6 spring roll rice wrappers (these large ones are best)
4 ounces cooked rice noodles (I use these)
4 ounces extra-firm tofu (sliced into strips*)
1 ripe avocado (sliced)
2 ripe peaches or 1 ripe mango (sliced)
½ watermelon radish (very thinly sliced, optional)
Fresh herbs: basil (Thai basil and/or mint)
Pinches of sesame seeds
Tamari and sriracha (optional for serving)
Basil Coconut Dipping Sauce

Steps:

  • Fill a shallow glass baking dish with 1-inch of warm water. Submerge one rice paper in the warm water for 7 seconds and then lay the softened wrapper on a clean, damp kitchen towel. Place desired fillings into the center of the wrapper. Fold the bottom of the wrapper over the filling and gently tuck the filling under the wrapper. Fold the sides over the filling. Then continue rolling and tucking the rice paper to form a summer roll. Repeat with the remaining rice papers.
  • Serve with the Basil Coconut Sauce for dipping. Serve with tamari and sriracha on the side, if desired.

Steps:

  • Halve avocados lengthwise. Twist halves to separate them, and remove pits. Run a large spoon between the flesh and skin, scooping out the flesh in one piece; discard skins. Slice into wedges, and place avocados on a serving platter. Drizzle with oil and lemon juice. Season with salt and pepper. Serve at room temperature.

2.5 lbs avocados (about 7 medium)
1/2 cup green onion
2 tbsp lemon juice
1/2 tsp salt
Ground black pepper (to taste)

Steps:

  • To cut avocados, cut each fruit in half and remove the pit. I abruptly stick sharp end of the knife into the pit and twist it.
  • Then cut each half into 2-3 strips (depends how wide), peel and slice. This way avocado slices do not turn into a mush.
  • In a large salad bowl, add avocados, green onion, lemon juice, salt and pepper.
  • Stir gently with a wooden spoon and consume within next 5-6 hours. Great on its own, on a toasted pita or in a wrap.

As a kid this was a favorite Sunday morning breakfast. On Saturday my dad loved to cook huge breakfasts. My mom cooked Monday through Friday...but on Sundays while Mom was putting on her makeup and heels and Dad was tying his tie we had an easy-to-prepare breakfast such as Avocado Toast. In the '60s avocados were still a little strange for most Americans and were not as easy to get. Lucky for us my Uncle George from Lakeside CA grew his own. We treated them like gold. For Avocado Toast we used only about 1/8 of the fruit. You can use 1/2 or even more per toast. A dense, hearty wheat bread works well but I like all kinds.

Steps:

  • Mash the avocado and spread it evenly on the toast pieces.
  • Squirt the lemon juice over the avocado. (Optional: Peel and place the lemon in pieces on top, after the squeeze. I started this when I was a kid and still love it this way. Very lemony!).
  • Salt and pepper. Eat immediately before it gets soggy. This dish is best prepared by the person eating it so they are available to eat it right away!
