BEEF STROGANOFF

12 ounces egg noodles
2 tablespoons salted butter
2 tablespoons olive oil
1 pound sirloin steak, cut into small cubes
Salt and freshly ground black pepper
8 ounces cremini mushroom caps, halved
2 carrots, finely chopped
1/2 onion, finely chopped
1/2 cup brandy
2 1/4 cups beef stock
2 tablespoons cornstarch
1/4 cup sour cream
1 heaping teaspoon Dijon mustard
Chopped fresh parsley, for serving

Steps:

  • For the buttered egg noodles: Bring a large pot of water to a boil. Add the egg noodles and cook according to the package instructions. Drain and set aside.
  • For the beef stroganoff: Heat 1 tablespoon olive oil in a skillet over medium-high heat. Season the meat with salt and pepper. Add half the meat to the pan and brown it quickly. Remove the first batch and cook the rest of the meat. Remove and set aside with the first batch.
  • Add the remaining 1 tablespoon olive oil to the skillet and cook the mushrooms, carrots and onions until lightly browned. Turn off the heat and add the brandy and 2 cups of the stock. Turn the heat back on and reduce the liquid for 2 to 3 minutes. Mix the cornstarch with the remaining 1/4 cup stock, getting out all the lumps. Pour the slurry into the skillet and cook until the sauce thickens.
  • Turn off the heat. Stir in the sour cream, mustard and beef. Taste and adjust the seasoning with salt and pepper.
  • To finish the noodles, melt the butter in a skillet over medium heat. Add the cooked egg noodles and toss to heat through and coat with the butter.
  • Serve the stroganoff with the noodles, and sprinkle with the parsley.

1 small onion, diced
2 pounds beef steak, cubed or cut into 1/2-inch to 1-inch strips
4 cloves garlic, minced
1 teaspoon chopped fresh thyme
4 cups beef broth, divided
3 tablespoons Worcestershire sauce, or more to taste
3 cups chopped fresh mushrooms
1 (16 ounce) package egg noodles
1 (24 ounce) container sour cream
2 tablespoons cornstarch, or more as needed
salt and freshly ground black pepper to taste

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®), select Saute function, and add oil. Add onions to the hot oil and cook until soft and translucent, 2 to 3 minutes. Remove onions to a plate. Add beef to the pot and cook and stir until seared on all sides, 3 to 5 minutes. Mix in garlic and thyme and cook for 1 more minute. Pour in 1 cup beef broth to deglaze the pot, scraping off all the browned bits. Cancel Saute function.
  • Mix in cooked onions, remaining 3 cups beef broth, mushrooms, and Worcestershire sauce. Close and lock the lid. Select High pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, for 5 minutes. Release remaining pressure carefully using the quick-release method, about 5 minutes. Unlock and remove the lid. Stir in egg noodles and mix to combine.
  • Close and lock the lid. Select High pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 minutes for pressure to build.
  • Release pressure carefully using the quick-release method, about 5 minutes. Unlock and remove the lid. Stir in sour cream. To thicken the sauce (if too thin), transfer 1/4 cup broth mixture to a small bowl and mix with cornstarch; add back to pot, stirring slowly until combined. Season with salt and pepper.

Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
5 tablespoons unsalted butter
1 medium yellow onion, sliced
8 ounces white button mushrooms, quartered
7 ounces shiitakes, caps sliced (stems removed and discarded)
1 tablespoon chopped fresh thyme
1 clove garlic, minced
1/2 cup dry white wine
2 tablespoons all-purpose flour
3/4 cup sour cream
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth or beef stock
10 ounces medium or wide egg noodles
1/2 cup fresh flat-leaf parsley leaves, chopped
1 tablespoon chopped chives, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil.
  • Season the beef with 1 teaspoon salt and a generous amount of freshly ground black pepper. Heat the vegetable oil in a large skillet over medium-high heat. Add the beef and cook, untouched, until starting to turn brown in some spots, about 1 minute. Use tongs to flip the pieces and continue cooking until deep golden brown but still undercooked in the center, about 1 minute (the beef will finish cooking in the sauce). Transfer the beef to a bowl and return the skillet to the stovetop on medium-high.
  • Add 1 tablespoon butter to the skillet. Add 2 tablespoons butter, the button mushrooms, shiitakes and thyme and cook, stirring occasionally scraping up any browned bits, until the mushrooms have released some liquid and are starting to crisp up, 5 to 6 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Pour in the wine and bring to a boil. Reduce the heat to medium and simmer until evaporated, about 5 minutes.
  • Sprinkle the flour over the vegetables and stir until incorporated. Fold in the sour cream, Dijon, Worcestershire sauce and 1/4 teaspoon freshly ground black pepper. Pour in the beef broth and stir until smooth. Bring to a simmer and cook, stirring occasionally, until the sauce has thickened, about 5 minutes.
  • Meanwhile, while the sauce reduces, cook the egg noodles according to the package directions for al dente. Drain and toss with the remaining 2 tablespoons butter, the chopped parsley and chives.
  • Fold the beef and any accumulated juices from the bowl into the sauce and cook, stirring occasionally, until the beef is cooked through but still slightly pink on the inside, about 1 minute.
  • Divide the noodles between 4 bowls and top with the sauce and beef. Sprinkle with more chives, if desired.

