SPRING ASPARAGUS TART

Spring Asparagus Tart image

Provided by Food Network Kitchen

Time 55m

Yield 6 to 8 servings

Number Of Ingredients 12

1 tablespoon all-purpose flour, plus more for dusting
1 sheet frozen puff pastry, thawed (a 9 1/2- by 9-inch sheet from a 17.3-ounce package)
1 cup mascarpone
1 1/2 teaspoons kosher salt
1 large egg, beaten
1 lemon, zest finely grated (about 1 tablespoon)
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh tarragon
1 pound pencil asparagus, woody bottoms trimmed off
1 tablespoon olive oil
Freshly ground black pepper
Lightly dressed greens, for serving

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Lightly flour the work surface and roll out the puff pastry to a 9- by 12-inch even rectangle. Transfer to the prepared baking sheet. Combine the mascarpone, 1 1/4 teaspoons of the salt, the flour, egg and lemon zest, and then fold in the chives and tarragon. Spread over the puff pastry, leaving a 3/4-inch border. Make small cuts around the border about 1 inch apart with the tip of a paring knife.
  • Toss the asparagus with the olive oil in a bowl. Lay half of the asparagus in a neat row across the surface of the tart so the tips meet the edge. Do the same in the opposite direction with the remaining asparagus. Season with the remaining 1/4 teaspoon salt and some pepper. Bake until the border of the tart is deep golden and puffed and the top is lightly spotted golden brown, about 25 minutes. Let cool for 5 to 10 minutes and serve.
  • Serve with lightly dressed greens.

ASPARAGUS, HERB AND GOAT CHEESE PUFF PASTRY

Asparagus, Herb and Goat Cheese Puff Pastry image

Provided by Valerie Bertinelli

Time 50m

Yield 6 to 8 servings

Number Of Ingredients 14

8 ounces fresh goat cheese
1/2 cup ricotta
3 large eggs
1/2 cup freshly grated Parmesan
1/3 cup roughly chopped fresh flat-leaf parsley leaves
1/4 cup chopped fresh chives
2 tablespoons chopped fresh dill fronds
1 tablespoon lemon zest
2 cloves garlic, grated
Kosher salt and freshly ground black pepper
1 pound thick-stem asparagus, trimmed
1 tablespoon extra-virgin olive oil
One 8-ounce sheet puff pastry, thawed
All-purpose flour, for dusting

Steps:

  • Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
  • Add the goat cheese, ricotta and 2 eggs to the bowl of a food processor fitted with the blade attachment. Pulse until the mixture is evenly combined. Next, add the Parmesan, parsley, chives, dill, lemon zest, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. Pulse once again to combine all the ingredients. The mixture may look slightly liquidy, but once it bakes the egg will help stabilize the cheese mixture. Set aside.
  • On a separate rimmed baking sheet, toss the asparagus with the olive oil, 1/4 teaspoon salt and 1/4 teaspoon pepper. Set aside.
  • Unroll the puff pastry on a lightly floured work space and dust a rolling pin lightly with flour. Roll the puff pastry out to a 13-by-11-inch rectangle. Add the goat cheese-herb mixture to the puff pastry and spread it out into an even layer, leaving a 1-inch border all the way around the puff pastry. Nestle in the asparagus into the cheese mixture, alternating directions.
  • To make the egg wash, whisk the remaining egg with a splash of water. Use a pastry brush to brush the exposed crust all the way around the edges.
  • Transfer the tart to the oven and bake until the crust is golden and the cheese mixture is set, 25 to 30 minutes

Time 50m

Yield 6 servings

Number Of Ingredients 12

1 pound asparagus, trimmed
1 sheet frozen puff pastry (about 1/2 pound), thawed
All-purpose flour, for dusting
1 cup grated fontina cheese (about 3 ounces)
1 cup grated comte or gruyere cheese (about 3 ounces)
1 tablespoon minced shallot
2 large egg yolks
3 tablespoons whole milk
1/8 teaspoon freshly grated nutmeg
Kosher salt and freshly ground pepper
2 teaspoons extra-virgin olive oil
1/2 teaspoon finely grated lemon zest

Steps:

  • Fill a large bowl with ice water. Bring about 1 inch of water to a boil in a large skillet. Preheat the oven to 400 degrees F.
  • Roll out the puff pastry into a 10-by-16-inch rectangle on a floured surface. Transfer to a parchment-lined baking sheet and prick all over with a fork. Bake until light golden brown, about 12 minutes. Let cool slightly on the baking sheet.

