2 lbs. ground beef
2 large onions
3 eggs, slightly beaten
6 slices cubed white bread ((or substitute with 1 ½ cups of Panko bread crumbs))
¼ cup half-and-half
2 teaspoons sugar
2 teaspoons salt, or more to taste
½ teaspoon pepper
butter and vegetable oil for frying
¼ cup pan drippings
¼ cup flour, plus additional as needed
2 cups beef broth
2 tablespoons half-and-half
Salt and pepper, to taste
Optional, for serving: chopped fresh parsley; cooked egg noodles; potatoes

Steps:

  • Place the meat in a large bowl. Grate the onions into the meat.
  • Stir together bread or bread crumbs with ¼ cup of half-and-half, just until moistened.
  • Add eggs, soaked bread crumbs, sugar, salt, and pepper to the beef mixture. Use your hands or a fork to gently combine, being careful not to over-mix the meat.
  • Use a medium (1 ½ tablespoon) scoop to shape the meat into balls. Each meatball will be about the size of a golf ball. Place the meatballs on a baking sheet so that they will be ready to fry.
  • Heat 2 tablespoons of butter and 1 teaspoon of oil in a large frying pan over medium-high heat. When the butter melts, sauté meatballs in batches, turning while they cook so that all sides are evenly browned and the meat is cooked through (about 8-10 minutes per batch). Be careful not to overcrowd the pan.
  • Repeat until all meatballs are cooked. Remove meatballs to a baking sheet lined with paper towels, and cover loosely with foil to keep warm while you prepare the sauce.

1 medium onion, chopped

NOODLES:
1 package (16 ounces) egg noodles
1/4 cup butter, cubed
1/4 cup minced fresh parsley

Steps:

  • In a large bowl, combine the first 6 ingredients. Add beef; mix lightly but thoroughly. Shape into 1-1/2-in. meatballs (about 36). In a large skillet over medium heat, brown meatballs in batches. Using a slotted spoon, remove to paper towels to drain, reserving drippings in pan., For gravy, stir flour into drippings; cook over medium-high heat until light brown (do not burn). Gradually whisk in milk until smooth. Stir in the consomme, Worcestershire sauce, pepper and salt. Bring to a boil over medium-high heat; cook and stir for 2 minutes or until thickened., Reduce heat to medium-low; return meatballs to pan. Cook, uncovered, 15-20 minutes longer or until meatballs are cooked through, stirring occasionally., Meanwhile, cook noodles according to package directions. Drain; toss with butter. 2 slices fresh white bread
1/4 cup milk
3 tablespoons clarified butter, divided
1/2 cup finely chopped onion
A pinch plus 1 teaspoon kosher salt
3/4 pound ground chuck
3/4 pound ground pork
2 large egg yolks
1/2 teaspoon black pepper
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/4 cup all-purpose flour
3 cups beef broth
1/4 cup heavy cream

Steps:

  • Preheat oven to 200 degrees F.
  • Tear the bread into pieces and place in a small mixing bowl along with the milk. Set aside.
  • In a 12-inch straight sided saute pan over medium heat, melt 1 tablespoon of the butter. Add the onion and a pinch of salt and sweat until the onions are soft. Remove from the heat and set aside.
  • In the bowl of a stand mixer, combine the bread and milk mixture, ground chuck, pork, egg yolks, 1 teaspoon of kosher salt, black pepper, allspice, nutmeg, and onions. Beat on medium speed for 1 to 2 minutes.
  • Using a scale, weigh meatballs into 1-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds.
  • Heat the remaining butter in the saute pan over medium-low heat, or in an electric skillet set to 250 degrees F. Add the meatballs and saute until golden brown on all sides, about 7 to 10 minutes. Remove the meatballs to an ovenproof dish using a slotted spoon and place in the warmed oven.
  • Once all of the meatballs are cooked, decrease the heat to low and add the flour to the pan or skillet. Whisk until lightly browned, approximately 1 to 2 minutes. Gradually add the beef stock and whisk until sauce begins to thicken. Add the cream and continue to cook until the gravy reaches the desired consistency. Remove the meatballs from the oven, cover with the gravy and serve.

1 1/2 cups whole milk
2 large eggs, lightly beaten

Coarse salt and ground pepper

3 tablespoons butter
1/3 cup all-purpose flour
3 cups canned reduced-sodium beef broth
Grape or red-current jelly, cooked egg noodles, chopped parsley, for serving (optional)

Steps:

  • Preheat oven to 475 degrees. In a large bowl, combine beef, pork, panko, 1/2 cup milk, eggs, garlic, 1 tablespoon salt, 1/2 teaspoon pepper, and allspice. Mix just until combined.
  • Using a rounded 1-tablespoon measure for each, form mixture into meatballs (you should have about 48). Place meatballs onto two rimmed baking sheets; bake until golden brown and cooked through, 10 to 12 minutes, rotating sheets halfway through.

