BACON-WRAPPED ASPARAGUS BUNDLES
It's so easy to elevate asparagus bundles-just wrap them in bacon! Make this sweet and savory side dish for your Easter celebration, or any springtime meal.

Steps:
- Preheat the oven to 425 ̊. Place a rack on a rimmed baking sheet. Cut each strip of bacon in half lengthwise. Divide the asparagus into 10 bunches and wind half a bacon strip around each bunch. Drizzle the asparagus bundles with the olive oil, gently turning to make sure the tips are well coated.
- Arrange the asparagus bundles on the prepared rack. Season with the salt and a few grinds of pepper. Brush the bacon with the maple syrup.
- Roast until the asparagus is tender and the bacon is crispy and caramelized, 30 to 35 minutes.
BACON WRAPPED ASPARAGUS
Steps:
- Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
- Divide the asparagus spears into 8 bundles. Wrap each bundle in the middle of the spears with one piece of bacon. Place the bundles seam-side down on the prepared baking sheet. Drizzle with the olive oil and sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper. Bake until the bacon is fully cooked, about 25 minutes.
- Melt the butter in a medium saucepan over medium-high heat. Sprinkle the flour over the butter and stir. Cook until the mixture is golden brown and has a nutty aroma, about 1 minute. Stir in the mustard powder, onion powder, nutmeg and remaining 1/2 teaspoon each salt and pepper. Slowly whisk in the milk a little at a time and continue cooking and whisking until the mixture thickens, 2 to 3 minutes. Stir in the cheese until melted, then take off the heat.
- Carefully transfer the bacon bundles to a serving platter. Pour the cheese sauce over the asparagus and sprinkle with the fried onions. Serve warm.
ASPARAGUS BUNDLES
Steps:
- Preheat the oven to 400 degrees F. Divide the asparagus spears into 12 bundles. Carefully wrap 1 piece of bacon around each bundle, starting about 1/2 inch from the bottom of the tips. Secure the bacon-wrapped spears with a toothpick. Lay the bundles in a low-sided casserole dish. In a medium saucepan, combine the brown sugar, butter, soy sauce, garlic salt and pepper. Bring the mixture to a boil. Pour the hot sugar mixture over the asparagus bundles. Transfer the dish to the oven and roast until the spears have begun to wilt and the bacon looks fully cooked, about 25 minutes. Remove the toothpicks before serving.
BACON WRAPPED GARLIC ASPARAGUS BUNDLES
A bundle of asparagus is drizzled with garlic steeped olive oil, wrapped in bacon and roasted. The flavor of this is outstanding.

- Saute garlic and parsley over low heat, then set aside to steep.
- Remove ends from asparagus that are tough.
- Lay 4 stalks of asparagus in the center of each strip of bacon and sprinkle with salt and pepper.
- Drizzle garlic oil over each bundle.
- Wrap bacon around the stalks and secure with a toothpick.
- Place asparagus bundles on baking sheet and bake at 400° for 20 minutes or until asparagus is tender and bacon is crisp.

Cook 2 chopped bacon slices and 1 sliced shallot in 2 teaspoons vegetable oil in a large nonstick skillet over medium-high heat until crisp, 8 minutes. Add the shaved asparagus and 1 teaspoon jarred chopped hot peppers. Cook until tender, 3 minutes. Stir in 3 cups baby spinach and cook until wilted, 1 minute. Season with salt.

Steps:
- Cut 1/2 inch to 1 inch off the end of the asparagus.
- The asparagus should be at least 4 to 5 inches long.
- Toss the asparagus with olive oil- just enough to lightly coat and add a touch of salt and pepper (optional).
- Separate into bundles (approx. 4 to each bundle) and starting at bottom of asparagus bundle, wrap with 1 slice of uncooked bacon.
- Repeat with the rest.
- Place on broiling pan and bake at 500 degrees for 5 minutes, turn them over and bake another 5 minutes.
- Reduce oven to 350 degrees and bake for 15- 20 minutes.

My mom gave me this recipe using green beans, but I like it much better with Asparagus. The asparagus is tender, with a slightly sweet, but tangy sauce.

- Cook the asparagus in boiling water for 2 minutes; drain and set aside.
- Melt butter or margarine.
- Mix Worcestershire sauce, brown sugar, butter and garlic in a bowl.
- Wrap the asparagus in bundles of 4-5 stalks with a piece of bacon. Place bundles in the bottom of a baking dish.
- Pour sauce over the bundles and bake at 325°F until bacon is crispy.
- Remove and serve warm.

Steps:
- Wash asparagus and cut off the woody hard ends.
- Separate asparagus evenly to make 6 bundles.
- Place a slice of cheese in the middle of the bundle and wrap the bundle with bacon to "hide" the cheese and help hold it in when melted.
- Season with salt pepper and garlic powder.
- On a flat griddle or skillet (i like a electric griddle to control heat better).
- Cook bundles tuning a little at a time to make sure bacon is cooked all the way around.
- Serve immediately.

- (Optional) cook an additional 8 slices of bacon to wrap around asparagus into bundles (2 slices each bundle).
- Cook bacon until nice and crispy; remove to paper towels to drain. (If wrapping into bundles, cook 8 slices of bacon so that bacon is cooked, but NOT crispy. Crispy bacon is very difficult to wrap around the asparagus if it is too crispy).
- Steam the asparagus for 4 - 6 minutes.
- Remove some of the bacon grease from the pan, leaving two to three tablespoons. In a large fry pan or Wok, add onion, butter, bacon grease and cook onion until soft. Add asparagus to the pan and sauté over medium to low heat for about 4 minutes, turning asparagus every 15 seconds.
- Put in a bowl and toss with the mustard and vinegar. Add salt and pepper, to taste.
- (Optional) Split Asparagus into 4 bundles and wrap with 2 slices of bacon.
