1 cup dried black-eyed peas
1 tablespoon olive oil
1 cup lean diced ham
1 onion, chopped
½ cup chopped green bell pepper
1 clove garlic, minced
2 cups water
2 bay leaves
2 pinches paprika, or more to taste
salt and ground black pepper to taste
3 cups cooked rice

Steps:

  • Place black-eyed peas into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse.
  • Heat olive oil in a pot over medium heat; cook and stir ham until browned, about 5 minutes. Add onion, green bell pepper, and garlic; saute until onion is tender, about 10 minutes. Add black-eyed peas, water, bay leaves, paprika, salt, and black pepper; cover pot with a lid and simmer until peas are tender, 40 to 50 minutes.
  • Remove bay leaves from black-eyed peas mixture and stir in rice. Simmer until all the liquid is evaporated, 5 to 10 more minutes.

Pinch cayenne
Kosher salt
1/4 cup olive oil
Two 15.5-ounce cans black-eyed peas, rinsed and drained
1 cup mixed-color grape tomatoes, halved
1/2 green bell pepper, medium-diced (slightly smaller than 1/2-inch pieces)
1/2 red bell pepper, medium-diced (slightly smaller than 1/2-inch pieces)
2 stalks celery, thinly sliced
1/4 cup finely chopped red onion
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Combine the vinegar, garlic, cayenne and 1/2 teaspoon salt in a large bowl. Whisk in the olive oil. Add the black-eyed peas, tomatoes, peppers, celery, onions and parsley and toss to combine. Season with salt to taste.

2 cans blackeyed peas, drained
1 1/2 cups of brown rice.
1/2 c chopped onion
1/2 pound lean cooked ham steak, trimmed and cut into 1/4 inch cubes (I found pre-cooked & cubed ham steak at the grocery store).
1 clove garlic, minced
3 T. white wine vinegar, or plain
3 T. pickled sweet banana peppers
1/3 c. vegetable oil
3 T. fresh lemon juice
1/2 to 3/4 cup chopped scallions
Salt and pepper to taste.

Steps:

  • 1. Combine peas, onion, ham and garlic in a skillet and cook, covered over low heat for 10 to 15 minutes until onions are tender. Leave covered to keep warm. 2. In a small bowl, whisk together the vinegar and peppers. Add the oil in a stream and keep whisking until the dressing emulsifies. 3. Combine the pea mixture with the dressing. Stir in the lemon juice, scallions, & salt and pepper. Allow to marinate at least one hour, stirring occasionally. 4. Cook 1 1/2 cups of brown rice according to package directions. Spoon pea mixture over rice. (Or, hollow a middle area in a shallow bowl of rice to put the pea mixture).

1 (15-ounce) can black-eyed peas, rinsed and drained
2 mini cucumbers, cut into ½-inch dice
½ sweet onion, finely chopped
1 pint cherry tomatoes or grape tomatoes, halved
¼ cup picked fresh dill

Steps:

  • Whisk the garlic, vinegar, mustard, hot sauce, honey, 1/4 teaspoon salt, and ¼ teaspoon pepper in a large bowl until smooth. While whisking, add the oil in a slow, steady stream. Whisk until emulsified.
  • Add the peas, cucumbers, onion, tomatoes, dill, and 1/2 teaspoon salt. Toss until well mixed. You can serve this right away or let it sit at room temperature for up to 1 hour.
