HOMEMADE CHICKEN PAD THAI

Homemade Chicken Pad Thai image

Pad Thai is a popular Thai street food that is both sweet and savory. Try our authentic homemade chicken pad Thai recipe today, you'll never go back to take out!

Provided by Sarah Asay, RDN

Categories     Entree

Time 35m

Yield 6

Number Of Ingredients 16

1, 8-oz package brown rice noodles
1/4 cup low-sodium soy sauce (tamari for gluten-free)
1/4 cup brown sugar
2 Tbsp rice vinegar
1 Tbsp lime juice
1 Tbsp fish sauce
1 Tbsp sesame oil
1 lb chicken breasts, boneless and skinless, sliced into even, thin strips
1 red bell pepper, seeds removed and julienne sliced
1 1/2 cup carrots, matchstick
5 green onions, thinly sliced
3 cloves garlic, chopped
1 cup bean sprouts
1/2 cup peanuts, unsalted and chopped
1/3 cup cilantro, chopped
Optional garnishes: red pepper flakes, sesame seeds

Steps:

  • 1. Prepare the rice noodles according to package directions. This is often soaked in warm water rather than boiled over the stovetop. (Save the water for a pro tip offered in step #5!)
  • 2. While noodles are cooking, whisk together sauce ingredients. This includes soy sauce, brown sugar, rice vinegar, lime juice, and fish sauce in a mixing bowl. Set aside.
  • 3. Heat sesame oil in a wok or a deep saute pan set over medium-high heat. Add chicken and saute until cooked through, about 5 minutes. Once cooked, transfer chicken to a plate and set aside.
  • 4. Add red bell pepper and carrots to the hot pan and saute 2 minutes. Then add green onions, garlic, and bean sprouts and saute 1 minute longer, until fragrant.
  • 5. To the vegetable mixture, add back the chicken along with the cooked noodles and sauce. Toss everything together and cook for 2 minutes until all ingredients are coated. If the dish starts to become dry, add back moisture by adding a bit of the water used to soak the noodles.
  • 6. Serve warm topped with cilantro, peanuts, and optional garnishes.
  • 7. Pair with sesame sugar snap peas and other ideas listed below!

PAD THAI WITH CHICKEN AND SHRIMP

Pad Thai With Chicken and Shrimp image

PLEASE NOTE: This calls for one 1/2 pound package of noodles. Not one pound. Not a pound and a half. I'm not sure how else to write it so that it's clearer. I think this is a great Pad Thai recipe - quick and easy. It's certainly a favourite in our house. I would suggest making a double batch of the sauce, so the dish is even more flavorful. For those with milder tastes, cut back on the red pepper flakes. The recipe as is has quite a bite to it. This isn't a "authentic" Pad Thai recipe, so if that's what you are looking for, then this may not be it.

AUTHENTIC THAI RED CURRY WITH CHICKEN

Authentic Thai Red Curry With Chicken image

I spent many months traveling in Thailand and Thai Red Curry quickly became my favorite dish. This dish is suppose to be spicy! If your sinuses aren't draining and a little perspiration isn't forming on your forehead halfway through this meal, you don't have the real thing. I know most people don't enjoy their food this spicy, so I toned it down a bit. Also, this dish is flexible and fun to cook. If you like onions, put in more. Like three kinds of peppers, add them. You get the idea. Just go with it. Enjoy!

Provided by Marc Bowman

Categories     Curries

Time 30m

Yield 8-10 serving(s)

Number Of Ingredients 17

4 boneless skinless chicken breasts
5 tablespoons Thai red curry paste (I recommend Pantai or Mae Ploy brands)
3 (13 1/2 ounce) cans coconut milk (I like the thick creamy kind)
3 tablespoons oil (I use canola)
1 1/2 cups chicken stock (If you do not have chicken stock, double up on the bullion)
1 chicken bouillon cube
2 yellow onions
4 green bell peppers
2 carrots
2 small Japanese eggplants
1/3 cup sugar
1 tablespoon lemon juice or 1 tablespoon lime juice
1 teaspoon fish sauce (optional)
8 sweet basil (leaves)
1 teaspoon dried basil
8 -10 large cherry tomatoes
4 cups jasmine rice (cooked)

Steps:

  • Cut onion, bell pepper, and eggplant into bite size pieces and set aside. (I like large chunks on my spoon, so I don't cut them too small).
  • Shred carrots with a vegetable peeler and set aside.
  • Cut tomatoes in half and set aside.
  • Cut chicken into bite size pieces and set aside.
  • Pour the oil into a five-quart pot and put over medium heat.
  • When the oil is hot, but not smoking, add the Thai Red Curry Paste and stir, sautéing for about 2 minutes. (I like my Thai Red Curry the same as I ate it in Thailand, very spicy. Therefore, I use about 6 to 8 tablespoons of curry paste. My guess is most people would use about five. Any less, what's the point? Use your judgment for what you like.).
  • Add the coconut milk and chicken stock, then throw the chicken bullion cube in the pot and stir.
  • After the liquid begins to boil, add the vegetables, carrots, and tomatoes.
  • Add sugar, lemon juice, sweet basil leaves, and crushed basil, then bring to a boil again. (I usually turn the heat down and allow the vegetables to cook for about five minutes or so before adding the chicken.).
  • Add the chicken and bring to a boil. Turn the heat down and simmer for about five more minutes.
  • Serve with hot Jasmine rice.

CHICKEN PAD THAI

Enjoy our version of the classic noodle dish with spring onions, egg, beansprouts and peanuts. Add chilli to suit your taste and serve with lime wedges

Provided by Liberty Mendez

Categories     Dinner, Main course, Supper

Time 30m

Number Of Ingredients 20

150g dried flat rice noodles
4 tbsp sunflower oil
2 garlic cloves , crushed
1 red chilli , finely chopped
2 chicken breasts, sliced finely sliced
½ small pack coriander , leaves picked, and stalks finely chopped
60g spring onions , shredded (reserving some to serve)
2 tbsp chopped pickled turnip (optional)
50ml chicken stock
100g beansprouts
2 eggs
60g roasted unsalted peanuts , chopped
soy sauce , to serve
fresh red chilli , sliced, to serve (optional)
2 tbsp tamarind paste
2 tbsp fish sauce
1 tbsp light brown soft sugar
1 lime , half juiced, half cut into wedges to serve
½ tbsp siracha
pinch chilli powder (optional)

Steps:

  • Soak the noodles in warm water for about 20 mins or until al dente, then drain. Meanwhile, make the sauce by mixing together the tamarind paste, fish sauce, sugar, lime and siracha until smooth.
  • Heat half the oil in a frying pan or a wok over a medium heat. Add the garlic and chilli and fry for 30 seconds until fragrant. Tip in the chicken and cook for 5 mins until golden. Add the coriander stalks, spring onions and turnip (if using), and fry for 1 min. Add in the soaked noodles, 50ml of the chicken stock and the prepared sauce. Keep stir-frying the noodles until they're starting to dry, then add the sauce. Stir everything together and cook over a high heat for 3 mins until the noodles are just cooked. Add a splash more water if needed.
  • When the sauce has reduced, scatter over the beansprouts and fold them into the noodles. Push everything to one side of the pan, then pour in the rest of the oil on the empty side and crack in the eggs. Fry for 2 mins until the white is just set and beginning to crisp around the edges, then roughly scramble the runny yolks in with the whites. When the eggs have just set, combine with the noodles.
  • Scatter over half of the peanuts and quickly toss together. Divide between two plates with the remaining peanuts and spring onion, the lime wedges and soy sauce on the side.
