2 tablespoons sugar
1/2 teaspoon kosher salt plus more to taste
2 tablespoons plus 1 teaspoon freshly squeezed lime juice
1/2 teaspoon dry mustard
1 tablespoon finely chopped onion
1/2 cup vegetable oil, like soy, corn, or peanut
1 tablespoon poppy seeds

Steps:

  • In a small bowl, whisk together all the ingredients. Use immediately or store covered and refrigerated for up to 2 days.

Number Of Ingredients 8

1 cup (240 ml) cold water
1/3 cup (80 ml) apple cider vinegar
1 thin slice onion, peeled or approximately 1 tablespoon chopped
¾ cup (150 g) granulated sugar
1 teaspoon dry mustard
1 teaspoon salt
2 tablespoons (16 g) cornstarch
1 tablespoon poppy seeds

Steps:

  • 1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  • 2. Select Variable 1.
  • 3. Turn machine on and slowly increase speed to Variable 10, then to High.
  • 4. Blend for 1 minute, then reduce speed to Variable 3. Remove the lid plug.
  • 5. Add poppy seeds through the lid plug opening. Continue to blend for 5 more seconds.
  • 6. Pour into one-quart microwaveable bowl. Cook for 2 minutes on High. Whisk to keep mixture smooth.
  • 7. Microwave an additional 2 minutes. Refrigerate in an airtight container.

½ cup white vinegar
1 teaspoon salt
1 teaspoon ground dry mustard
1 teaspoon grated onion
1 cup vegetable oil
1 tablespoon poppy seeds

Steps:

  • In a blender or food processor, combine sugar, vinegar, salt, mustard and onion and process for 20 seconds. With blender or food processor on high, gradually add oil in a slow, steady stream. Stir in poppy seeds.

This lighter version of the popular and yummy salad dressing uses Splenda and reduced-fat mayo. I got it from the Splenda website.

1 cup buttermilk
1 tablespoon cornstarch
1/4 teaspoon Splenda granular
2 tablespoons dijon-style mustard
2 tablespoons reduced-fat mayonnaise
1/4 teaspoon salt
2 teaspoons poppy seeds

Steps:

  • Pour half of the buttermilk into a small saucepan. Add the cornstarch and stir well, using a wire whisk. Stir until the cornstarch is fully incorporated and there are no lumps. Cook over medium heat until thickened and bubbling (about 3-4 minutes). Remove from heat.
  • Pour buttermilk mixture into a medium bowl. Add remaining buttermilk, sweetener, mustard, reduced-fat mayonnaise and salt. Stir well. Add poppy seeds and stir well. Cover and refrigerate at least one hour or until ready to use.
