MOM'S TENNESSEE BANANA BLACK WALNUT CAKE
This homestyle cake is a family recipe made of two soft banana layers loaded with black walnuts. Old fashioned caramel frosting makes it a true southern favorite.

- Preheat oven to 350°F. Spray two 8- or 9-inch cake pans withflour-based cooking spray (or grease and flour) and set aside.
- In a medium bowl, sift together flour, baking soda, salt and cinnamon in a separate bowl. In the bowl of an electric mixer, cream the butter and sugar thoroughly. Blend in bananas, eggs and vanilla. Add the flour mixture alternately with buttermilk until well incorporated, then fold in walnuts. Divide the batter evenly between the prepared pans and bake for 35 minutes for8-inch pans, or 30 minutes for 9-inch pans, or until a toothpick inserted into the center of a cake comes out clean. Cool in pans on a cooling rack for 10minutes, then turn out of pans to cool completely.
- Melt the butter in a saucepan over medium heat on thestovetop. Add brown sugar and heavy cream, stirring until sugar is dissolved,about 5 minutes. Remove from heat and add vanilla extract. Transfer the mixtureto the bowl of an electric mixer while still warm and melted. Beat onmedium-low speed while adding powdered sugar a little a time; mix until smoothand thick. Add additional heavy cream a tablespoon at a time until the frostingis of easy spreading consistency. This frosting firms quickly, almost to afudge-like state, so work quickly to frost the cake.
- Place a small amount of frosting on the center of a cakeplate to keep the cake from shifting. Place one layer on the cake plate, andapply a layer of frosting. Top with the other cake layer, and frost the outsideand top of the stacked layers. If the frosting begins to set up, add more heavycream and re-whip to soften. Immediately press chopped black walnuts onto thetop and sides of the cake, before frosting sets up.
- Combine the butter and cream cheese in a large bowl and whip until fluffy with an electric hand mixer. Add confectioners' sugar a little ata time until a thick, fluffy frosting forms; add milk or cream to thin as needed. Transfer the frosting to a piping bag with a large closed star piping tip. Pipe swirls of cream cheese frosting on the top edge of the cake. Garnish with black walnuts.
BANANA WALNUT CAKE WITH CARAMEL FROSTING

- Set oven to 350F
- Cream the butter and sugar together until fluffy. Beat in the sour cream and the egg.
- Mash the bananas with the back of a fork. Make sure to get the little lumps out. Add the bananas and the vanilla to the butter and sugar and blend well.
- Sift the flour, salt and baking soda and add to the batter. Stir just until combined. Fold in the nuts.
- Spread the batter into an 8x8 or 9x9 square baking pan that's been sprayed with oil or lined with parchment paper with overlapping ends. The paper will help you remove the cake from the pan for neater cutting.
- Bake for about 25 to 30 minutes until a toothpick comes out without wet batter clinging to it. (It will still be moist)
- Let cool before frosting.
- To make the frosting, heat the butter and sugar in a small saucepan until it comes to a boil, stirring to dissolve the sugar. Cook for 2 minutes.
- Take off the heat and add the heavy cream, vanilla and salt.
- Beat in the powdered sugar, and continue beating on high until the frosting is thick and glossy. Add a little more cream if it seems too thick, and a little more sugar if it seems too thin.
- Spread thickly on the cooled banana cake.
NANA'S BANANA CAKE WITH SALTED CARAMEL BUTTERCREAM

- For the cake: Preheat the oven to 350 degrees F. Prepare three 8-inch cake pans with baking spray and parchment liners.
- Using a stand mixer with a paddle attachment, cream together the granulated sugar, light brown sugar and butter on medium-high speed until light and fluffy. Slowly add the eggs, one at a time, mixing each fully before adding the next.
- With the mixer on low, slowly trickle the oil into the mixture. Once added, increase the speed to medium-high and continue to mix until the mixture thickens and begins to look like mayonnaise. Using a silicone spatula, scrape down your bowl, making sure to get anything at the bottom of the bowl that has not been mixed well.
- In a small bowl, combine the buttermilk and vanilla extract. In a medium bowl, sift together the flour, baking powder, baking soda, cinnamon and salt. Add a third of the flour mixture to the butter mixture and beat on medium high speed for 90 seconds. Bring the speed down to low and, alternately, add the buttermilk mixture and remaining flour mixture in 4 stages, beginning with the buttermilk mixture and ending with the flour mixture. Fold in the mashed bananas. Mix only enough to incorporate the ingredients after each addition.
- Pour the batter into the prepared pans, filling two-thirds full. Bake until a toothpick inserted into the center comes out clean, 35 to 40 minutes. The top of the cake should spring back slightly after a gentle tap with your finger. Allow to cool for 10 to 15 minutes before removing from the pans. Allow the cakes to cool completely before frosting.
- For the salted caramel Swiss meringue buttercream: Using a stand mixer with a paddle attachment, beat the egg whites and confectioners' sugar on medium-high until the mixture thickens to fluffy white, 3 to 4 minutes. Reduce speed to medium and gradually add the softened butter. Increase the speed to medium-high and continue mixing for 5 to 7 minutes. Reduce the speed and add the prepared caramel sauce, vanilla and salt. Mix until combined.
- To assemble the cake: Frost the top of 1 cake round with some salted caramel Swiss meringue buttercream. Drizzle with some prepared caramel sauce and sprinkle with some pecans. Add a second round and repeat with the buttercream, caramel sauce and pecans. Top with the remaining cake round and frost the entire cake with the buttercream.
- Combine the sugar, corn syrup and 1/4 cup water in a saucepan, making sure the sugar is completely wet, but being careful not to let the sugar water coat the sides of the pan. Turn the heat to medium-high and cook for about 4 minutes. The cooking process is done when the sugar has reached a nice amber color. Do not stir during the cooking process. Quickly remove the sugar from the heat and add the heavy cream. The mixture will bubble. Stir to combine. Whisk in the butter, sea salt and lemon juice. Allow to cool completely before use.

