2 heads romaine lettuce, torn into bite-size pieces
3 (15 ounce) cans mandarin oranges, drained
1 bunch green onions, chopped
5 ounces slivered almonds
¾ cup white sugar
½ cup apple cider vinegar
1 tablespoon salt
1 teaspoon dry mustard
1 cup vegetable oil
1 ½ tablespoons poppy seeds

Steps:

  • Mix lettuce, oranges, green onions, and almonds in a large mixing bowl.
  • Blend sugar, vinegar, salt, and mustard in a blender. Stream oil into the dressing while blending. Continue to blend until the dressing emulsifies. Add poppy seeds and blend briefly to mix. Drizzle dressing over the salad and toss to coat.

  • Cook 3 pounds sliced red potatoes in salted simmering water, about 8 minutes. Drain, then toss with 1/4 cup each chicken broth and white wine; let sit 5 minutes. Whisk 1/3 cup white wine vinegar, 3 tablespoons dijon mustard, 1 tablespoon poppy seeds and a pinch of sugar in a bowl; whisk in 1/2 cup olive oil, and salt and pepper. Toss with the potatoes, then chill 2 hours. Top with chives.

My Aunt Ina loved poppy seed dressing on her salad. Here is her version of homemade poppy seed dressing. Its surprisingly refreshing and tangy. Yumm..... Please forgive the picture. Sometimes its hard to get a good picture. This dressing is the color of canola oil with ground mustard and seeds.

1/3 c white vinegar
3/4 c sugar
2 Tbsp very finely chopped sweet onion
1 tsp salt
1 tsp ground mustard
1 1/4 c canola oil
2 Tbsp poppy seeds

Steps:

  • 1. In a large blender container place vinegar, sugar, onion, salt, and mustard. Cover and process until smooth. Gradually add oil through the hole in the top of blender so as not to have dressing flying all over kitchen. :) When all these ingredients are blended smooth, stop blender. Pour into bottle or bowl and stir in poppy seeds by hand. Refrigerate until using on tossed salad or spinach salad.

2 1/2 pounds boneless, skinless chicken breasts
4 celery stalks, finely chopped
4 cups seedless grapes, halved
2 cups slivered almonds
2 cups mayonnaise
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons poppy seeds
2 tablespoons dried dill
1 loaf white sandwich bread

Steps:

  • Boil the chicken in a large pot filled with water until done, about 45 minutes. Drain the chicken and set aside to cool. Once the chicken is cooled, dice into small pieces and place in a large mixing bowl. Add the celery, grapes, almonds, mayonnaise, salt, pepper, poppy seeds and dill. Mix until the salad is fully combined. Cut the crusts off of the bread and place a few tablespoons in between each sandwich, pressing to make it easy to pick up. Cut on the diagonal to make 2 triangles to serve.

sliced red onion
11 ounces mandarin oranges, drained
7 -10 whole pecans, per person
1/2 cup sugar
2/3 cup vegetable oil
1/2 teaspoon prepared mustard
1/4 teaspoon poppy seed
1/4 cup vinegar
1 teaspoon salt

Steps:

  • Arrange salad ingredients on individual plates. (You can adjust how much lettuce to use according to how many you are making this for).
  • Add all dressing ingredients to a shaker and shake immediately prior to dressing the salad. Pour over salad no more than 10 minutes prior to serving.
  • My family places these salad plates on the table before everyone is called to the table. The dressing will serve 8-10 people. A little goes a long way.

1 egg
1/2 teaspoon almond extract
1/2 cup sour cream

1/4 teaspoon baking soda
2 tablespoons poppy seed
3 teaspoons sugar
2 tablespoons sliced almonds

Steps:

  • Heat oven to 375°F. Line 12 medium muffin cups with paper baking cups (or spray cups with cooking spray or grease with shortening).
  • In large bowl, stir together 1/2 cup sugar, the oil, egg and almond extract. Beat in sour cream and milk with spoon until blended. Stir in flour, baking powder, salt, baking soda and poppy seed until well blended. Divide batter evenly among muffin cups. Sprinkle batter with 3 teaspoons sugar and the almonds.
  • Bake 14 to 17 minutes or until toothpick inserted in center comes out clean. Remove from pan to wire rack. Serve warm or cool.

