Steps:

  • Preheat oven to 350°. In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes or until crisp-tender. Drain., Arrange asparagus in a greased 13x9-in. baking dish. Drizzle with butter; sprinkle with Parmesan cheese and pepper. Bake, uncovered, for 10-15 minutes or until cheese is melted.

2 bunches medium asparagus (about 2 pounds), ends trimmed
10 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 large egg in its shell
1 small clove garlic
Juice of 1 lemon
2 tablespoons freshly grated parmesan cheese, plus more for topping
1 teaspoon dijon mustard
1/2 teaspoon black peppercorns, crushed

Steps:

  • Preheat the broiler. Toss the asparagus with 2 tablespoons olive oil, 1/2 teaspoon salt and a few grinds of pepper on a baking sheet; spread in a single layer. Broil, stirring occasionally, until tender, 4 to 6 minutes. Let cool slightly.
  • Bring a saucepan of water to a boil. Add the egg and reduce the heat; simmer 5 minutes. Drain and transfer to a bowl of ice water.
  • Peel the egg and transfer to a blender. Add the garlic, lemon juice, parmesan and mustard and puree until smooth. With the machine running, drizzle in the remaining 8 tablespoons olive oil and blend until thick and creamy. Stir in the crushed peppercorns. Spoon the lemon-pepper sauce over the asparagus and top with more parmesan.

All-purpose flour, for dusting
1 large egg, well beaten
10 medium asparagus spears, tough ends trimmed, shaved into thin strips using a vegetable peeler
2 teaspoons extra-virgin olive oil
Coarse salt and freshly ground pepper
1/2 cup finely grated Parmigiano-Reggiano cheese

Steps:

  • Preheat oven to 400 degrees. Roll out dough on a lightly floured work surface, just until creases are smooth. Trim dough to a 10-inch square. Lightly score a 1/2-inch border around dough. Brush off excess flour and transfer dough to a parchment-lined baking sheet. Freeze 15 minutes.
  • Brush border of dough with the beaten egg. Bake until puffed and starting to brown, 10 to 12 minutes. Toss asparagus with the oil, and season with salt and pepper.
  • Remove tart shell from oven and press down on the center with a spatula. Arrange asparagus on top. Bake until asparagus is crisp-tender, about 8 minutes. Remove from oven and sprinkle cheese evenly on top. Bake until cheese is melted, about 4 minutes more. Let cool on a wire rack 5 minutes before slicing into squares.

1 bunch asparagus
142ml tub double cream
2 garlic cloves , peeled, but left whole
50g parmesan , half grated, half shaved
250g tagliatelle

Steps:

  • To prepare the asparagus, cut off and discard the woody ends, then neatly cut the tips away from the stalks. Keep the tips and stalks separate. In a small saucepan bring the cream and garlic to the boil. Take off the heat, remove the garlic, then set the pan aside.
  • Cook the stalks in boiling salted water for about 4-5 mins until tender, drain, then tip into the cream with the grated parmesan. Blitz with a hand blender until smooth.
  • Cook the pasta according to pack instructions, then throw in the tips 2 mins before the end of cooking time. Gently reheat the cream, drain pasta, then tip into a bowl with the cream. Toss, divide into pasta bowls, top with parmesan shavings and serve.

Steps:

  • Cut away the lower 4th of the asparagus and peel the stalk. This way the entire spear is edible will cook more quickly and at the same rate.
  • Bring 2 inches of water to a boil in a casserole or skillet large enough to accommodate the asparagus in one single flat layer.
  • Add the asparagus to the water, cover and quickly bring the water back to a boil. Uncover the skillet and simmer for 4 to 5 minutes or until the asparagus are just tender. They should be just cooked through but still with some crunch left it.
  • Serving suggestions: For 1 pound asparagus, melt 4 tablespoons butter and mash in 2 hard boiled eggs. Season to taste with salt, pepper and snipped fresh chives. Dip warm asparagus into the mixture and accompany with bread.
  • Serve asparagus at room temperature, either plain or dressed with vinaigrette and accompanied with goat cheese bruschetta.

1 onion, finely chopped

115 g parma ham, cut into thin strips
1 tablespoon cornflour
175 ml vegetable stock
70 ml dry white wine
1 tablespoon light soy sauce
2 teaspoons Dijon mustard
salt and pepper
rosemary sprig, to garnish

Steps:

  • Trim the woody ends from the asparagus and cut the stems into 1 cm lengths.
  • In a saucepan, heat the oil over a high heat and cook the asparagus, onion and galric for 5 minutes.
  • Reduce the heat, add the ham and cook for 1 minutes.
  • In a bowl, blend the cornflour, stock, wine , soy sauce, mustard and salt and pepper and add to the pan.
  • Bring to the boil, stirring and continue to cook, stirring until the mixture thickens.
  • Simmer for 5 minutes.
  • Garnish with rosemary sprigs and serve with the freshly cooked linguine.

This is a recipe I found in a cooking magazine years ago that has become a real family favorite. Comfort food at it's best. You can substitute leftover chicken for parma ham or leave out the meat and go vegetarian (maybe adding some mushrooms).