Spread the cheese mixture evenly over the puff pastry, leaving a 1-inch border on all sides. Toss the asparagus with the olive oil, 1/4 teaspoon salt, and pepper to taste. Arrange the asparagus on the tart and bake until the cheese mixture is slightly puffy, 15 to 20 minutes. Sprinkle with the lemon zest. Serve warm or at room temperature.

PROSCIUTTO ASPARAGUS PUFF PASTRY BUNDLES

Prosciutto Asparagus Puff Pastry Bundles image

Very easy and elegant appetizer or also for brunch. Make this when you can find the very thin asparagus spears.

Provided by Chef PotPie

Categories     Brunch

Time 30m

Yield 6 serving(s)

Number Of Ingredients 6

12 -16 ounces thin asparagus, ends trimmed
1 tablespoon extra virgin olive oil
1 sheet frozen puff pastry, thawed
4 ounces gruyere cheese, shredded
6 slices prosciutto
1 egg, beaten

Steps:

  • Preheat oven to 425°F. Line a sheet pan with parchment paper.
  • On a lightly floured surface, roll the puff pastry out to a large rectangle about double the original size. Square off edges and cut into 6 squares. (I use a pizza cutter to do this).
  • Toss asparagus in olive oil and season with salt and pepper.
  • To make the bundles, place slice of prosciutto on top of the square. I folded the prosciutto in half so that it fit nicely on the square. Follow with 3-4 stalks of asparagus (depending on size) and 1-2 tablespoons of cheese.
  • Lift two opposite corners of the puff pastry squares and wrap them around the asparagus and press to seal. Brush puff pastry with egg wash. Sprinkle with more pepper if desired.
  • Bake until puff pastry is golden and puffed, about 12-15 minutes. Serve immediately.

ASPARAGUS PUFF PASTRY SNACKS

Asparagus Puff Pastry Snacks image

Serve as a dinner party starter or serve with a salad as a light lunch. Adapted from the Simply Great Recipes website. I've suggested a few alternatives below. I'm well aware from reading reviews on Zaar that many people don't much like citrus flavourings, but I've provided that option for those of us who do! If you're going down the citrus path and adding a smidgeon of juice to the cream cheese, add it cautiously, a bit at a time, to maintain the basic consistency of the cheese. And, as I've suggested in the TIPS below, if you're a feta-lover, then of course substitute feta for the cream cheese!

Provided by bluemoon downunder

Categories     Lunch/Snacks

Time 35m

Yield 8 serving(s)

Number Of Ingredients 9

1 sheet frozen puff pastry, semi-thawed
1/3 cup cream cheese, at room temperature
1 tablespoon fresh dill (or 1/2 tablespoon fresh dill and 1/2 tablespoon fresh chives) or 1 tablespoon fresh chives, finely chopped (or 1/2 tablespoon fresh dill and 1/2 tablespoon fresh chives)
2 garlic cloves, finely minced
1 teaspoon orange zest (optional) or 1 teaspoon lemon zest (optional)
1 teaspoon orange juice (optional) or 1 teaspoon lemon juice (optional)
1/2 tablespoon canned salmon, thoroughly-drained (optional) or 1 slice ham, finely chopped (optional)
425 g asparagus, green spears thoroughly-drained
2 tablespoons parmesan cheese, grated

Steps:

