1 cup penne pasta
2 tablespoons olive oil
2 cloves garlic, minced
¼ cup onion, chopped
½ cup white wine
¼ teaspoon crushed red pepper flakes
1 tablespoon butter
10 spears asparagus, cut into 1-inch pieces
18 peeled and deveined large shrimp (21 to 25 per lb)
1 tablespoon lemon juice
salt and pepper to taste
2 tablespoons chopped fresh flat-leaf parsley
¼ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook until al dente, 8 to 10 minutes; drain.
  • Meanwhile, heat the olive oil in a large skillet over medium heat. Stir in the garlic and onion, and cook until the onion has softened and turned translucent, about 5 minutes. Pour in the white wine, and simmer for 2 minutes. Stir in the red pepper flakes, butter, and asparagus; cook until the asparagus is just tender, about 3 minutes. Add the shrimp and lemon juice, continue cooking until the shrimp have turned pink and are no longer translucent in the center. Season to taste with salt and pepper.
  • Toss the cooked penne pasta with the shrimp and asparagus mixture. Sprinkle with parsley and Parmesan cheese to garnish.

1/2 cup dry white wine
1/2 cup chicken broth

1 pound penne pasta cooked al dente, drained
salt and pepper, to taste
4 tablespoons pine nuts, toasted
shredded mozzarella or parmesan cheese, if desired

Steps:

  • Heat half of the olive oil in a deep skillet over medium heat. Add the sausage and cook, stirring frequently, until browned but not cooked through. Remove the sausage with a slotted spoon and keep warm. Add the garlic to the skillet. Cook, stirring constantly, for 1 minute. Add the shrimp to the skillet. Cook, tossing the shrimp frequently, until the shrimp turn opaque, about 4 minutes. Remove the shrimp from the pan and set aside. Add the wine and chicken broth to the skillet and turn the heat to medium-high. Bring to a boil then cook, scraping up any cooked on bits, until the liquid is reduced by half. Add the shrimp, sausage, basil, and cooked pasta to the skillet. Mix well and stir in the remaining olive oil. Season to taste with salt and pepper. 1 clove garlic, or more to taste
1/4 cup pine nuts
1/4 cup olive oil, or more as desired

Juice of 1/2 lemon, or to taste

Steps:

  • Bring a large pot of water to a boil and salt it. Add the asparagus and cook until fully tender but not mushy, 8 to 10 minutes. Drain well, reserving some of the cooking liquid, and let the asparagus cool slightly.
  • Transfer the asparagus to a food processor and add the garlic, pine nuts, 2 tablespoons of the oil, Parmesan, a pinch of salt and a couple of tablespoons of the cooking liquid. 1 tablespoon olive oil
3 leeks, sliced
2 shallots, minced
1 pound small shrimp
Juice of 1/2 lemon
3 cups chicken stock
2 cups water
Coarse salt and freshly ground pepper to taste
2 tablespoons chopped fresh basil leaves

Steps:

  • Cut the tough stalk ends off the asparagus and discard them. Cut the asparagus into one-inch pieces.
  • In a heavy saucepan, melt the butter with the oil and cook the leeks and shallots until they are soft. Add shrimp, in their shells, and cook until they are pink but still juicy (do not overcook them). Remove the shrimp with a slotted spoon, cool, peel and devein them. Sprinkle with lemon juice and set the shrimp aside.
  • Add the chicken stock and water with the asparagus and simmer it for 15 minutes or until it is tender. Puree the mixture in a blender and return it to the saucepan. Season to taste with salt and pepper and heat through over moderate heat.
  • In a separate pan, warm the shrimp. Pour soup into six bowls and add shrimp to each serving and sprinkle with basil leaves. Serve hot.

1/2 cup garlic & herb salad dressing mix, prepared and divided
1 lb cleaned medium shrimp

Steps:

  • Cook asparagus in 1 tablespoons of the prepared dressing in large nonstick skillet on medium heat 3 minutes, stirring frequently.

