2 stick butter, softened room temperature
1 c butter flavored crisco
3 c sugar
6 large eggs, room temperature
4 c cake flour, (i used king arthur self rising)
1/2 c milk
1 bottle lemon extract(2 oz) 4 tablespoons
4 Tbsp cake enhancer king arthur (my addition)
1 Tbsp lor ann lemon emulsion, my addition
LEMON BUTTER GLAZE
1 stick butter, melted
2 c powdered sugar
2 tsp lemon extract
3-4 Tbsp lemon juice or milk

Steps:

  • 1. Preheat oven to 325 degrees F. These are some of the main ingredients. I used Butter Flavored Crisco for the shortening.
  • 2. Here is the Cake Enhancer that I used, 1 tablespoon per cup of flour.
  • 3. This is one of the pans that I used to bake the cake it has a 10 cup capacity and is called a CROWN BUNDT PAN. Always remember when filling the pans to leave at least a 1 1/2 to 2 inch space from the top of the cake pan to allow for the cake to rise during baking.
  • 4. This is the other 10 cup Bundt pan that I used it is called an ELEGANT PARTY BUNDT PAN. Spray both pans liberally with Bakers Joy and set aside till needed.
  • 5. Add the butter and shortening & cake enhancer to a large mixing bowl and cream together by gradually adding in the sugar a small amount at a time, and beating until mixture is smooth and no granules remain.
  • 6. Add the room temperature eggs, one at a time and beat well after each addition.
  • 7. Gradually add in the cake flour, alternating with the milk & lemon extract & Lor Ann lemon emulsion. Beat well. Add a few drops of yellow food color if desired for a more lemon colored batter. Beat until batter is smooth. Then divide evenly between the two prepared cake pans or one large pan.
  • 8. Place in preheated 325 degree F. oven and bake for 1 hour or until toothpick inserted into center of cake comes out clean.
  • 9. Remove from oven sit on metal rack for about 5-7 minutes then invert onto a large cake platter. This is the ELEGANT PARTY BUNDT PAN CAKE.
  • 10. This is the Crown Bundt Cake. I decided to leave them both plain after all, and served them with fresh fruit. GLAZE: MELT BUTTER IN SAUCEPAN OVER LOW HEAT;THEN ADD SIFTED POWDERED SUGAR AND STIR, ADD IN LEMON JUICE OR MILK AND LEMON EXTRACT & STIR UNTIL BLENDED, REMOVE FROM HEAT. POUR OVER CAKE AND LET DRIZZLE DOWN SIDES OF CAKE AS DESIRED. Using lemon juice instead of milk adds more of a tart lemony flavor to the glaze.

½ cup shortening
5 eggs
1 cup whole milk
1 teaspoon lemon extract
1 teaspoon vanilla extract
3 cups flour
1 teaspoon baking powder
¾ teaspoon salt
vanilla ice cream, for serving
fresh berry, for serving

Steps:

  • In a large bowl, cream butter, sugar, and shortening together with a hand mixer.
  • Mix the eggs, one at a time, into the batter.
  • In a medium bowl, combine the milk, lemon extract, and vanilla extract.
  • In a separate medium bowl, whisk the flour, baking powder, and salt.
  • Alternately add the dry and wet ingredients into the batter.
  • Pour the batter equally into two greased and lightly floured loaf pans.
  • Bake in a non-preheated oven set to 350°F (180°C) for 1 hour, or until toothpick inserted comes out clean.
  • Cool for 30 minutes before slicing.
  • Serve with vanilla ice cream and berries.
  • Enjoy!

This is my Aunt Faye's recipe. It's a pound cake, but it's not heavy at all. It's loved by many.

CAKE
1 box duncan hines butter recipe cake mix
1 c cake flour
1 c sugar
1 c sour cream, room temp
1 stick butter, room temp
5 eggs, room temp
1/4 c oil
1/4 c water
1 tsp vanilla extract
1 tsp butter flavoring
1 tsp almond extract
GLAZE
2 c powered sugar
1/4 c lemon juice

Steps:

  • 1. Preheat oven to 350 degrees. Spray tube bundt pan generously with Baker's Joy.
  • 2. Mix ingredients for cake together until smooth. Do not overmix.
  • 3. Pour batter into pan and bake for 55 -65 minutes until done (Use the fork or tooth pick test). Allow to cool for about 10-15 minutes and invert to serving dish.
  • 4. While cake is cooling mix powdered sugar and lemon juice to desired texture. It is only a glaze, so it should been a thick nectar consistency.
  • 5. Pour glaze over cake a little at a time spreading with the back of a spoon allowing it to soak into the still warm cake.
  • 6. Serve warm or room temperature.....it doesn't matter!

