BACON AVOCADO PASTA
Delicious bacon and avocado with a basil lemon dressing make this pasta amazing. I serve it as a hot pasta dish but it can also be served cold like a pasta salad.

- Bring a large pot of lightly salted water to a boil. Add pasta; cook, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels; crumble into small pieces.
- Mix basil, lemon juice, olive oil, garlic, pepper, and salt together in a small bowl.
- Combine bacon pieces and avocado in a large bowl. Stir in basil mixture. Add pasta; toss to combine. Sprinkle Romano cheese on top.

Steps:
- ADD the bacon strips to a large, heavy-bottomed skillet over medium heat. Stir the bacon and cook until crispy. Use a slotted spoon to transfer the bacon to a paper towel lined plate. Pour all but about 2 teaspoons of the bacon drippings out of the pan.
- RETURN the pan to the burner over medium heat and add the onions to the pan with a pinch of salt. Stirring frequently, cook until the onions are crisp tender (about 5 minutes) and golden in color. Transfer the onions to a large mixing bowl.
- POUR the lemon juice over the two halves of avocado. Coarsely chop the avocado and add to the bowl with the onions. Stir to combine. Add the red wine vinegar, garlic, and all but 2 tablespoons each of the crispy bacon, snipped basil and the bleu cheese and stir well again.
- BRING a gallon of water to a full rolling boil in a large stockpot. Salt the water and pour in the pasta. Cook to al dente according to package directions.
- DRAIN the pasta, reserving about a cup of the pasta water. Add the hot pasta to the avocado mixture. Stir in gently but thoroughly to distribute the sauce. If it is too thick, add a splash of the reserved pasta water to thin it. Taste and adjust seasonings with salt and black pepper. Top the pasta with the reserved basil, bacon and bleu cheese and serve warm or room temperature.

- Tear the lettuce into a salad bowl.
- Add tomatoes and avocado.
- Sprinkle with Bacon and cheese.
- Just before serving toss with the dressing (use only as much as you like).
- To make the dressing: Blend all the dressing ingredients together.
- Chill.
AVOCADO, BLUE CHEESE AND BACON FILLING/SAUCE
Before I was veggie/vegan I loved this. Now I just make it veggie with veggie bacon. My husband loves this too. Put it in sandwiches with pasta or on potatoes. It's a bit addictive and not for those on a diet. Adding a bit of rocket to this tastes nice and it means you have included a vegetable with your fat for the day (that makes it healthy)!

- Cut your avocado in half; remove stone and slice.
- Squeeze lemon juice over avocado.
- Dry fry bacon in frying pan until crisp, snip into slices approx 1 cm wide.
- Cut up and crumble the danish blue.
- Mix all of the above together and season with salt and pepper.
- Mix with hot or cold pasta,, roughly tumble onto a sandwich or put in a potato.

- Add onion and garlic saute about 5 minutes.
- Pour in half& half, let heat through.
- Wisk in blue and parmesan cheeses.
- Salt and pepper to taste.
- Sauce will thicken a bit upon standing.
- Toss with cooked pasta.
