OMA'S RHUBARB CAKE
Oma always makes this for her grand kids after she picks through her garden. Probably not good for the thighs but Oma's cooking is always good for the taste buds.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking dish.
- In a large bowl, stir together 1 1/4 cups sugar, baking soda, salt and 2 cups flour. Stir in the eggs and sour cream until smooth, then fold in the rhubarb. Pour into the prepared dish and spread evenly. In a smaller bowl, stir together the remaining 1 cup sugar and butter until smooth. Stir in 1/4 cup flour until the mixture is crumbly. Sprinkle the mixture on top of the cake then dust lightly with cinnamon.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 45 minutes.

I love rhubarb grown right in my own backyard! This recipe comes from my Great-Auntie Emily. It's such a treat and is best served warm with ice cream or Cool Whip®. It can easily be doubled and baked in a 9x13-inch pan.

- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8 inch square baking dish.
- In a medium bowl, stir together the white sugar, flour and baking powder. Stir in the milk until blended, then stir in the rhubarb. Pour into the prepared baking dish and spread into an even layer. In a separate bowl, stir together the brown sugar, butter and boiling water until butter has melted. Pour over the cake in the pan.
- Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, 45 to 50 minutes.

- Combine sugar& cornstarch.
- Stir in rhubarb& water.
- Cook& stir over medium heat until thickened.
- Reduce heat, cook 2-3 minutes longer.
- Add food coloring.
- Spread on graham wafer crust and let cool.
- Fold marshmallows into whipped cream and spoon over rhubarb mixture.
- Prepare pudding according to package instructions and spread over all.
- Sprinkle with graham wafer crumbs.

AUNT TOM'S ITALIAN CREAM CAKE
Steps:
- Make cake layers:
- Preheat oven to 375°F. and lightly butter and flour three 9- by 2-inch round cake pans, knocking out any excess flour.
- In a bowl with an electric mixer beat together sugar, shortening, and margarine until light and fluffy. Add egg yolks, 1 at a time, beating well after each addition. Into another bowl sift together flour, baking soda, and salt. Beat flour mixture into egg mixture in 2 batches alternately with buttermilk, beginning and ending with flour mixture, until combined. Beat in vanilla, coconut, and chopped pecans. Beat egg whites in another bowl until they just hold stiff peaks and fold into batter gently but thoroughly.
- Divide batter among pans, smoothing tops, and bake in upper two thirds of oven, switching position of pans in oven halfway through baking, until a tester comes out clean, about 30 minutes. Cool cake layers in pans on racks 10 minutes and invert onto racks to cool completely.
- Make frosting:
- In a bowl with an electric mixer beat together cream cheese, margarine, and vanilla until smooth. Gradually beat in confectioners' sugar, beating until creamy.
- Stack cake layers on a cake plate, spreading about 1/2 cup frosting between each layer. Spread remaining frosting on top and side of cake.
GREAT GREAT AUNT JESSIE'S 1940'S RHUBARB PIE FILLING
This is a clipping from the March 20, 1949 Courier Journal that was in great great Aunt Jessie's recipe scrapbook. It was titled "Mrs. Edds' Rhubarb Pie Filling" and to appreciate the charm and wit of a country housewife from the 40's I am writing the recipe much the same way the original author did (Mrs. Edd). (I think Mrs. Edd had an issue with double dippers too!)

Steps:
- Wash and dry rhubarb (do not peel unless the skin is very tough).
- Cut the stalks into about 1/2 inch pieces.
- Beat the eggs and add sugar and flour which have been mixed together.
- Beat until the three are as one.
- Mix the egg-sugar mixture with the rhubarb and fill the pie shell.
- I like a high, rounding pie even if I do have to put a pan under it in the oven.
- Believe it or not, this is such a good and well-behaved pie that it didn't drip, but I betcha it would have if that pan hadn't been under it.
- To get the shiny countenance on this pie, brush the top with an egg or egg yolk diluted in water or milk when the pie is about halfway through its cooking period.
- If it doesn't get enough make-up with the first painting, brush it again just before it comes out of the oven.
- Where there is pie, there should be cheese.
- We chose this time a soft cheese molded into small balls- one for each serving.
- Then you'd better make a few more since there are always delightful"pigs" who want two scoops of ice cream and two hunks of cheese with pie.
- And it's only right, because these characters always look for the largest piece of pie to go with double the trimmings.

This is a fantastic cake. I got the recipe from a great-aunt who can cook absolutly ANYTHING. It is not terribly sweet, butI have never heard any complaints!

- Combined baking soda and buttermilk and let stand for a few minutes.
- Cream sugar, butter, and shortening.
- Add egg yolks one at a time, beating well after each addition.
- Add buttermilk mixture and flour alternately until combined.
- Stir in vanilla.
- Beat egg whites until stiff.
- Fold stiff egg whites into batter along with coconut and pecans.
- Evenly divide mixture between 3 well greased and floured, 9 inch pans.
- Bake at 325 for 25 minutes or until a toothpick comes out cleanly.
- Top each layer with 'Aunt Mary's Cream Cheese Frosting' and sprinkle on pecans.
