Time 45m

Yield 6

Number Of Ingredients 20

1 1/2 pounds fresh asparagus, cut into 1/2-inch pieces
2 tablespoons extra-virgin olive oil
1 tablespoon unsalted butter
1 tablespoon minced garlic
1 cup diced onion
1/2 cup diced celery
1 carton (32 oz) Progresso™ reduced sodium chicken broth (4 cups)
2 teaspoons finely chopped fresh thyme leaves
2 cups loosely packed spinach
2 teaspoons freshly grated lemon peel
1 cup heavy whipping cream or buttermilk (if using buttermilk, cut the lemon peel in half)
1/2 teaspoon gray sea salt
1/4 teaspoon freshly ground black pepper
2 tablespoons butter
1/2 cup Progresso™ Italian style panko crispy bread crumbs
2 tablespoons chopped fresh Italian (flat-leaf) parsley
Grated peel of 1 medium orange
1 loaf crusty French or Italian bread, sliced
1/4 cup butter, softened
1 1b Brie cheese, sliced

Steps:

  • Snap off ends from asparagus and peel any tough skin from the stalks; set aside.
  • In 3-quart saucepan, heat oil and 1 tablespoon unsalted butter over medium-high heat until hot. Add garlic to oil and butter; cook until light brown. Add onion and celery; reduce heat to medium and cook 10 minutes, stirring occasionally, until vegetables are tender.
  • Meanwhile, make the gremolata. In 8-inch skillet, melt 2 tablespoons butter over medium heat. Add bread crumbs to butter; cook until lightly browned, stirring frequently; transfer to small bowl. Stir in the parsley and orange peel; set aside.
  • In saucepan, add asparagus, broth and thyme to vegetable mixture. Heat to boiling; cook about 3 minutes or until asparagus is tender. Stir in spinach and lemon peel (the spinach will wilt in the soup). Pour soup into blender in small batches; cover and puree each batch until smooth. (The soup can be made ahead to this point, cooled, covered, and refrigerated for up to 1 day or frozen for up to 1 month.)
  • Return soup to saucepan and heat over low heat until hot. Stir in the whipping cream, salt and pepper. Ladle into warm bowls. Sprinkle soup with 1 teaspoon gremolata. Pass the remaining gremolata at the table.
  • Set oven control to broil. To make bruschetta, butter bread slices on both sides and top each with several slices of brie (2 to 3 oz per bread slice). Broil with tops about 5 inches from heat until cheese is bubbly and slightly browned.

This easy bruschetta recipe from Food Network's Ree Drummond makes a great appetizer or tasty first course for a larger meal.

Provided by Ree Drummond : Food Network

Categories     appetizer

Time 1h30m

Yield 12 servings

Number Of Ingredients 9

4 tablespoons olive oil
5 cloves garlic, finely minced
1 pint red grape tomatoes, halved lengthwise
1 whole baguette or crusty loaf
1 pint yellow grape tomatoes, halved lengthwise
1 tablespoon balsamic vinegar
16 whole fresh basil leaves, plus more as needed, chiffonade
Salt and freshly ground black pepper
1 stick butter

Steps:

  • In a small skillet, heat the oil over medium-high heat. Add the garlic and stir, lightly frying for about a minute, removing before the garlic gets too brown (it can be golden). Pour the garlic and oil into a mixing bowl and allow to cool slightly.
  • Add the red and yellow tomatoes, balsamic and basil to the bowl. Sprinkle with salt and pepper. Toss to combine, and then taste and add more basil if needed, and more salt if needed (don't over salt, though!) Cover and refrigerate for an hour or two if you have the time.
  • Cut the baguette into diagonal slices to allow for the most surface area possible. Melt 4 tablespoons of the butter in a large skillet and grill half the bread on both sides, making sure they're nice and buttery. Cook until golden brown on both sides. Repeat with the remaining 4 tablespoons butter and the other half of the bread.
  • To serve, give the tomato mixture a final stir, and then spoon generously over the slices of bread. Serve on a big platter as a first course or appetizer.