- Preheat oven to 350°F; grease and flour 2(9-inch) cake pans.
- For the cake: In a medium bowl, stir together flour and baking soda; set aside.
- Using an electric mixer, cream together shortening and sugar in a bowl until light and fluffy, about 2 to 3 minutes.
- Add eggs 1 at a time, mixing well after each addition.
- Mix in mashed bananas, buttermilk,and vanilla; add flour mixture and mix until just combined.
- Stir in walnuts.
- Pour into prepared pans, bake until a toothpick inserted comes out clean, about 35 minutes.
- Cool in pans on a cooling rack, remove from pans and cool completely.
- While cake is baking, prepare frosting.
- Melt butter in a small saucepan.
- Add brown sugar and 1/3 cup cream; cook over medium-low heat until sugar is dissolved, about 2 minutes.
- Remove from heat and add vanilla; transfer to a large bowl.
- Using a hand mixer, beat in confectioners sugar a little at a time until smooth.
- (If frosting is to thick, add 1 tablespoon heavy cream at a time until consistency is right).
- Sandwich 2 layers of cake with frosting; frost outside of the cake.
- Press chopped walnuts on sides of cake, if desired.
CARAMEL-WALNUT UPSIDEDOWN BANANA CAKE

- For topping:
- Spray 8-inch round cake pan with 2-inch-high sides with nonstick spray. Bring butter, sugar, and corn syrup to boil in medium saucepan, stirring constantly until butter melts. Boil syrup 1 minute. Stir in nuts. Spread topping in prepared pan. Let topping cool completely.
- For cake:
- Preheat oven to 350°F. Sift first 4 ingredients into medium bowl. Using electric mixer, beat butter and both sugars in large bowl until blended. Beat in eggs 1 at a time, then mashed bananas, sour cream, rum, and vanilla. Beat in dry ingredients in 2 additions just until combined. Spoon batter into pan.
- Bake cake until tester inserted into center comes out clean, about 55 minutes. Cool 15 minutes. Cut around cake. Place platter over pan. Holding pan and platter together, turn over. Let stand 5 minutes, then gently lift off pan. Cool at least 15 minutes for topping to set. Serve warm or at room temperature with whipped cream or vanilla ice cream.
BEST EVER BANANA, WALNUT AND CARAMEL CAKE
I have made this cake a couple of times now, and everytime I make it, it just tastes better and better. It is so moist and will stay that way if covered with plastic wrap and kept out of the fridge. For all you banana cake lovers, this is the one to try.

- Preheat oven to 180 degrees celsius.
- Cream the butter and sugar until fluffy.
- Add vanilla essence.
- Beats eggs in one at a time.
- Mash bananas and beat into the creamy mixture.
- Sift the flour and bicarbonate of soda and add to the mixture.
- Stir in the milk and fold the mixture until all ingredients are mixed well.
- Grease a 20 cm round tin and line with baking paper.
- Pour cake mixture into tin.
- Then pour Caramel and Walnut Topping over uncooked cake and bake for about 45-60 minutes.
- Remove from oven and allow to cool for about 5 minutes before you turn it out onto a wire rack.
- Serve with a dollop of cream.
- For the CARAMEL AND WALNUT TOPPING, place butter and brown sugar in a saucepan and stir over low heat until the butter is melted and mixture is smooth.
- Add walnuts and pour over cake before placing into oven.

A favorite banana cake recipe that I have used for everything from a brunch treat to a requested birthday cake to a potluck. It always get rave reviews. It's the combination of the caramel icing and the bananas that tickles everybody's taste buds.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a fluted tube pan (such as Bundt®).
- Combine 1/4 cup sugar and cinnamon in a small bowl and mix in pecans. Sift flour, baking powder, baking soda, and salt together in another bowl.
- Beat 1 cup sugar and shortening together with an electric mixer in a large bowl until light and fluffy. Beat in banana, eggs, and vanilla extract. Add sour cream and mix until just blended. Add flour mixture and beat until blended.
- Sprinkle 2 tablespoons of sugar-nut mixture into the prepared cake pan. Top with 1/2 of the cake batter. Follow with remaining nut mixture and cake batter.
- Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, 40 to 45 minutes. Cool for 5 minutes in the pan and then turn the cake out onto a wire rack to finish cooling.
- Melt butter in a saucepan over low heat. Add brown sugar and milk. Bring to a boil; continue to boil for 1 to 2 minutes. Remove from heat and add vanilla extract; mix in powdered sugar gradually. Top the cooled cake with the frosting.