1 stick butter, room temperature
2 c sugar
2 c all purpose flour
1/2 c shortening
6 eggs
1 tsp vanilla
1 tsp lemon extract

Steps:

  • 1. Do NOT preheat your oven.
  • 2. Cream butter and shortening together in a large mixing bowl until well blended. Add sugar, lemon and vanilla extracts.
  • 3. In a medium bowl, sift and measure 2 cups of flour. Sift and measure twice more. Gradually add four into the creamed butter/sugar mixture.
  • 4. Add the eggs, one at a time, mixing at medium speed and being careful not to over beat.
  • 5. Pour the mixture into a prepared bundt pan that has been sprayed with cooking oil.
  • 6. Place the bundt pan in a COLD oven and bake at 275 degrees for 1 hour or a tooth pick comes out clean.
  • 7. Remove from oven and allow to cool completely in pan. Turn out onto a cake plate. Glaze if you like, but I am a plain pound cake gal. Enjoy!

It is the best of all worlds, it is simple, it is GOOD, it keeps very well and it actually is better the day after it is baked(if it lasts that long). The only change I have made to the recipe my Grandmother used is adding the teaspoon of baking powder. It assures you won't have a "sad streak" in the pound cake.

1 cup butter, softened
1/2 cup Crisco (I use butter flavored)
6 eggs, room temperature
3 cups sugar
3 cups all-purpose flour
1 teaspoon baking powder

2 teaspoons vanilla butternut flavoring

Steps:

  • Preheat oven to 325 degrees.
  • Grease and flour bundt pan( I use the baking spray).
  • Cream butter and Crisco then add sugar. Mix until thick and creamy.
  • Add eggs, one at a time, mixing well after each.
  • Sift flour and baking powder together. Alternately add flour and sour cream, beginning and ending with the flour.Mix well but do not overbeat(it will make the cake tough).
  • Add flavoring.
  • Put into prepared pan and bake 90 minutes. Remove from oven and cool for 20 minutes before turning out. Let cool.
  • This is good warm or room temperature. And it is even better the next day.

8 ounces cream cheese, softened

  • Instructions for cake:
  • Preheat oven to 275 degrees. Grease and flour a 10-inch tube pan. Cream margarine, butter, and cream cheese, with sugar until fluffy and well combined. Add salt and vanilla, and mix well. Add eggs, one at a time, beating well after each addition. Add flour and mix well. Pour batter into pan. Place in a cold oven and bake at for 1 1/2 hours, or until done. Check doneness by inserting a toothpick in the center; if it comes out clean, it's ready. Cool in pan, then turn out and slice into half-inch-thick slices. Preheat grill pan to medium heat. Melt remaining 2 tablespoons butter and brush lightly on both sides of cake slices. Grill cake slices, turning once, until lightly grill-marked and slightly softened, about 2 minutes total.
  • Instructions for Bananas with Chocolate Sauce:
  • In a small saucepan, melt 2 tablespoons butter. Pour 1 cup heavy cream into another small saucepan and turn on the burner to medium-high. Scald the cream. Break up the semi-sweet chocolate bar into a medium mixing bowl. When the cream is hot, pour it over the chocolate and sets the bowl aside. In a large skillet, melt the other 2 tablespoons butter over medium-high heat. Peel 3 bananas, slice them and place in another mixing bowl. Add 1/2 cup sugar to the bananas, gently toss them and place them in the buttered skillet. When the bananas are golden-brown, add a dash of fortified wine and cook until it evaporates. Whisk the chocolate cream mixture until smooth, then add 2 tablespoons fortified wine, mixing well.
  • Assembly:
  • Put a cake slice on each dessert plate or parfait cup, top with a spoonful of the bananas, and then another cake slice and another spoonful of bananas. Drizzle the top of each dessert with the chocolate wine sauce.
