Eating dinner as a family every night is really important to us, and this recipe is one that we all love. It's our favorite skillet chicken dish. -Courtney Stultz, Weir, Kansas

1 pound boneless skinless chicken breasts, cut into 1-inch-thick strips
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon dried thyme
1/2 teaspoon pepper
1/4 teaspoon salt
1 tablespoon coconut oil or olive oil
1/2 cup chopped onion
1 garlic clove, minced
1/3 cup Dijon mustard
3 tablespoons maple syrup

Steps:

  • Toss chicken with seasonings. In a large skillet, heat oil over medium heat; saute chicken 10 minutes. Add onion and garlic; cook and stir 5 minutes. Stir in mustard and syrup; cook and stir until sauce is caramelized and chicken is no longer pink, 5-7 minutes.

This is a recipe I created myself, using a recipe called Honey Mustard Glazed Chicken from Saving Dinner by Leanne Ely for inspiration. This makes the chicken sweet and tender with lots of sauce for dipping. Delicious. Even my picky eater was dipping her chicken!

3 -4 boneless skinless chicken breasts
3 tablespoons butter
1/4-1/2 cup maple syrup
3 -4 tablespoons Dijon mustard
2 -3 tablespoons raw apple cider vinegar
1/4-1/2 cup water, as necessary

Steps:

  • Melt butter in large skillet.
  • Brown chicken in butter.
  • Mix together maple syrup, dijon mustard, apple cider vinegar, and water to make sauce. Adjust maple syrup to reach desired sweetness. You want enough sauce to be able to pour over chicken and let it simmer. Let sauce reduce by about 1/3.
  • Serve chicken with sauce poured over top, or on the side as a dipping condiment.

1 lb chicken breast
1 cup chicken broth
2 sweet potatoes
1 onion
2 tablespoons Dijon mustard
3 tablespoons maple syrup
3 garlic cloves
2 bay leaves
1 teaspoon thyme

Steps:

  • Place chicken into crockpot and toss it with thyme, dijon mustard and maple syrup.
  • Peel and slice sweet potato and onion.
  • Place onion, sweet potato and minced garlic on top of chicken.
  • Add chicken broth and bay leaves.
  • Cook on low for 6-8 hours.
  • This is done when the chicken is cooked through and the vegetables reach desired tenderness.

2 skinless, boneless chicken breast halves
¼ cup Dijon mustard
¼ cup minced onion
3 tablespoons lemon juice
2 tablespoons maple syrup
1 tablespoon olive oil
2 teaspoons teriyaki sauce
2 teaspoons soy sauce
4 cloves garlic, minced
1 teaspoon dried rosemary

Steps:

  • Place chicken breasts in a slow cooker. Mix Dijon mustard, onion, lemon juice, maple syrup, olive oil, teriyaki sauce, soy sauce, garlic, and rosemary together in a bowl. Pour into the slow cooker. Ensure sauce covers the chicken.
  • Cook on High until chicken is no longer pink in the center, 1 to 2 hours.

  • Preheat the oven to 400 degrees F. Lightly coat a large baking sheet with nonstick spray. Place the carrots, broccoli, and red onion on the baking sheet.
  • In a small bowl or measuring cup with a spout, whisk together the olive oil, maple syrup, mustard, garlic, salt, pepper, oregano, and thyme. Drizzle about 3 tablespoons over the veggies, reserving the rest. Toss the veggies to coat with the mixture, then spread them into a single layer. Arrange the pounded chicken breasts on top.
  • Add the balsamic vinegar to the reserved olive oil/maple syrup mixture and whisk to combine. Brush over the tops of the chicken breasts.
  • Place the baking sheet in the oven and roast until the chicken is cooked through and reaches an internal temperature of 165 degrees F, about 20-30 minutes, depending upon the size of your chicken breasts (mine were about 11 ounces each and cooked in 28 minutes). Remove to a plate, cover, and let rest for a few minutes. If the vegetables are not as brown as you would like, return them to the oven for a few minutes to continue cooking. Sprinkle with fresh parsley and enjoy warm.