1 lb. rigatoni pasta
1 lb fresh asparagus
3/4 cup dry white wine
1/4 tsp saffron, crumbled
1 1/2 lbs uncooked shrimp,peeled
2 Tbl extra virgin olive oil
1/2 cup onion,finely chopped
3 cloves garlic finely chopped
2 cups heavy cream
1/4 cup chicken broth
1/4 cup chopped chives, garnish

Steps:

  • In a small bowl, stir together the white wine and saffron. Let stand for 10 minutes. Trim asparagus, cutting into bite sized pieces. Set aside. Cook pasta according to package directions adding the asparagus to the pasta water during the last few minutes of cooking time. Drain all. Heat oil in a large skillet, saute the shrimp until they are pink. Remove shrimp from pan and set shrimp aside. Add onions and garlic to the saute pan, saute 2 minutes. Add wine/saffron mixture and chicken broth to pan, bring to boil and cook until most of the liquid is absorbed, about 4 minutes. Add the cream, heat to boil, lower to simmer for a few minutes until thickened, stirring constantly. Add the pasta, asparagus and shrimp to the pan. Toss gently and heat through. Sprinkle with the fresh chives before serving.

Recently at the coast, my DH and I enjoyed a romantic candlelit dinner and I was in heaven when I ordered this dish. I emailed the chef when I returned home and to my surprise, the restaurant emailed me the recipe. I wanted to get it on here before i lost it. I enjoyed this so much I plan to serve it to my family and friends for dinner parties. Although the chef emailed me and said they make this in huge quantities, the ingredients would have to be adjusted to the number of people served. So here is my version.... of that lovely dish!

1 lb fresh asparagus, trimmed and cut into 1-inch pieces and steamed
3/4 cup dry white wine

1 1/2 lbs medium raw shrimp, peeled and deveined
2 tablespoons olive oil
1/4 cup shallot, finely chopped
2 cups whipping cream
2 teaspoons chicken bouillon
1/4 cup fresh chives, minced

Steps:

  • While cooking pasta to al dente, In a 2 cup glass measuring cup combine wine and saffron; let stand 15 minutes.
  • In a large skillet, over medium heat, cook and stir shrimp in oil until shrimp are pink. Remove from skillet.
  • In same skillet add wine mixture and shallots. Brink to a boil; continue boiling rapidly until most of the liquid is absorbed. (about 4 minutes)
  • Stir in cream and bouillon. Bring to a boil and boil 5 minutes or until thickened. Stirring constantly. Stir in pasta, asparagus and shrimp; heat through. Top with chives.

It could be because my homemade sauce is so flippin' delicious, lol ;)! Or it could just be a good recipe. That's probably it. I use soymilk to keep it dairy-free, but I imagine the dairy version is just as good (probably better if you prefer dairy!).

1 tablespoon olive oil
2 shallots, finely chopped (you can substitute a clove of garlic and some chopped onion if you don't have shallots)

2 lbs thin asparagus, trimmed and cut into 1/2 in. pieces
1/2 teaspoon dried tarragon
1/2 teaspoon salt

Steps:

  • Bring large pot of lightly salted water to a boil. Add pasta; stir to prevent sticking. Cook pasta until just tender, according to package directions, about 10 minutes. Drain well.
  • Meanwhile, in large skillet, heat oil over medium heat. Add shallots and cook, stirring occasionally, until softened, 6 to 7 minutes.
  • Stir in tomato sauce and half-and-half or soymilk, increase heat to high and bring to a boil. Add asparagus and tarragon and reduce heat to low. Partially cover and cook until asparagus are tender and sauce is slightly thickened, 10 to 12 minutes.
  • Add pasta to asparagus mixture along with salt and pepper. Toss until well coated. Serve hot.

  • In sm bowl, combine wine + saffron + let steep for 20 min. In lg skillet cook asparagus in 1 inch of salted water till tender. Drain. Heat oil in skillet, add shrimp + cook til done but not overcooked. Transfer shrimp to plate. Meanwhile cook penne, drain + put in lg bowl. Add shallots + saffron wine to skillet + bring to boil until almost all liquid evaporates. Stir in cream + chicken stock + simmer over med heat until reduced by half (7 min).
