1 pound provolone cheese, shredded
2 (10.75 ounce) cans condensed golden mushroom soup
1 (2.8 ounce) can French-fried onions

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place asparagus in baking dish; cover with cheese. Spread mushroom soup over cheese.
  • Bake, covered, until hot and bubbly, about 35 minutes. Remove from oven; remove cover and sprinkle with onions. Return to oven and bake, uncovered, until onions are lightly browned, about 10 minutes.

This easy-to-make casserole was a hit at my house! I used leftovers for part of it, which is always a plus, and it all went together so well. As for the pasta, we had a mix of cooked bow ties, elbows and spirals and they worked great! My 16-month-old daughter loved it, and the leftovers reheated beautifully the next day. Hope you like it as much as we did!

½ pound farfalle (bow tie) pasta
1 pound fresh asparagus - tough ends snapped off and spears halved crosswise
cooking spray
3 (10.75 ounce) cans cream of asparagus soup
1 cup milk
2 cooked chicken breast halved - thinly sliced
1 (8 ounce) package shredded Cheddar-Monterey Jack cheese blend

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in bow tie pasta and return to a boil. Cook uncovered, stirring occasionally, until tender but still slightly firm, about 12 minutes. Drain well and set aside.
  • Place asparagus into a large skillet with about 1 inch of water. Place over medium heat, bring to a boil, and reduce heat to low. Cover skillet and cook until asparagus pieces are bright green and tender, about 8 minutes; drain well and set aside.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Spray a 9x13-inch baking dish with cooking spray.
  • Whisk cream of asparagus soup with milk in a bowl until smooth.
  • Spread the cooked bow tie pasta over the bottom of the baking dish.
  • Pour about 1/4 of the soup mixture over the pasta, stirring gently to coat pasta with soup.
  • Lay chicken breast slices over pasta.
  • Spread the asparagus over the chicken slices.
  • Pour remaining soup mixture evenly over the casserole, being sure it soaks through to the bottom of the dish. Top casserole with shredded Cheddar-Monterey Jack cheese.
  • Bake in the preheated oven until the casserole is hot and the cheese topping is browned and bubbling, about 35 minutes.

Steps:

  • In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. 6 cups chicken stock, divided
1 ½ pounds asparagus, trimmed and chopped
¼ cup butter
2 tablespoons olive oil
1 onion, chopped
2 ribs celery, chopped
2 cloves garlic, chopped
6 tablespoons all-purpose flour
1 cup half-and-half, or more to taste
1 pound processed American cheese (such as Velveeta®), cubed
salt and ground black pepper to taste

Steps:

  • Bring 4 cups chicken stock to a boil in a saucepan. Add asparagus and cook until tender, 3 to 5 minutes. Drain asparagus, reserving the stock. Set a few asparagus tips aside for garnish.
  • Heat butter and olive oil in a stockpot over medium heat. Add onion and celery and cook until tender, 6 to 8 minutes. Add garlic; cook and stir until fragrant, about 3 minutes more.
  • Stir flour into onion mixture until combined, about 2 minutes. Add remaining 2 cups chicken stock; cook and stir until thickened, about 5 minutes more. Add cooked asparagus stalks and remaining reserved asparagus-chicken stock; bring soup to a boil.

1 cup warm milk
1 cup shredded cheddar cheese

Steps:

  • In a large micro-wave safe glass bowl, heat butter about 50 seconds on high, or until melted.
  • Whisk in the 2 tablespoons of flour and 1 cup of heated milk.
  • Add 1 cup shredded cheddar cheese.
  • Place in microwave and cook on high for 2 minutes, pausing to whisk thoroughly every 30 seconds.
  • Season to taste with salt and whisk again.
  • Set cheese sauce aside.
  • Bend asparagus until they break at a natural point; discard ends.
  • Place asparagus spears in a microwavable glass covered dish, with half the spears going one way, and half the spears going the other way.
  • Add 1/4 cup water to the dish.

1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup shredded cheddar cheese

1 (6-ounce) can french-fried onions.

Steps:

  • Grease a casserole dish and preheat oven to 350 degrees.

2 teaspoons chopped fresh thyme (or regular dried)
1/2 teaspoon salt

  • In a small saucepan, combine cheddar cheese and cornstarch. Toss until cheese is evenly coated.

1/2 can cream of mushroom soup, undiluted
1/4 cup milk
salt and pepper, to taste
1/4 teaspoon italian seasoning (optional)

Steps:

  • Drop fresh asparagus into boiling water.
  • As soon as they turn"bright" green, remove and plunge them into ice water to stop the cooking process.
  • Drain.
  • Mix soup and milk together.
  • Place asparagus in 9x13x2-inch casserole.
  • Top with sliced eggs.
  • Sprinkle with crackers; sprinkle with cheese.
  • Pour soup mixture over casserole.
  • Bake at 350 degrees until hot, just bubbling and cheese is melted.
  • NOTE: For a spicier version my family really, really likes, I use Cheez-its (Hot and Spicy) crackers instead of the butter-flavored crackers mentioned above. I usually add a few more crackers than the original recipe calls for.

1 tablespoon unsalted butter
1 tablespoon olive oil
1 small shallot, sliced
1 bunch thin asparagus, trimmed and cut into 2-inch pieces
Kosher salt and freshly ground black pepper
1 teaspoon lemon zest, for garnish

Steps:

  • Heat the butter and oil in a large saute pan over medium heat. Add the shallots and cook until they begin to soften, about 1 minute. Add the asparagus and season with 1 teaspoon salt and some pepper. Cook the asparagus, stirring occasionally, until cooked through but still bright green, about 4 minutes. Transfer the asparagus to a platter and garnish with lemon zest.

1 (16 ounce) can asparagus, cuts drained
1 (8 ounce) jar sliced mushrooms, drained
1 can cream of mushroom soup
1/2 cup cracker crumb
1 cup shredded cheddar cheese

Steps:

  • In a greased casserole dish, layer half of the peas, asparagus cuts, mushrooms, soup, cracker crumbs, and cheddar cheese.
  • Repeat layers.
  • Bake at 350 degrees for 30 minutes.

  • 1. In a large bowl, combine all ingredients well. Pour into a lightly greased slow cooker. Cover and cook on high setting for 3 to 3 1/2 hours. After cooking , dish may be held on Low setting for up to 2 hours before serving.