2 tbsp rapeseed oil
1 onion , finely chopped
1 small garlic clove , finely grated
375g lean pork mince
1 medium egg yolk
grating of nutmeg
50g fine fresh breadcrumbs
300ml hot low-salt beef stock
½ tbsp Dijon mustard
2 tbsp fat-free natural yogurt
400g spring greens , shredded
lingonberry or cranberry sauce , to serve

Steps:

  • Put 1 tbsp rapeseed oil in a frying pan over a medium heat. Add the onion and fry for 10 mins or until soft and translucent. Add the garlic and cook for 1 min. Leave to cool.
  • Mix the cooled onions, pork mince, egg yolk, a good grating of nutmeg and the breadcrumbs in a bowl with your hands until well combined. Form into 12 balls and chill for 15 mins.
  • Heat the remaining oil in a frying pan and fry the meatballs for 5 mins over a medium heat, turning often until golden. Pour over the stock and bubble for 8-10 mins or until it has reduced a little. Stir through the mustard and yogurt.
  • Steam the greens for 5 mins or until tender. Serve the meatballs with the greens and a dollop of the sauce.

For the Swedish Meatball Cream Gravy
3 tablespoons butter
1/3 cup all-purpose flour
1 cup warm milk
3 cups beef broth
Directions
Melt the butter in a large skillet over medium heat. Add the flour and whisk, cooking the flour for 2-3 minutes, careful not to brown the roux.
Slow whisk in the warm milk, then the broth and bring to a slow boil until thickened. If the boil is too lively, turn down the heat and slowly simmer until the sauce has reduced and thickened.

Steps:

  • For the Meatballs
  • Pre-heat the oven to 350F.
  • Combine the beef and pork in a medium bowl. Soak the bread crumbs in warm milk until softened and then add to the meat mixture, gently mixing ingredients together.
  • Mix in the remaining ingredients to the meat mixture. Using a 1 tablespoon cookie scoop (for uniformity), form into small balls and place on a parchment or foil lined baking sheet.
  • The meatballs can be prepared with two methods:
  • Oven method: Once all the meatballs are on the lined baking sheet, place them in the oven and bake for about 10-15 minutes or until nicely browned. (I used a convection roast option and the meatballs were done in about 12 minutes and beautifully browned.)
  • Pan Seared method: Pre-heat 2 tablespoons butter and 1 tablespoon high heat oil in a large non-stick, ceramic coated or cast iron pan. Brown the meatballs in batches and then place on the baking sheet. Place the meatballs in the oven for about 8-10 minutes or until the meatballs are cooked through.
  • Serve these delicious meatballs with the Cream Gravy below, along with boiled new potatoes and lingonberry jam. Yum!
  • For the Gravy
  • Melt the butter in a large skillet over medium heat. Add the flour and whisk, cooking the flour for 2-3 minutes, careful not to brown the roux.

1 egg
1/4 cup breadcrumbs
2 medium carrots, grated
2 medium potatoes, grated
1 medium onion, diced
salt and pepper
2 tablespoons butter
2 tablespoons flour
2 cups milk
1 (10 1/2 ounce) can cream of mushroom soup

Steps:

  • Mix the first 7 ingredients.
  • Roll into 1" balls and brown, they seem to stick, so you need to watch them closely. Place in a greased 9x13 pan.
  • Melt the butter in a saucepan, add flour and then the milk.
  • When the flour has dissolved into the milk, add the can of soup, heat through. Pour over the meatballs and bake uncovered at 325°F for 30 minutes.
  • Sprinkle with shredded cheese when removed from the oven.

I'm a 'Svenska flicka' (Swedish girl) from northwest Iowa, where many Swedes settled at the turn of the century. This recipe was given to me by a Swedish friend. It's obviously a 20th century version of a 19th century favorite, since back then they didn't have bouillon cubes or evaporated milk! I think you'll agree that these modern-day 'Kottbullar' are very tasty.

⅔ cup chopped onion
¼ cup fine dry bread crumbs
½ teaspoon salt
½ teaspoon allspice
1 dash Dash pepper
1 pound ground round
2 teaspoons butter
2 cube (blank)s beef bouillon cubes
1 cup boiling water
½ cup cold water
2 tablespoons all-purpose flour
1 cup evaporated milk
1 tablespoon lemon juice

Steps:

  • Combine 2/3 cup evaporated milk, onion, crumbs, salt, allspice and pepper. Add meat; mix well, chill. Shape meat mixture into 1-in. balls. In large skillet, brown meatballs in butter. Dissolve bouillon cubes in boiling water; pour over meatballs and bring to boil over medium heat. Cover; simmer for 15 minutes. Meanwhile, blend together cold water and flour. Remove meatballs from skillet, skim fat from pan juices and reserve juices. Stir 1 cup evaporated milk and flour/water mixture into pan juices in skillet; cook, uncovered, over low heat, stirring until sauce thickens. Return meatballs to skillet. Stir in lemon juice. Serve with cooked noodles that have been tossed with poppy seeds and butter.