Our favourite early summer salad. Be sure your Feta is not too salty, though the pleasure of this salad is the contrast between the salty cheese and dressing and the rich smooth flavours of the pumpkin seeds and the asparagus. Also the pumpkin seeds give it a great crunch. As a meal, the two of us will eat the whole thing.

1 bunch leaf lettuce or 1 bunch boston lettuce
1 lb fresh asparagus
1/3 cup green pumpkin seeds (pepitas)
1/2 lb feta cheese
1/4 cup olive oil
3 tablespoons balsamic vinegar
1 teaspoon tamari or 1 teaspoon soy sauce
1/2 teaspoon Worcestershire sauce
1/2 teaspoon pepper
1/2 teaspoon ground cumin
1/4 teaspoon celery seed

Steps:

  • Wash, pick over, dry and tear up the lettuce.
  • Trim the asparagus, and steam it.
  • As soon as it is cooked, plunge it into cold water to stop it from cooking any further.
  • When it is cool, drain well and cut it into inch long pieces.
  • Toast the pumpkin seeds in a dry skillet over medium heat, stirring frequently, until they"pop" and turn light brown.
  • Turn them out at once to cool on a plate.
  • Cut the feta cheese into 1 cm cubes.
  • Mix the oil, vinegar, tamari or soy sauce, Worcestershire sauce, pepper, cumin and celery seed.
  • Arrange the lettuce in a salad bowl, with the asparagus, cheese, and pumpkin seeds over it, and drizzle the dressing over the salad immediately before serving.

3 tablespoons red wine vinegar
1 teaspoon poppy seeds, or to taste

Steps:

  • Place cantaloupe and cucumbers in a colander; set a plate on top. Place a heavy object such as a large can of food on top of plate to squeeze out excess liquid from cantaloupe and cucumbers, tossing about every 30 minutes, 2 to 3 hours.

I made this for my women's group last night. It's a compilation of several recipes. Everyone loved it and asked for the recipe. You could add chicken or boiled shrimp to make it a main dish.

1 head romaine lettuce, washed and torn into bite sized pieces
1 (6 ounce) can mandarin oranges, chilled and drained
6 ounces strawberries, hulled & sliced
6 ounces mozzarella cheese, cubed into bite size pieces
6 ounces cherry tomatoes or 6 ounces grape tomatoes
6 ounces coarsely chopped walnuts, toasted in the microwave
6 ounces creamy poppy seed salad dressing (I used Brianna's) or 6 ounces your own homemade poppy seed dressing

Steps:

  • Toast the walnuts in the microwave for about 2 minutes but watch carefully. Cool slightly.
  • On a large platter layer the romaine.
  • Scatter the drained mandarin oranges over the romaine.
  • Scatter the strawberries next, be sure to put some along the sides to look pretty.
  • Scatter the mozzarella over the above.
  • Scatter the cherry or grape tomatoes over all.
  • Top with Walnuts.
  • Pour dressing over top and serve chilled.

1 head iceberg lettuce, torn

1/3 cup cider vinegar
3/4 cup sugar
1 small onion, cut into wedges
1/2 teaspoon salt
1/2 teaspoon ground mustard
1 cup canola oil
4 teaspoons poppy seeds

Steps:

  • Crush ramen noodles; discard seasoning packet. In a large salad bowl, toss the greens, lettuce, noodles, oranges and almonds; set aside. , For dressing, in a blender, combine the vinegar, sugar, onion, salt and mustard; cover and process until smooth. While processing, gradually add oil in a steady stream. Stir in poppy seeds. Serve with salad.
