Steps:
- Mix the vinegar, lemon juice, honey, and salt in a blender. With the machine running, gradually blend in the oil. Season the vinaigrette with salt and pepper, to taste.
- Combine the first 8 ingredients in a large bowl. Toss with enough vinaigrette to coat. Season the salad with salt and pepper, to taste, and serve.
SICILIAN TOMATO & ONION SALAD
I found this recipe in an attempt for something different to use up an over abundance of summer tomatoes! The garlic salt brings out the juices in the tomatoes, it works as an acid, so there is no need for vinegar. My family just went nuts over this! Great as a side dish or as a lite lunch! The ratio of vegetables can be adjusted to suit your own taste.

Steps:
- Cut tomatoes into bite size pieces.
- Sprinkle with garlic salt and pepper.
- Peel a cut onion in half vertically.
- Along edge of open side, "sliver" cut onion and add to tomatoes.
- Add the rest of ingredients and toss lightly.
- Marinate for at least an hour.
- Serve with Italian bread, provolone cheese and hard salami (or other Italian meats.).

TOMATO SALAD RECIPE
This tomato salad recipe has a bit of bite. You'll want to keep some fresh bread nearby to soak up the juices.

Steps:
- Cut the tomatoes into large pieces. Put into a large bowl.
- Crush and chop the garlic. Set aside
- Combine olive oil, balsamic vinegar, mustard. Mix by hand until well blended.
- Add dried basil, oregano, and garlic. Mix again for about 20 seconds.
- Pour the dressing over the tomatoes.
- Cover and set aside or in the refriderator for about 2 hours.
- Take out of the refridgerator, mix again.
- Cut the fresh basil leaves. Garnish and serve.

CLASSIC ITALIAN CAPRESE SALAD RECIPE
Steps:
- Remove the tomatoes and the mozzarella from the fridge one hour before preparing.
- Slice the mozzarella and drain in a sieve or gently dry with a paper towel, then place spread out on a large plate.
- If using large tomatoes then slice and paper towel dry if extra moist. If using grape or cherry tomatoes then slice in half. Place the tomatoes in a bowl and toss with salt, oregano and olive oil. Spoon the tomato mixture over the mozzarella and top with fresh basil leaves. Serve immediately. Enjoy!
