This sorbet is tangy and not very sweet. I added only enough sugar and corn syrup to allow the mixture to freeze properly without developing ice crystals.

1/2 cup/100 grams sugar
4 cups/750 grams diced mango (3 to 4 large mangos)
2/3 cup/150 grams fresh lime juice (about 6 limes)
2 tablespoons/50 grams corn syrup

Steps:

  • Combine 1/2 cup water and sugar in a small saucepan and stir. Bring to a simmer and simmer until sugar has dissolved. Remove from heat.
  • Combine all ingredients in a blender and purée until completely smooth. Transfer to a bowl or container and chill overnight in refrigerator.
  • (Chill a 1-quart container in the freezer while you spin the sorbet.) Remove bowl from refrigerator and blend the mango purée again for 1 to 2 minutes in a blender or with an immersion blender. Add to ice cream maker and spin for about 25 minutes. Transfer to chilled container and freeze for 2 hours or longer to pack.
  • Once frozen solid, allow to soften in refrigerator for 30 minutes before serving.

3 large mangos, peeled and pitted and chopped into chunks
2 cups simple syrup, recipe follows
1/4 cup freshly squeezed lime juice
1 tablespoon chili powder, plus extra for garnish
Coarse salt
2 cups water
2 cups sugar

Steps:

  • If using, prepare the bowl of the ice cream maker according to manufacturer's directions.
  • Place the mango chunks in the food processor and puree until smooth. You should have about 3 cups of puree. Place the 3 cups of puree in a mixing bowl and stir in the simple syrup, lime juice, and chili powder. Pour the mixture into a shallow dish and place in the freezer. Freeze for at least 3 hours and up to overnight.
  • If using an ice cream maker, pour into maker and freeze according to manufacturers directions. Transfer the sorbet to a freezable container and freeze until firm, about 1 to 2 hours.
  • Serve cold, sprinkled with a little coarse salt and more chili powder, if desired.
  • In a small saucepan, dissolve the sugar in the water and bring to a boil. Boil 2 to 3 minutes, then remove from the heat and allow to cool completely.

Mango, mango, mango! This super easy, low-fat frozen treat is 100 percent ripe mango (with just a little bit of water to help with blending). Use really ripe fruit, which is naturally sweeter. Add a drizzle of honey if your sweet tooth needs a little something extra (though it will also add a few extra calories).

2 very ripe mangoes (2 to 2 1/2 pounds total)
2 tablespoons unsweetened coconut flakes
1 small lime, quartered
Honey for drizzling, optional

Steps:

  • Peel the mangoes, cut the flesh from around the pit and cut into approximately 1/2-inch chunks (you should have about 4 cups). Arrange the chunks in a single layer on a baking sheet, and loosely cover with plastic wrap. Freeze the mango until hard, at least 4 hours up to overnight.
  • Meanwhile, preheat the oven to 350 degrees F. Spread the coconut out on a rimmed baking sheet, and bake until lightly golden and toasted, about 4 minutes, tossing about halfway through.
  • Once the mango is completely frozen, transfer it to a food processor. Add 1/4 to 1/2 cup hot water, and process the mango until completely smooth; turn the food processor off and stir with a wooden spoon or spatula as needed. The finished texture should be like creamy sorbet (a few small chunks of mango are fine). Scoop the sorbet into 4 serving glasses or bowls, squeeze a quarter of a lime over each, drizzle with honey if using and sprinkle with toasted coconut.

Steps:

  • Peel the mango. Cut the flesh from the stone and dice it. Place in a zip-lock bag, close it (be careful to keep the air out) and freeze for at least 4 hours.
  • Take the bag out of the freezer and allow to thaw for about 20 minutes at room temperature.
  • Put slightly thawed mango pieces into a tall bowl (or the bowl of your blender), add powdered sugar (if using) and puree the mango into a creamy sorbet using a hand-held blender (or simply blend in your blender).
  • Eat right away and enjoy!