1 1/2 pounds sirloin, cut into 1-inch pieces

1/2 teaspoon fresh thyme
2 cups low-sodium beef stock, hot
1/4 cup dry white wine
1/2 cup heavy cream

Steps:

  • Bring a pot of salted water to a boil. Add the noodles and cook according to the package directions. Drain and toss with 2 tablespoons of the butter and 1 tablespoon of the parsley. Keep warm.
  • Meanwhile, melt the remaining 2 tablespoons butter over medium-high heat in an extra-large skillet. Add the beef, season with the paprika and some salt and pepper and cook until browned on all sides but still pink in the middle, 2 to 3 minutes. Remove from the skillet and set aside.
  • Add the mushrooms, onions and thyme to the skillet and season with salt and pepper. Cook until beginning to soften, 2 to 3 minutes. Add the hot stock and wine and cook for a minute until it reduces. Lower the heat and stir in the heavy cream and mustard. Add the beef back in, along with any juices on the plate. Cook for 1 minute so the beef is heated through. Turn off the heat and stir in the sour cream. Taste and adjust the seasoning.
  • Serve over the buttered noodles and garnish with the remaining parsley.

Here is a delicious rendition that pays tribute to the "gourmet" chafing-dish dinner party. Now, as then, beef stroganoff is a good thing to cook in front of a small crowd.

6 tablespoons (3/4 stick) butter

1 cup canned beef broth
2 tablespoons Cognac
3/4 cup crème fraîche or whipping cream

  • Pat meat dry with paper towels. Sprinkle with salt and pepper. Heat oil in heavy large skillet over high heat until very hot. Working in batches, add meat in single layer and cook just until brown on outside, about 1 minute per side. Transfer to rimmed baking sheet.
  • Melt 2 tablespoons butter in same skillet over medium-high heat. Add chopped shallots and sauté until tender, scraping up browned bits, about 2 minutes. Add button mushrooms. Sprinkle with pepper and sauté until liquid evaporates, about 12 minutes. Add beef broth, then Cognac. Simmer until liquid thickens and just coats mushrooms, about 14 minutes. Stir in crème fraîche and Dijon mustard. Add meat and any accumulated juices from baking sheet. Simmer over medium-low heat until meat is heated through but still medium-rare, about 2 minutes. Stir in chopped dill. Season to taste with salt and pepper.
  • Meanwhile, cook noodles in large pot of boiling salted water until tender, about 8 minutes. Drain. Transfer to bowl. Add remaining 4 tablespoons butter and toss to coat. Season with salt and pepper. Divide noodles among plates. Top with beef and sauce. Sprinkle generously with paprika.

My Aunt Eva's parents came from Sweden early in the 20th century. She had learned many of her mother's recipes and was a fabulous and adventurous cook. I was fortunate to have inherited all her treasured cookbooks and also fortunate that she took time to teach a newlywed to make this version of stroganoff. The only difference in mine is that I use my own homemade glace de viande rather than the beef broth as in the recipe. This is a very, very basic recipe. 4 tablespoons bacon drippings
2 lbs round steaks, cut in 1 inch cubes
1 medium white onion, chopped
2 tablespoons flour
4 cups beef broth
24 ounces sour cream, not low-fat and at room temperature

Steps:

  • Melt dripping in a pan that is large and heavy enough to hold at least 6 quarts of liquid and meat at a simmer for 4 hours.
  • When dripping is at a "sizzle", add the cubed beef in small enough batches to thoroughly brown the cubes. Remove as soon as they start to "bleed-out.".
  • When all beef is browned, add onion, stirring well until translucent but not too soft.
  • Reduce heat to medium low and return the beef to the pot when your pan has cooled a bit. (Keep stirring while the pan cools, or just take the onions out.).
  • Sprinkle flour over the cubes and stir well, scraping the bottom of the pot, until the flour is well-distributed.
  • With heat still at medium low, return onions, if you removed them earlier.
  • Gradually add the liquid, stirring and scraping the pot all the time to incorporate everything together.
  • Turn heat up to med-high and bring contents to a slow boil.
  • Reduce heat to simmer, cover and simmer, checking for liquid level and stirring occasionally. Add more broth if the liquid is getting too thick. You want enough liquid to make sure your cubes get tender.
  • After about 4 hours, the beef should be tender and your liquid getting harder to thin. That's a good thing. It's hard to judge just exactly what the consistency should be without some experience. Keep at it, everyone seems to end up with a stroganoff that is runny or really thick at one time or another.
  • Remove the pot from the heat, allow to cool just enough that the sour cream won't break when you put it inches.
  • If you aren't sure about this, put in a cereal spoonful and see if it curdles or separates into curds and whey. If it does, it's too hot.
  • When the beef mixture has cooled enough, gently fold in the sour cream, stirring slowly and steady until it incorporates completely with the rest of the ingredients.
  • Serve immediately with egg noodles or on rice, if you prefer.

This is a recipe for people who do not have a lot of time on their hands and need a quick and easy recipe.

  • Add Knob of butter and Olive Oil to a pan. Add onions and saute for 5 minutes until softened. Add garlic cloves and sage and cook until softened.
  • Add red wine and paprika and reduce slightly. Add frozen mushrooms now. Add white pepper and salt.
  • Add the Beef and cook until browned slightly. Add fresh mushrooms until softened.
  • Add parsley, honey and black pepper
  • Add Double Cream and bring to the boil slightly. Taste and check if anymore paprika or parlsey is needed.
  • Add Arrowroot if needed, only use a little and stir till thickens and add more if needed. Make Sure the liquid is not cooking or boiling. If the sauce becomes too thick add a little extra double cream or water.
  • Serve with Boiled Rice, Roast Potatoes, Noodles or Pasta.
  • You can use Chicken Breast or Pork instead of Beef, if needed.
