8 fresh asparagus spears, trimmed
1 tube (8 ounces) refrigerated crescent rolls
1 carton (8 ounces) spreadable chive-and-onion cream cheese
4 thin rectangular slices deli ham
2 tablespoons butter, melted
1/4 teaspoon garlic powder

Steps:

  • Place asparagus in a skillet; add 1/2 in. of water. Bring to a boil. Reduced heat; cover and simmer for 3-5 minutes or until crisp-tender. Drain and set aside., Separate crescent dough into four rectangles; seal perforations. Spread cream cheese over each rectangle to within 1/4 in. of edges. Top each with ham, leaving 1/4 in. uncovered on one long side. Place two asparagus spears along the long side with the ham; roll up and press seam to seal., Cut each roll into seven pieces. Place cut side down 1 in. apart on greased baking sheets. Combine butter and garlic powder; brush over spirals. Bake at 375° for 10-12 minutes or until golden brown.

Canola oil spray
1 pound thinly sliced serrano ham (about 24 slices)
1 pound asparagus, stalks trimmed to equal lengths
1 tablespoon orange zest and 2 tablespoons juice
Flaky sea salt

Steps:

  • Preheat the oven to 425 degrees F. Lightly grease a baking sheet with canola oil spray.
  • Lay a slice of ham on a work surface. Place a stalk of asparagus perpendicular to the ham, with the tip of the asparagus just higher than the top edge of the ham. Roll the asparagus on a diagonal, tightly wrapping the ham around the stalk as you go. (The ham should cover the entire stalk except for about an inch on the top and bottom ends.) Repeat with the remaining asparagus and ham.
  • Place the asparagus, seam-side down, on the prepared baking sheet and lightly grease the tops with canola oil spray. Bake until the ham is crispy and the asparagus has softened and begun to char at the tips, about 15 minutes. Immediately pour the orange juice over the hot asparagus and season with salt. (The orange juice will almost completely evaporate on the hot baking sheet, but it will infuse the asparagus with orange flavor.)
  • Transfer the asparagus to a serving plate and garnish with the orange zest. Serve immediately.

1/2 cup shredded cheddar cheese

1/4 cup dry bread crumbs

Steps:

  • Preheat oven to 375°. In a saucepan, melt butter; stir in flour until smooth. Gradually stir in the milk. Bring to a boil. Cook and stir until thickened, 2-3 minutes., Stir in cheese, salt and pepper. Remove from the heat. Place three asparagus spears on each ham slice. Roll up; secure with toothpicks if necessary. , Place in 13x9-in. baking dish; top with cheese sauce. Sprinkle with crumbs. Bake, uncovered, until heated through, 20 minutes.

Steps:

  • Preheat oven to 350°F.
  • Flatten and dry the ham slices.
  • Stack ham in piles of 2 slices each; spread each stack with 1 tsp of cream cheese.
  • Sprinkle with freshly ground black pepper.
  • Place 1 asparagus spear on one of the long sides of each ham stack; roll up.

2 ¼ pounds white asparagus
salt to taste
¼ cup butter, divided
1 pinch white sugar
7 ounces sliced ham

Steps:

  • Peel asparagus spears from top to bottom with a vegetable peeler, starting below the tips. Cut off woody ends with a knife.
  • Place asparagus spears in a large, wide saucepan and pour in enough lightly salted water to just cover. Bring water to a boil; add 1 tablespoon butter and sugar. Reduce heat; simmer until spears are tender and easily pierced with a knife, 15 to 25 minutes. Drain well.
  • Melt remaining 3 tablespoons butter in a small pot over low heat.
  • Wrap each asparagus spear with a slice of ham. Arrange on a serving plate; drizzle melted butter on top.

2 cups uncooked corkscrew or spiral pasta
3/4 pound fresh asparagus, cut into 1-inch pieces
1 medium sweet yellow pepper, julienned
1 tablespoon olive oil
6 medium tomatoes, diced
6 ounces boneless fully cooked ham, cubed
1/4 cup minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/8 to 1/4 teaspoon cayenne pepper
1/4 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large cast-iron or other heavy skillet, saute asparagus and yellow pepper in oil until crisp-tender. Add tomatoes and ham; heat through. Drain pasta; add to mixture. Stir in parsley and seasonings. Sprinkle with cheese.

4 large slices good ham , cut into thirds, or 6 smaller slices, halved
50g soft salted butter
good squeeze lemon juice
12 mini sub rolls
little salad cream

Steps:

  • Cook asparagus for 1-2 mins in boiling salted water. Drain well and dry on kitchen paper. Group in twos, then roll up in a slice of ham. Mash the butter with some black pepper and the lemon juice. Split rolls down the middle, but don't cut completely in half. Spread with a little butter, then add an asparagus wrap to each like you would a hotdog. Add a squirt of salad cream, if you like.

4slices serrano ham
1 tbsp lemon juice
2 tbsp Dijon mustard
1 tsp clear honey
3 tbsp walnut or hazelnut oil
1 tbsp snipped chives

Steps:

  • Trim the asparagus, then peel the stems with a potato peeler. Boil in salted water for 12-15 mins until the spears are tender. Drain well.
  • Whisk together the lemon juice, mustard and honey with some salt and pepper. Whisk in the oil, then stir in the chives just before serving.
  • Divide the warm or cold asparagus between 4 plates. Lay the ham on top and drizzle over the dressing.

½ cup butter
2 cups heavy cream
¾ cup grated Parmesan cheese

1 pinch cayenne pepper
½ pound cooked ham, diced

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Stir asparagus into pot in the last five minutes of cooking; drain.
  • While pasta is cooking, heat butter and cream in a medium saucepan over medium heat. When mixture begins to bubble, stir in Parmesan, garlic powder, pepper and cayenne. Continue cooking until mixture thickens, stirring occasionally. Stir in ham and heat through.
  • Toss pasta and asparagus with sauce and serve immediately.
