Celebrate juicy, in-season strawberries by using them as a filling for pie. Geoffrey keeps it simple by using store-bough pie crust and filling it with an easy-to-make strawberry compote. Then, he tops everything off with fresh, sliced berries.

Number Of Ingredients 12

3 pounds strawberries, stems removed
1/3 cup plus 1 tablespoon granulated sugar
1 tablespoon elderflower liqueur
1/4 cup strawberry jam
3 1/2 tablespoons cornstarch
1 teaspoon lemon juice
Kosher salt
1 store-bought pie crust baked according to package instructions, or 1 homemade pie crust, blind baked
1 1/2 cups heavy cream
3 tablespoons confectioners' sugar
1 teaspoon vanilla bean paste
1/2 teaspoon cream of tartar

Steps:

  • Quarter 2 pounds of the strawberries and set aside. Dice half of the remaining pound, then slice the remainder.
  • Stir 1 tablespoon granulated sugar together in a bowl with the elderflower liqueur until the sugar dissolves. Toss with the diced berries and set aside to macerate at room temperature.
  • Place the quartered strawberries in a medium pot and gently stir together with the jam, cornstarch, lemon juice, a pinch of salt and the remaining 1/3 cup granulated sugar. Bring to a simmer over medium heat and cook, stirring often, until the strawberries begin to break down and the mixture is thick and jammy, 15 to 20 minutes. Remove from the heat and let cool about 10 minutes, then stir in the reserved macerated berries.
  • Pour mixture into the baked crust and allow to chill in the refrigerator until set, at least 3 hours.
  • Decorate the top of the pie with the sliced berries in concentric circles. Refrigerate until ready to serve.
  • Whip the cream along with the confectioners' sugar, vanilla and cream of tartar until it holds medium stiff peaks. Serve alongside the pie.

2 cups all-purpose flour, plus additional flour as needed, up to 1/4 cup
1/2 cup cake flour (recommended: Soft As Silk)
3 teaspoons sifted powdered sugar
1/2 cup butter-flavored shortening (recommended: Crisco)
1/4 cup salted butter
Pinch salt
1 egg
2 teaspoons vinegar
1/4 cup ice cold water
2 1/2 cups chopped red rhubarb, fresh
2 1/2 cups de-stemmed, washed and cut strawberries (in larger pieces)
1 1/2 cups sugar (1 1/4 cups for high altitude)
2 tablespoons minute tapioca
1 tablespoon all-purpose flour
1/2 teaspoon lemon zest
1/2 teaspoon lemon juice
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
3 tablespoons butter, cubed small
1 egg white beaten with 1 teaspoon water
Large granule sugar

Steps:

  • Crust Preparation:
  • Using 2 pastry blenders, blend the flours, sugar, shortening, butter and salt. Whisk the egg, vinegar and water in a 2-cup measure and pour over the dry ingredients incorporating all the liquid without overworking the dough. Toss the additional flour over the ball of dough and chill if possible. Divide the dough into 2 disks. Roll out 1 piece of dough to make a bottom crust. Place into a pie dish. Put dish in refrigerator to chill.
  • Preheat oven to 425 degrees F.
  • Filling Preparation:
  • Mix the rhubarb, strawberries, sugar, tapioca, flour, zest and juice of lemon, dash of cinnamon, and vanilla. Mix well in a large bowl and pour out into chilled crust. Dot the top of the filling with the butter. Brush edges of pie crust with egg white wash. Roll out the other piece of dough and place over filling. Crimp to seal edges. Brush with egg white wash and garnish with large granule sugar. Collar with foil and bake at 425 degrees F for 15 minutes. Decrease temperature to 375 degrees F and bake for an additional 45 to 50 minutes, or until the filling starts bubbling. Higher altitude will take 450 degrees F and 400 degrees F respectively. Also, you can use a pie bird for extra decor. Let cool before serving.

2 cups sugar
1/2 cup cornstarch
2 cups water
1 lb frozen strawberries or 1 lb fresh strawberries
4 tablespoons straberry Jello gelatin
1 cup whipped cream

Steps:

  • combine 2C sugar, 1/2 C cornstarch in saucepan.
  • add 2 cups water and heat until boiling gently.
  • Cook for 3 minutes.
  • remove from heat and stir in 4T jello until dissolved.
  • Pour over chopped strawberries, thawed and well drained if using frozen berries.
  • Pour into baked pie crust and chill.
  • Serve with whipped cream if desired.

I lost my aunt's raspberry pie recipe, and I have searched the web for a similar one without any luck. This is what I can remember of the recipe, and it is terrific. It also works for cherries, but you may want to add food coloring to keep it red. Crust is my standard easy to roll crust.

4 cups flour
1 tablespoon sugar
2 teaspoons salt
1 cup shortening
1/2 cup butter
1/2 cup water
1 egg
1 tablespoon vinegar
5 cups frozen raspberries or 5 cups fresh raspberries
1/2 cup water
1 cup sugar
1 tablespoon lemon juice
1/3 cup tapioca
1/2 teaspoon almond extract

Steps:

  • Crust.
  • Combine flour, sugar, salt. Cut in shortening and butter. Beat together water, egg and vinegar. Add to flour/shortening/butter mixture and mix until dough forms. Separate into four balls. Use two for this pie and freeze the rest for another time.
  • Filling.
  • Bring raspberries, water, sugar, lemon juice and tapioca to a boil. Add 1/2 tsp almond extract and remove from heat.
  • Pie.
  • Preheat oven to 425 degrees. Roll one ball of dough into a round circle large enough to fit your pie plate. Line the pie pan. Pour/ladle filling into crust lined pie plate until it is almost full. (You may have more filling than you need depending upon the size of your pie plate.) Roll the second ball of dough into another circle. Place on top of pie and seal edges. You may also lattice the top. Bake at 425 degrees for 15 minutes and then 350 degrees for 45 minutes.

This recipe dates back to the early 1900's and was made by my grandmother's sister Kate. I have the fondest memories of my grandmother and my mother making this when strawberries came into season. The cake itself is not very sweet, although the icing is. The balance is perfect. I make this for many occasions, and my secret taste testers have remarked how wonderful it is. Just a side note: using fresh, sweet strawberries is the key.

1 cup white sugar
½ cup shortening
2 eggs, room temperature
1 teaspoon vanilla extract
1 cup mashed fresh strawberries
½ teaspoon baking soda
2 cups all-purpose flour

¼ cup mashed fresh strawberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a cake pan.
  • Beat white sugar and shortening together until light and fluffy.
  • Beat eggs, one at a time, into sugar mixture until well mixed; stir in vanilla extract.

  • Beat confectioners' sugar, butter, and 1/4 cup strawberries in a bowl with an electric mixer until blended; frost the cooled strawberry cake.

1 cup graham cracker crumbs
¼ cup white sugar
¼ cup butter, melted
1 tablespoon unflavored gelatin

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a mixing bowl; mix until evenly moistened and press into the bottom and sides of a 9-inch pie pan.
