4 medium apples
4 wooden pop sticksor decorative lollipop sticks
2 cups sugar
1 cup water
2/3 cup light corn syrup
1 tablespoon white food coloring
1 teaspoon orange food coloring

Steps:

  • Wash and thoroughly dry apples; remove stems. Insert pop sticks into apples. Place on a waxed paper-lined baking sheet; set aside., In a large heavy saucepan, combine sugar, water and corn syrup. Cook and stir over medium heat until sugar is dissolved. Stir in food colorings. Bring to a boil. Cook, without stirring, until a candy thermometer reads 290° (soft-crack stage)., Remove from heat. Working quickly, dip apples into hot sugar mixture to completely coat. Place on prepared baking sheet; let stand until set.

Surprisingly spicy cinnamon candy apples - the perfect Halloween prank.All my life I've loved Halloween and when I was a kid, nothing, and I mean nothing, was better than trick-or-treating. I'll never forget the night while trying to peer through the eyeholes in my skeleton mask, I fished out what appeared to be a red jawbreaker. Feeling adventurous, I popped it in and commenced sucking. At first, it was all cinnamon-y goodness, but then, suddenly, the bottom dropped out and there was a horrible, flesh-searing pain, as though someone were putting a cigarette out on my tongue. And yet...and yet...I kinda liked it. That was my first Atomic Fireball. I've attempted to replicate that experience in what appear to be harmless candy apples. You just can't make these candy apples without cinnamon oil, which is conveniently available at many a megamart, as well as the internet. Both U.S. standard and metric measurements are listed, but for consistent results, go metric.This recipe first appeared in Season 14 of Good Eats.

6 small apples, such as Pink Lady, Gala or McIntosh, at room temperature
2 cups sugar
1 1/3 cups light corn syrup
2/3 cup water
1 teaspoon cayenne pepper
1/2 teaspoon cinnamon oil
15 to 20 drops red liquid food coloring

Steps:

  • Put 3 inches of water in a 3 1/2-quart saucepan and bring to a boil over high heat. Insert the narrow end of a chopstick into the bottom blossom end of each apple. Dip the apples, 1 at a time, into the boiling water for 20 seconds to remove the wax coating. Wipe dry with a paper towel. Transfer apples to a half-sheet pan lined with parchment paper or a silicone baking mat and set aside.
  • Combine the sugar, corn syrup, and water in a 2-quart saucepan and set over medium heat. Cover and bring it to a boil, 4 to 6 minutes. Remove the lid and continue cooking the syrup until it reaches 300ºF on a digital instant-read thermometer, approximately 15 minutes. When the syrup reaches temperature, take the pot off the heat and remove the thermometer. Add the cayenne, cinnamon oil, and food coloring, stirring thoroughly to combine. Cool until the bubbles calm and begin to subside, about 3 minutes.
  • Dip each apple in the warm syrup, turning slowly to coat. Continue to turn, allowing the excess to drip back into the pot. Cool the apples completely on the prepared half-sheet pan. Wrap individually in waxed paper and plastic wrap, or store for 2 to 3 days in an airtight container.

Serve these easy candy apples at a summer fête, on Bonfire Night, Halloween at a kids' birthday party. Experiment with fun and vibrant colours

8 red apples
400g caster sugar
1 tsp lemon juice
4 tbsp golden syrup
a few drops red food colouring (optional)
8 sticks , chopsticks or lolly sticks

Steps:

  • Remove the stalks from the apples, then put them in a heatproof bowl and pour over boiling water from the kettle to cover them and leave for 3-4 mins. Remove with a slotted spoon and pat dry. (This removes the protective wax from the skin and makes the toffee stick to the apples better.)
  • Push the sharpest end of each stick into the stalk-end of each apple, making sure it's firmly wedged in. Put a large piece of baking parchment on a board.
  • Tip the sugar into a large saucepan, add the lemon juice and 100ml water. Bring to a simmer and cook until the sugar has dissolved. Swirl the pan gently to move the sugar around, but don't stir. Add the golden syrup and simmer the mixture (be careful it doesn't boil over) until it reaches 'hard crack' stage or 150C on a sugar thermometer. If you don't have a thermometer, test the toffee by dropping a small amount into cold water. It should harden instantly and, when removed, be brittle. If it's soft, continue to boil. When it's ready, drip in some food colouring, if you like, and swirl to combine. Turn off the heat.
  • Working quickly, dip each apple into the toffee, tipping the pan to cover it fully. Lift out and allow any excess to drip off back into the pan before placing on the baking parchment. Repeat with the remaining apples. Gently heat the toffee again, if you need to. Leave to set. Best eaten on the same day.