1 tablespoon olive oil
1 onion (chopped finely)
1 cup arborio rice (Risotto)
3 cups chicken stock
1 bunch fresh asparagus (cut into 1-inch pieces)
6 slices parma ham (torn into bite size pieces)
1 teaspoon parsley (finely chopped)
50 g philadelphia cheese
grated parmesan cheese (optional)

Steps:

  • Heat Olive Oil in a large saucepan and saute onion until soft.
  • Add rice and continue to cook for 2 minutes.
  • Add 1/2 cup stock and stir until absorbed. Continue adding stock in 1/2 cup increments waiting until stock is absorbed before adding the next 1/2 cup.
  • After adding the last 1/2 cup add the asparagus pieces and cook until stock absorbed.
  • Stir in Philadelphia until melted and then parma ham until heated through and finally the parsley.
  • Serve sprinkled with parmesan cheese.

8 thin slices proscuitto di Parma (about 4 ounces total)
3 ounces Pecorino Pepato,** finely grated

*Unfiltered olive oil, which has a pronounced olive flavor, can contain small particles of olive skin and may appear cloudy. It can be purchased at specialty shops or williams-sonoma.com.
**Pecorina Pepato is an aged sheep milk's cheese flavored with whole black peppercorns. It is available through murrayscheese.com.
Special Equipment
nonstick muffin pan with 12 (1/3-cup) cups

Steps:

  • Have ready large bowl ice water. In medium saucepan over high heat, bring salted water to boil. Add asparagus and boil, uncovered, until crisp-tender, 2 to 3 minutes. Drain, then immediately plunge spears into ice water to stop cooking. Drain again and pat dry.
  • Preheat grill to moderate heat.
  • Transfer asparagus to large rimmed baking sheet and drizzle with 4 tablespoons olive oil. Toss to coat. Grill, in batches if necessary, until lightly charred, 8 to 10 minutes. Keep warm.
  • Arrange oven rack in middle position and preheat oven to 400°F. Lightly oil muffin pan.
  • Crack one egg into each muffin cup (there will be 4 empty cups). Place muffin pan in large roasting pan and add enough hot water to reach halfway up the sides of muffin pan. Bake until eggs are set but yolks are still runny, about 7 to 8 minutes.
  • While eggs cook, arrange 4 asparagus spears in fan pattern on each of 8 plates. Sprinkle each plate with 1/2 teaspoon salt and 1/4 teaspoon pepper, then drizzle each with 1 teaspoon lemon juice. Drape 1 slice prosciutto atop asparagus on each plate.
  • Using small offset spatula, carefully remove eggs from pan and place 1 atop each slice prosciutto. Drizzle with remaining 4 tablespoons olive oil and sprinkle with Pecorino Pepata and parsley.

500g bunch asparagus , each spear trimmed and cut into 3 pieces
2 tbsp olive oil
6slices pancetta , snipped into pieces
200g cherry tomatoes , halved
good handful basil leaves
grated parmesan , to serve

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Boil the pasta in salted water. Put the asparagus into a roasting tin, then toss with the oil and pancetta. Roast for 10 mins until the pancetta starts to crisp up, stir in the tomatoes, then cook for 5 mins more.
  • Drain the pasta, then add to the roasting tin along with the torn basil leaves and seasoning. Stir well until everything is glistening, then serve in bowls, scattered with grated Parmesan.

1 lb fresh asparagus
1 tablespoon extra virgin olive oil
1 large yellow onion, diced
1 medium bay leaf
1 pinch salt
1/2 teaspoon red pepper flakes
1 cup dried cranberry beans
4 cups chicken stock
1/2 lb parma ham, sliced 1/16-inch thick

Steps:

  • .Preheat oven to 450*. Place ham slices on a baking sheet and cook in the oven until crisp, about 5 minutes. Remove from the oven and drain immediately on kitchen towels. While the ham is still warm, crumble ito a bowl. Set aside.
  • Cut the tips from the asparagus and reserve the stalks for another use, such as soup. Boil a quart of salted water in a heavy pot. Drop in the asparagus tips and allow the water to return to a boil. Blanch the asparagus for 3 minutes. Remove the pot from the heat, drain, then shick the asparagus in iced water. Drain and set aside.
  • Heat the oil in a heavy saucepan over high heat. Add the onion and saute until soft, about 3 minutes. Add the bay leaf, salt, red pepper flakes, beans and stock and bring to a rolling boil. Reduce the heat to a simmer, cover, and cook until the beans are tender, approximately 45 minutes.
  • Remove pan from heat and drain. While the beans are still warm, add the asparagus and toss with vinaigrette.
  • Divide the dressed cranberry beans and asparagus among 4 plates and top each portion with crumbled ham crisps. Serve immediately while salad is still warm or allow to marinate in the refridgerator. (Can be divided into six portions as an apetizer.).

16 fresh asparagus, peeled and boiled al dente
16 slices parma ham, thinly sliced (or Serrano ham)
4 ounces blue cheese
1 small onion, finely diced
1/2 cup sherry wine
1 tablespoon creme fraiche
2 romaine lettuce hearts (to garnish)
salt and pepper

Steps:

  • Heat a pan to medium high heat.
  • Wrap each asparagus with one piece of ham.
  • Add a bit of oil to the pan and fry each asparagus until the ham is golden brown.
  • You may have to do two batches, keep the first batch warm in the oven.
  • Put the second batch in the oven and throw in the onions over medium high heat and cook them a couple minutes until golden.
  • Deglaze the lot with about 1/4 - 1/2 cup good dry sherry scraping up all the goodness on the bottom then let it reduce.
  • Add the cream, until very warm, then throw in the cheese until just melted.
  • Salt and pepper it to taste and serve immediately drizzled over the asparagus and lettuce.