Pinch of coarse salt
1 teaspoon finely grated lime zest, for sprinkling, plus 1/2 to 1 teaspoon lime juice (from 1 lime)
Lime wedges, for garnish

Steps:

  • Peel mangoes and cut flesh away from pits; discard pits. Cut mango flesh into 1-inch chunks and spread in a single layer on a plastic-wrap-lined baking sheet. Freeze mangoes, uncovered, until hard, at least 8 hours; once hard, mangoes can be transferred to plastic freezer bags and kept frozen up to 2 months.
  • Remove mangoes from freezer and let soften slightly at room temperature, about 15 minutes. Place mangoes and salt in a food processor; puree until smooth, about 2 minutes, scraping down sides of bowl as necessary. Pulse in juice to taste. Serve immediately, scooped into bowls and sprinkled with lime zest and garnished with lime wedges.

Nothing is better in the summer than a frosty frozen fruit treat. Even better when its is light and luscious like this one. The lime heightens the natural sweetness of the mango while the whipped egg whites make the dessert light and airy. I ran across this one in a local newspaper and recently decided to try it in my ice cream maker. The directions and preparation time here are for conventional freezer preparation without an appliance.

1 large mango
1 1/2 teaspoons gelatin powder
2 egg whites
1 -2 tablespoon sugar (to taste) or 1 -2 tablespoon Splenda granular (to taste)
5 tablespoons lime juice, divided
lime zest, strips (optional)

Steps:

  • Peel and cut up the mango into chunks. Puree mango and 2 tablespoons of lime juice in a blender or with an immersion blender. Set aside. (Don't worry if the puree is tart, the lime juice mellows in the freezing process.)
  • Mix the gelatin into the remaining 3 tablespoons of lime juice in a small heatproof bowl. Place the bowl in a small saucepan of simmering water and stir until the gelatin dissolves. Add gelatin-lime juice mix to the mango puree.
  • Whisk egg whites to soft peaks. Add sugar or Splenda.
  • Gently fold the egg whites into the mango.
  • (If you are using an ice cream maker, follow the directions for your machine here. In mine, this takes about 20-22 minutes.)
  • Place the mixture into a freezer proof bowl for 2 hours. Take the bowl out of the freezer and mix to break up the ice chunks and return to the freezer. Allow it to freeze until firm or solid.
  • If sorbet is frozen solid prior to serving, place in the refrigerator for 10 minutes before serving.
  • Scoop sorbet into bowls and garnish with lime zest strips.

4 ripe mangoes (about 3 1/2 pounds total)
1 cup Simple Syrup
3 tablespoons fresh lime juice, or to taste

Steps:

  • Line a baking sheet with plastic wrap.
  • Wash and dry mangoes. Using a sharp knife, remove the 2 flat sides of each mango, cutting lengthwise alongside pit and cutting as close to pit as possible so that mango flesh is in 2 large pieces. With a spoon carefully scoop flesh from mango sides into a blender, leaving shells intact. With a knife cut remaining flesh from pit and add to blender. Add syrup and lime juice to blender and purée until smooth. Put mango shells on baking sheet and freeze while making sorbet.
  • Freeze mango purée in an ice-cream maker. Scoop sorbet into frozen shells, mounding slightly, and smooth surfaces. Freeze filled mango shells at least 6 hours, or until frozen hard. Frozen sorbets in shells may be wrapped individually in plastic wrap and kept in freezer 1 week.

200g caster sugar
1 lime , juiced

Steps:

  • Peel the mangoes with a vegetable peeler, cut as much of the flesh away from the stone as you can, put it in a food processor or blender.
  • Add the sugar, lime juice and 200ml water. Blend for a few minutes, until the mango is very smooth and the sugar has dissolved - rub a little of the mixture between your fingers, if it still feels gritty, blend for a little longer. Pour into a container and put in the freezer for a few hours.
  • Scrape the sorbet back into the blender (if it's very solid, leave at room temperature for 5-10 mins first). Whizz until you have a slushy mixture, then pour back into the tin and freeze for another hour or so.
  • Repeat step 3. Freeze until solid (another hour or two). Will keep covered in the freezer for three months.

1/2 cup lime juice (fresh is best)
2/3 cup sugar (super-fine is recommended)

  • Make simple syrup: Add sugar to water in small saucepan. Stir over medium heat until sugar is fully dissolved. Raise heat and bring syrup to a boil; boil one minute, then remove from heat and allow to cool completely.
  • Puree thawed mango and lime juice in a food processor.
  • Stir simple syrup into mango puree. Refrigerate a few hours to be certain puree is cool.
  • Follow the manufacturer's instructions for your ice cream maker at this point. If you don't have one, pour into a pan and put in freezer; pull out every hour and stir (for 3-4 hours).