  • Preheat the oven to 200°C.
  • Divide the pastry sheet in half and cut each half into 4 equal strips.
  • In a medium sized bowl, combine the cream cheese, the dill or chives, garlic, (optional) orange or lemon zest, (optional) orange or lemon juice, and (optional) crab, salmon or ham until they are well combined. If your cheese mixture becomes too thin (aha, sounds like you added too much juice!) add a one of the optional meats: crab, salmon or ham. Or, if you want to keep the dish vegetarian, add some more dill or chives.
  • Place the 8 strips of pastry onto a greased baking tray and spread them with the cream cheese mixture.
  • Arrange 2 - 3 thoroughly-drained Asparagus Green Spears on each strip of pastry and sprinkle with parmesan cheese.
  • Bake in a preheated oven at 200°C for 15-18 minutes.
  • TIPS: If you love feta, you may well want to use feta instead of cream cheese. The original recipe also suggested adding finely chopped cooked bacon to the cream cheese. If you're not adding orange or lemon, you may well like to add bacon to the cream cheese.

CHEESE, BACON & ASPARAGUS PUFFS

Cheese, bacon & asparagus puffs image

Serve these simple four-ingredient cheese puffs as part of a picnic or for lunch. You could also try adding some roasted peppers, cherry tomatoes or pesto

Provided by Good Food team

Categories     Lunch

Time 45m

Number Of Ingredients 4

3 back bacon rashers
320g sheet all-butter puff pastry
100g cheddar, grated
24 slim asparagus spears

Steps:

  • Heat the grill to high. Lay the bacon on a baking tray in a single layer and grill for 8-10 mins until starting to crisp at the edges. Leave to cool. Heat the oven to 180C/160C fan/gas 4.
  • Meanwhile, unroll the pastry sheet and cut into six squares. Pile a small mound of the cheese in the centre of each square, reserving some of the cheese for scattering over later. Trim the woodier ends of the asparagus spears so each one is about 10cm long. Place four spears diagonally across each mound of cheese. Chop the bacon into small pieces and sprinkle over.
  • Working with one pastry square at a time, fold the two corners not covered by the asparagus into the centre and pinch the ends together gently to seal. Repeat with the remaining squares, then scatter over the reserved cheese. Can now be frozen for up to three months.
  • Transfer the puffs to a baking tray lined with baking parchment and bake for 20-25 mins (or 35 mins from frozen), or until golden brown. Leave to cool on the tray for a few minutes before serving.

DEEP-FILLED ASPARAGUS & MASCARPONE TARTLETS

Deep-filled asparagus & mascarpone tartlets image

A fresh starter or canapé. A little skill is require, but once mastered you can easily change the fillings to suit the seasons

Provided by Barney Desmazery

Categories     Buffet, Canapes, Dinner, Starter

Time 1h10m

Number Of Ingredients 5

500g block all-butter puff pastry
12 asparagus spears
250g tub mascarpone
4 eggs
100g goat's cheese , crumbled

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Roll out the pastry on a lightly floured surface and cut into 12 pieces, roughly 8cm square. Use each piece to line the holes of a 12-hole muffin tin and use a ball of trimmings to press the pastry right down into the corners.
  • Press a large piece of foil over the tin and down into the holes, then fill each with baking beans. Bake for 15 mins until puffed up and golden, then remove the foil and cook for 10 mins more. Don't worry if the pastry puffs right up.
  • Meanwhile, trim the asparagus and separate the stalks from the tips. Bring a large pan of water to the boil, cook the stalks for 6 mins, then fish them out and place in a bowl of iced water. When cold, drain them again. Cook the tips separately for 3 mins, then place in the iced water. Put the stalks, mascarpone and eggs into a small bowl, season generously with salt and pepper, then use a hand blender to blitz everything to a frothy green custard.
  • Use a spoon to push the pastry back down into the holes and fill each with the custard. Drop an asparagus tip into each, then crumble over the goat's cheese. Return the tarts to the oven for 10-15 mins until the custard has puffed up and set. Leave to cool before removing from the tins.
