BASIC GRANOLA RECIPE

This basic granola recipe is pretty perfect as is, but feel free to swap out ingredients to customize it to your taste (see Cook's Notes below for sample substitutions).

Number Of Ingredients 9

3 cups rolled oats
2 tablespoons light brown sugar
1/2 teaspoon ground cinnamon (see Cook's Notes)
1/2 teaspoon kosher salt
1/3 cup honey (see Cook's Notes)
1/4 cup canola oil (see Cook's Notes)
1 teaspoon vanilla extract (see Cook's Notes)
1/2 cup coarsely chopped almonds (see Cook's Notes)
1/2 cup dried cranberries (see Cook's Notes)

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl, mix together the oats, light brown sugar, cinnamon and salt. Stir the honey, oil and vanilla extract into the dry ingredients. Use your hands if necessary to make sure it's well combined.
  • Spread the mixture in an even layer on the prepared baking sheet. Bake for 20 minutes and then remove from the oven and stir; add the chopped almonds. Return to the oven and bake until everything is toasted and evenly browned, an additional 10 minutes.
  • Allow the granola to cool on the baking sheet, then add the dried cranberries and toss to distribute. Store in an airtight container at room temperature for up to 2 weeks.

EASY HOMEMADE GRANOLA



Easy Homemade Granola image

I like to use thick oats when I can find them. Be sure to keep an eye on the granola towards the end -- you want it well browned but not overdone. You can add raisins, dried cherries or other dried fruit after it's done and cooled. Jenny Jones

Number Of Ingredients 6

4 cups rolled oats (not quick oats)
1 cup chopped nuts (I use walnuts, almonds & pecans)
3 Tablespoons shredded sweetened coconut
1/3 cup brown sugar (1/4 cup works too)
1/4 cup pure maple syrup
3 Tablespoons vegetable oil

Steps:

  • Preheat oven to 325° F.
  • Place all ingredients on an ungreased baking pan.
  • Combine well using your hands.
  • Bake about 30 - 35 minutes, stirring at 20 minutes, then check every 5 minutes. Bake until well browned - watch carefully.
  • Remove from oven and cool in pan. Don't under-bake.

Homemade granola couldn't be easier with Alton Brown's recipe from Good Eats on Food Network. Maple syrup sweetens this healthy melange of oats and nuts.

3 cups rolled oats
1 cup slivered almonds
1 cup cashews
3/4 cup shredded sweet coconut
1/4 cup plus 2 tablespoons dark brown sugar
1/4 cup plus 2 tablespoons maple syrup
1/4 cup vegetable oil
3/4 teaspoon salt
1 cup raisins

Steps:

  • Preheat oven to 250 degrees F.
  • In a large bowl, combine the oats, nuts, coconut, and brown sugar.
  • In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
  • Remove from oven and transfer into a large bowl. Add raisins and mix until evenly distributed.

AUNT JENNY'S SLOW COOKER MEATBALLS

This is an adaptation of a recipe created by the Johnson Family on the Baptist Church web site. Serving size is 3 meatballs with 2 tablespoons sauce.

1 1/2 lbs lean ground beef
1 cup dry breadcrumbs
1/2 cup egg substitute
1/3 cup chopped fresh parsley
2 tablespoons minced fresh onions
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon lemon juice
1 (16 ounce) can jellied cranberry sauce
1 (12 ounce) bottle chili sauce

Steps:

  • Combine first 5 ingredients (ground beef through onion).
  • In a large bowl; shape mixture into 30 1& 1/2" meatballs.
  • Combine ketchup, brown sugar, lemon juice and sauces in an electric slow cooker; gently stir in meatballs.
  • Cover with lid; cook on low setting 8-10 hours.

¼ cup packed brown sugar
3 tablespoons maple syrup
2 tablespoons vegetable oil
½ teaspoon salt
1 ½ cups rolled oats
½ cup chopped almonds
½ cup raw pumpkin seeds
⅓ cup shredded coconut
½ cup dried currants

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Line a baking sheet with a silicone liner.
  • Combine brown sugar, maple syrup, oil, and salt in a bowl. Add oats, almonds, pumpkin seeds, and coconut. Mix well, making sure all ingredients are coated evenly.
  • Pour onto prepared baking sheet and distribute in an even layer.
  • Bake in the preheated oven for 1 hour, stirring every 10 to 15 minutes lightly with the tines of a fork so mixture toasts evenly and granola is golden brown.
  • Pour into a bowl and, while mixture is still hot, mix in currants. Cool. Store in an airtight container until ready to use.

3 cups old fashioned oats
2 cups nuts (cashews, pecans and/or almonds)
3/4 cup natural coconut
1/4 cup vegetable oil
6 tablespoons maple syrup
3/4 teaspoons salt
1 cup dried fruit (raisins, craisins, cherries, etc.)

Steps:

  • Mix together the first three ingredients in a large bowl.
  • Mix the next three ingredients together until emulsified.
  • Stir liquid into oat mixture to coat. Divide onto two cookie sheets and spread evenly.
  • Cook in 260 degree oven for 1 hour or until golden brown. Stir and flip mixture every 20 min.
