Kosher salt
1/2 cup freshly squeezed lime juice (5 limes)
2 tablespoons freshly squeezed lemon juice (1 lemon)
1 cup Triple Sec
1 cup white tequila
2 cups ice, plus extra for serving

Steps:

  • If you like margaritas served in a glass with salt, rub the outside rims of 6glasses with a cut lime and dip each glass lightly into a plate of kosher salt.
  • Combine the lime juice, lemon juice, Triple Sec, tequila, and ice in a blender and puree. Place extra ice in a cocktail shaker. Fill with margarita mix, shake well, and strain into glasses.

2oz fresh lime juice - 2 hand squeezed limes
1oz Tequila - brand of choice
1oz Cointreau
splash of honey water - added sweetness per taste
sea salt - garnish rim of glass
lime slice - garnish

Steps:

  • Squeeze fresh limes into a bowl.
  • Pour two shot glasses of fresh squeezed lime juice in shaker.
  • Add one shot glass of Cointreau to shaker.
  • Add one shot glass of Tequila.
  • Fill half a shot glass with water, then squeeze raw honey into the shot glass.
  • Mix well.
  • Slowly pour your honey water into your shaker until you reach desired sweetness. Start with half a shot glass before adding more.
  • Shake your margarita mix.
  • Rub sliced lime around rim of glass.
  • Dip glass into plate or bowl of sea salt.
  • Pour margarita over crushed ice.

3 oz. tequila blanco
1.5 oz. Cointreau
7-10 Limes
4 oz. natural lime juice freshly squeezed
Salt
2 cups ice

Steps:

  • Use a citrus squeezer to squeeze 4 oz. of lime juice into a cup and set it aside.
  • Add 3 oz. of tequila and 1.5 oz of Cointreau into a blender. Follow that up with the lime juice from the previous step, 2 cups of ice and blend it!
  • (Optional) Add Salt Around the Rim: Now to set up your glasses, cut a lime into small wedges and use one of them to rub a small amount of lime juice around the rim of your class. The lime juice will help the salt stick around the edges.
  • Pour 2 to 3 tablespoons of salt into a small plate. Grab the glass you just rubbed lime juice on and hold angle it so you can rotate the rim and make sure you've added salt around it evenly.
  • After salting the glasses, finally pour the margarita into your glass. Add a lime wedge to your glass as the final garnish, invite friends, and say cheers.

  • Place ingredients in blender and blend well.
  • For an authentic Magarita, mix three parts mix, 1 part tequila and 1/2 part Cointreau or Triple Sec and serve in a glass with salted rim. (To salt the rim, wipe rim of glass with lime skin and dip upside down in a plate of salt.

Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

  • Sprinkle a few teaspoons of salt over the surface of a small plate or saucer. Rub one wedge of lime along the rim of a tumbler and then dip it into the salt so that the entire rim is covered.
  • Fill a cocktail shaker with ice, then add the tequila, lime juice and triple sec. Shake until the outside of the shaker feels cold.

3 ½ cups all-purpose flour
1 teaspoon salt
1 cup water
1 (.25 ounce) package active dry yeast
1 pinch white sugar
¼ cup flour for dusting
2 cups pizza sauce
20 slices fresh mozzarella cheese
20 leaves fresh basil
olive oil
sea salt to taste

Steps:

  • Stir flour and 1 teaspoon salt in a bowl. Set aside.
  • Mix water, yeast, and sugar in a large bowl. Let stand until yeast begins to form a creamy foam, about 5 minutes.
  • Stir half the flour mixture into yeast mixture until no dry spots remain. Stir in remaining flour, 1/2 cup at a time, mixing well after each addition. When dough pulls together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, then place dough in the bowl and turn to coat with oil. Cover with a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 1 hour. Punch dough down, divide into 4 equal pieces, and form each into a ball.
  • Preheat oven with a pizza stone to 500 degrees F (260 degrees C).
  • Stretch out and pat 1 dough ball to form a circle 10 to 12 inches in diameter. Place dough on a lightly floured pizza peel. Top with 1/2 cup of tomato sauce and spread to cover within an inch of the edge of the dough. Arrange 5 slices of mozzarella cheese on top of the tomato sauce, then place 5 basil leaves on top. Drizzle pizza with 1 tablespoon olive oil and sprinkle with sea salt to taste. Repeat for 3 remaining dough balls.
  • Slide each pizza onto the pizza stone in the preheated oven. Bake until cheese is bubbly and the underside of the crust is golden brown, 5 to 7 minutes.

350g strong white flour
25g coarse semolina , plus extra for sprinkling
1½ tsp salt
7g pkt fast-action dried yeast
1 tbsp olive oil , (not extra virgin) plus extra for drizzling
275ml tepid water
400g can plum tomato
2 plump garlic cloves , finely chopped
2 tbsp tomato purée
2 balls buffalo mozzarella , (about 140g each)
two small handfuls basil leaves, roughly torn parmesan shavings and rocket, to serve

Steps:

  • In a bowl, mix flour, semolina, salt and yeast. Make a dip in the middle, pour in oil, water, then stir and squeeze everything together (hands are easiest for this). The dough should feel very sticky (pic 1). When it is well mixed, cover and leave for 15 mins.
  • Tip the dough on to a lightly oiled work surface and rub your hands and the inside of the bowl with oil. Knead the dough about 12 times only, giving it a quarter turn each time you knead. Tuck the ends under so it is the shape of a ball and lay it in the bowl, seam side down. Cover and leave for 10 mins. Repeat the kneading and leaving for 10 mins again, then knead and leave for 15 mins, oiling the surface and your hands each time.
  • In between kneadings make the sauce for the topping. Drain the tomatoes and tip them into a bowl. Snip them into small pieces with scissors (pic 2). Stir in garlic, tomato purée, and seasoning. Set aside. Brush a baking sheet with oil and sprinkle with a little semolina. Heat oven to 240C/fan 220C/gas 9.
  • When the dough is ready, cut in half and put one half onto a lightly fl oured surface. Knead 4-5 times to squash out any air bubbles, then roll it out. At the point where it just keeps springing back, brush off the flour from the work surface and rub on a little oil. This makes it easier to roll. Continue to roll out until you have a 28cm circle, pulling it into shape as well. Lift it onto the baking sheet (it's easier if you drape it over a rolling pin).
  • Drain the mozzarella, then pat dry with kitchen paper. Brush the dough with olive oil, then spread half the sauce over, almost up to the edge. Scatter over half the basil, then tear up one mozzarella ball and scatter over the basil (pic 3). Grate over pepper and drizzle with a little oil. Bake for 12-15 mins, until the topping is bubbling and the dough is going brown. Repeat with the remaining dough and toppings. To serve, scatter with parmesan shavings, rocket leaves and drizzle with oil.
