into slices, if desired, and top with your favorite hot sauce.

TOMATO, AVOCADO AND BASIL OMELET OVER GRILLED BREAD

- Preheat the broiler or oven to 400 degrees. In a small bowl, combine 1 tablespoon of the olive oil with garlic, and let sit for 10 minutes. Brush 1 side of the bread with the seasoned oil, and put it under the broiler until lightly browned, 2 or 3 minutes. Set the bread aside and leave the broiler on. Whisk the eggs with the parsley and salt and pepper to taste. Heat an 8 to 10-inch skillet over medium heat, and add 1 tablespoon of oil, swirling the pant to coat the bottom. Pour in half the egg mixture. Use a spatula to push the cooked egg toward center, tilting the pan in a circular motion so that the uncooked egg flows to the outside. When the eggs are no longer runny, remove the omelet from the heat and arrange half the tomato, avocado, and basil on top. Put under the broiler until the eggs are cooked and the vegetables are warm, about 2 minutes. Using a spatula fold the omelet in half, sprinkle it with cheese if you wish and then fold it in quarters. Cover it to keep, and cook the second omelet in the same way. Arrange the grilled bread on 2 plates and put the omelets on top. Garnish with basil or parsley if you choose. Serve immediately.
AVOCADO AND GOAT CHEESE OMELET

- In large skillet over medium heat, heat 1 teaspoon of oil. Add peppers; cook and stir until just tender, about 4 minutes; set aside. In a bowl, combine 2 eggs, 2 tablespoons milk and 1/8 teaspoon each of salt and pepper; beat until frothy. Heat 1 teaspoon oil in a medium skillet over medium heat. Add egg mixture; cook, lifting edges to allow mixture to flow under cooked portion until surface looks set and center is firm. On one half of the omelet, arrange 1/4 of the peppers, goat cheese and avocado. Fold uncovered half of omelet over filling; slide onto serving plate. Repeat with remaining ingredients.
CHEDDAR TOMATO OVEN OMELETTE
This is something my mother makes for Christmas brunch every year. Everyone loves it, even the kids. I made her give me the recipe so that I could have it more than once a year. Cooking time may vary a bit.

- Preheat oven to 350ºF.
- Cook bacon until crisp, reserve 1 tablespoon of drippings.
- Saute onions in drippings.
- Add tomatoes.
- Sprinkle on flour and salt, toss lightly to coat.
- Beat together eggs and milk.
- Add vegetable mixture, 1 cup cheddar and chopped bacon.
- Mix together.
- Pour into a greased 8 x 8 x 2 (2 quart) pan.
- Bake uncovered for 40-45 minutes.
- Remove from oven and sprinkle on remaining 1/4 cup cheese.
- Let stand 5 minutes so cheese melts.

- Mix turkey, eggs, Cheddar cheese, milk, parsley, pepper, seasoned salt, and onion powder together in a bowl and pour into the prepared casserole dish.

AVOCADO OMELET
I got this from an old friend. It is easy and quite good. Just make the omelet as you would normally with the diced avocado in the middle when you fold the omelet. Then pour the sauce over it. YUM! I added shredded pepper jack cheese like you would in a normal omelet. You could also use plain cheddar.

- In med. skillet cook onions, tomatoes, salt, pepper and chili powder in butter. Simmer several minutes or until onions are soft.
- Remove from heat.
- While onions are simmering, peel avocados and reserve a few slices for garnish.
- Mash remaining avocados and add to the onion mixture. Simmer a few minutes to unite flavors.
- Serve the sauce in a small pitcher or gravy boat so that your guests & family can "pour it on.".
- Make the omelet from the omelet ingredients as you would a normal omelet with the diced avocado in the middle, and the cheese. Pour the sauce over the cooked omelet and enjoy. YUM!

- In a small bowl stir together the tomato, the onion, the jalapeño, the coriander, the lime juice, and salt and pepper to taste until the salsa is combined well. In a bowl whisk together the eggs, the water, and salt and pepper to taste.
- In a 8-inch skillet, preferably non-stick, heat 1/2 tablespoon of the butter over moderately high heat until the foam subsides, pour in half the egg mixture evenly over the bottom, and cook it for 1 minute, or until it is almost set. Sprinkle half the omelet with half the bacon, half the avocado, peeled and cut into 1/2-inch pieces, and half the Monterey Jack and cook the omelet for 1 minute, or until it is set. Fold the omelet over the filing, transfer it to a plate, and keep it warm. Make another omelet in the same manner with the remaining butter, egg mixture, bacon, avocado, and Monterey Jack and serve the omelets with the salsa.
