A co-worker brought this casserole to one of our potlucks. After I got the recipe, I made it for one of my family's Thanksgiving dinners and it has been requested so often that it has become a staple at family gatherings.

½ cup chopped onion
½ cup chopped celery
¼ cup chopped green bell pepper
½ cup shredded mild Cheddar cheese
1 (11 ounce) can white corn, drained
1 (14.5 ounce) can French cut green beans, drained
1 (10.75 ounce) can condensed cream of celery soup
1 (8 ounce) container sour cream
¼ (16 ounce) package buttery round crackers, crushed
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine onion, celery, green pepper, cheese, corn, green beans, soup and sour cream. Spoon into a 2-quart casserole dish.
  • Combine crushed crackers with melted butter and sprinkle on top of vegetables.
  • Bake in preheated oven for 45 minutes.

  • Cook Rice-a-roni according to directions on box.

1 egg
2 tablespoons sugar

Steps:

  • Sauté onions & pepper in margarine.
  • Add corn, crumbled cornbread, egg, sugar, & pimentos.
  • MIX WELL.
  • Pour in buttered casserole dish.
  • Grate sharp or cheddar cheese on top.

4 -6 medium pork chops
salt and pepper
2 cups instant rice
1 (15 ounce) can baby green peas, drained
4 medium potatoes, peeled and cut-up
1 small onion
4 tablespoons margarine

Steps:

  • Line a 9" x 13" pan with cooking foil, shiny side in; spray with cooking spray lightly.
  • Place 4 to 6 medium sized chops inside; season with salt and pepper.
  • Top in 3rds: Make 2 cups instant rice to fill one-third, center third is a can of drained baby green peas, last third place 4 medium peeled and cut-up potatoes.
  • Chop one small onion over all.
  • Dollop margarine in small chunks over top.
  • Season with salt and pepper again.
  • Roll up excess foil to seal casserole on top and ends.
  • Bake at 350 degrees Fahrenheit for 1-1/2 hours.
  • Yummy Casserole!
  • Instead of the green peas I have used green beans or corn before to change the flavor on the chops, but I like the peas best!

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Mix sugar, flour, baking powder, and salt together in a bowl.

My aunt Betty makes this amazing casserole. Though hard boiled eggs and chipped beef are hardly haute cuisine, I think you'll agree after trying this one that the flavor is outstanding. You have to mix this up and refrigerate it overnight before baking it to fully enhance the flavors. Do not add any salt--the beef and the soup are salty enough. You may want to rinse the beef before adding it to the casserole as it is quite salty. Add a green salad and "presto" dinner is ready. Prep time is minimal but you need to mix this up the day before you want to bake it.

1 cup shredded cheddar cheese
2 hard-boiled eggs, sliced
1 cup milk
3 tablespoons finely chopped onions

4 ounces dried chipped beef, cut into bite size pieces (rinse the beef to the desired saltiness level, if preferred)

Steps:

  • Put soup in a 2 quart casserole dish.
  • Stir until creamy.

Steps:

  • Beat eggs. Add other ingred except pimentos paprika and salt. Pour in greased 1 1/2 qt baking dish and sprinkle with seasonings. Bake 350 for 45 - 60 min.

1 (1 oz) envelope Ranch dressing mix
1 (8 oz) carton sour cream
1 cup mayonnaise (or Craft Miracle Whip Light)
3 large tomatoes, chopped
1/2 cup green bell pepper, chopped
1/2 cup green onion, chopped
2 (16 oz) cans pinto beans, drained
2 cups grated cheddar cheese
10 slices of bacon, fried crisp & crumbled
2 (15 1/4 oz.) cans whole kernel corn, drained
1/2 cup red bell pepper, chopped

Steps:

  • Prepare cornbread mix according to package directions. Cook and set aside to cool. Stir together the ranch dressing mix, sour cream and mayonnaise until well blended. Set aside. Combine tomatoes and next 3 ingredients. Gently toss. Crumble half of the cornbread into a 3-qt. trifle bowl or a large salad bowl. Top with half of each: Beans, tomato mixture, cheese, bacon, corn and dressing mixture. Repeat the layers. Cover and chill for about 3 hours.