TOMATO SOUP IN A BREAD BOWL

Tomato Soup in a Bread Bowl image

Provided by Food Network Kitchen

Time 40m

Yield 4 servings

Number Of Ingredients 13

5 tablespoons extra-virgin olive oil, plus more for drizzling
1 large onion, sliced
5 large cloves garlic, minced
1 1/2 teaspoons dried oregano
Kosher salt
1 28-ounce can whole peeled San Marzano tomatoes
2 cups cubed peeled butternut squash (about 10 ounces)
4 cups low-sodium chicken broth
2 tablespoons shredded parmesan cheese, plus a small piece of rind (optional)
Freshly ground pepper
4 8-ounce sourdough bread boules, top ½ inch sliced off, insides hollowed out to make bowls
1 cup shredded mozzarella cheese (about 4 ounces)
1/2 cup heavy cream

Steps:

  • Preheat the oven to 450 degrees F. Heat 2 tablespoons olive oil in a large pot over medium-high heat. Stir in the onion and cook until softened, about 5 minutes. Stir in 3 minced garlic cloves, 1/2 teaspoon oregano and a pinch of salt; cook until softened, about 30 seconds. Add 1 cup water, the tomatoes, squash, chicken broth, parmesan rind, 3/4 teaspoon salt and a few grinds of pepper. Bring to a boil, then reduce the heat and simmer until the squash is very tender, 15 to 20 minutes.
  • Meanwhile, combine the remaining 3 tablespoons olive oil, 2 garlic cloves, 1 teaspoon oregano and a pinch of salt in a small bowl. Brush inside the bread bowls and place on a baking sheet. Cut the bread tops into cubes and add to the baking sheet. Bake until toasted, 8 to 10 minutes. Sprinkle the mozzarella around the edges of the bread bowls and on top of the bread cubes. Continue baking until the cheese starts melting, 2 to 3 minutes.
  • Stir the heavy cream into the soup, bring to a simmer and remove from the heat. Discard the parmesan rind. Working in batches, puree the soup in a blender. Serve the soup in the bread bowls. Top with the cheesy croutons and parmesan and drizzle with olive oil.

SUNNY'S EASY BRUSCHETTA BURGER

Sunny's Easy Bruschetta Burger image

Provided by Sunny Anderson

Categories     main-dish

Time 1h20m

Yield 4 servings

Number Of Ingredients 11

1 1/3 pounds ground chuck
1/4 cup grated red onion (grated on a box grater)
1/4 cup chopped fresh oregano
1 1/2 teaspoons kosher salt
Freshly ground black pepper
1/4 cup olive oil
2 ounces shaved Parmesan
2 loaves frozen garlic bread (or 8 pieces frozen Texas toast garlic bread), cooked as directed, cut into 8 bun-size circles (see Cook's Note)
4 Roma tomatoes, seeded and chopped
1/2 cup torn fresh basil
Balsamic syrup, to taste

Steps:

  • In a large bowl, add the ground chuck, onion and oregano. Sprinkle the salt evenly over the bowl and add a hefty amount of black pepper. Gently mix, divide into 4 balls and allow to dry-marinate at room temperature for 1 hour.
  • Preheat a gas grill or large griddle on high.
  • Divide each ball in half to create 8 smaller balls, then press each into a thin flat patty between 1/4 and 1/8 inch thick. The easiest way to do this is between 2 pieces of parchment paper, using a glass or rolling pin. Brush the top side of each patty with the olive oil. Add the patties oiled-side down to the grill and cook until the edges are golden, about 5 minutes. Top half of the patties with the Parmesan and cover each with another patty, creating 4 sandwiched patties. Turn off the heat and cover with aluminum foil or an upside-down metal bowl to tent for just 2 minutes.
  • Place the patties on a garlic bread round (crust-side down) and top each with some tomatoes and basil and a drizzle of balsamic syrup. Top with another garlic bread round (crust-side up) and serve.
