RED CABBAGE
The perfect side: slow-cooked red cabbage with sweet and sour spices. Just the smell of it simmering on the stove brings that festive feeling to your kitchen. This recipe can be made in advance, perfect if you are planning for a stress-free Christmas. For this recipe you will need a food processor.

Steps:
- Heat the butter and oil in a large lidded saucepan. When hot, add the onion and fry gently until softened. Stir in the spices. Add the cabbage and fry for 3-4 minutes, stirring occasionally, until glossy.
- Stir in the sugar, apples and red wine vinegar. Cover with a lid and let it cook gently for 30 minutes.
- Stir in the redcurrant or cranberry sauce (if using) and cook for a further 10 minutes. If you aren't using the sauce, taste the cabbage and add a little more sugar if it's too tart for your taste.
BRAISED RED CABBAGE

- Cook the bacon until crisp, over medium heat in a large Dutch, that has a lid, about 4 minutes. Add the onions, cinnamon, bay leaves, and 1 teaspoon of the salt. Cover, and cook, stirring occasionally, until the onion is tender, about 8 minutes.
- Increase the heat to medium-high, add the cabbage and cook, stirring, until wilted, about 8 minutes. Add the apple, broth, vinegar, sugar, the remaining salt, and pepper, and cook, covered, stirring occasionally, until the cabbage is tender, about 1 hour.
- Uncover; bring to a boil, and cook, stirring, until the liquid has reduced to a sauce-like consistency, about 5 minutes. Transfer to a serving dish and serve.

- Heat a skillet over medium high heat. Add oil and onion and saute 2 minutes. Add cabbage and turn in pan, sauteing it until it wilts, 3 to 5 minutes. ASPARAGUS AND MASCARPONE CAPPELLACCI IN RED CABBAGE BROTH
Creamy cappellacci, with spirals of spinach, served in a bright purple broth. It tastes even better than it looks!

- Mix the flours together, setting half aside and forming a well out of the remainder. Drop the spinach, half a teaspoon of olive oil, and half of the egg into the centre of the well, and bring together into a ball. For a more vibrant and consistent colour, blitz in a food processor for one minute.
- Knead vigorously for 10 minutes, then cover in cling wrap and set aside to rest for 30 minutes, away from heat and direct sunlight.
- Similarly, prepare a well with the remaining flour, mixing in the other half a teaspoon of oil, the remaining egg, and two tablespoons of water into the centre. Knead for 10 minutes, and then cover and rest for 30 minutes.
- While the dough is resting, sauté the red cabbage, onion, garlic, and peppercorns in one tablespoon of olive oil, over medium heat for 10 minutes, stirring regularly. Once the onion begins to soften and turn translucent, add in the stock, parsley, bay leaves, and salt, and simmer at low-medium heat for a further 15-20 minutes. Remove from the heat and strain out the broth. We like to retain the cabbage and serve it as a side, tossed with some blanched greens, olive oil, crumbled feta, and lemon juice.
- Next, prepare the filling by blanching the asparagus in boiling water for 2-3 minutes. Set aside the tips, and then blend the stalks with the mascarpone, breadcrumbs, and salt. Note that you can retain the asparagus cooking water to later cook the pasta in. Transfer the blended filling to a piping bag fitted with a medium round tip.
- Once the dough has rested, and working with one ball at a time, roll it through the pasta machine at the thickest setting a few times, folding each sheet over itself in between passes. Then gradually step them through to a medium-thin thickness (5 on our 9-thickness machine).
- To laminate, lay one sheet out flat on a lightly floured surface, spritz the exposed side lightly with water, and then lay the second sheet on top, smoothing out any air bubbles with your hand as you go. Roll back through the machine at a thicker setting (3 on our machine).
- Spritz the surface of the laminated sheet with water, and then carefully roll up into a tight log, short-end to short-end. Use a sharp knife to cut across the pasta, forming spiralled discs of around 3-4mm thickness. For this original recipe of 300g flour, form approximately 28 discs.
- Drop the cappellacci into lightly salted boiling water, and cook until al dente (firm, but no white showing when you cut across the dough). This could take more than 10 minutes depending on the thickness of the pasta. Drain, and serve in the broth with the asparagus tips, crumbled feta, zucchini ribbons, pistachios, and micro-herbs.

BALSAMIC-BRAISED RED CABBAGE

- Brown 1/3 cup diced pancetta in olive oil in a pot over medium-high heat until crisp, 2 to 4 minutes. Add 1 pound sliced red cabbage, 1 sliced red onion, 1/2 teaspoon each fennel seeds and kosher salt and a few grinds of pepper. Cook, stirring, 5 minutes. Add 1 cup water, 2 tablespoons balsamic vinegar and 1 tablespoon sugar. Cover and cook over medium heat, stirring, until tender, 15 minutes. Season with salt and pepper and top with parsley.
BRAISED RED CABBAGE WITH APPLES

- Quarter the cabbage and cut away the core, then cut the quarters into thirds. Rinse in cold water and set aside. In a large stockpot, melt butter over medium heat. Saute the onion and apples for 2 minutes until they begin to soften. Add the chopped dill, bay leaves, cabbage, and broth. Cook for 5 minutes until it begins to wilt. Stir in the vinegar to preserve the red color. Add sugar, salt, and pepper and cook for 20 minutes until the cabbage is soft, stirring occasionally. Garnish with fresh dill before serving.
RED CABBAGE RAGù
What ingredient is the base for many hearty meals, turns crusty-browned when seared, tender when slow-cooked and makes for a good ragù? Ground meat and pork shoulder, yes, but also cabbage. Its hidden sweetness shines when seared in plenty of oil and braised until glazed and soft. In this vegan pasta sauce, cabbage slumps as its juices release and mingle with red wine and caramelized tomato paste. To ensure the flavors aren't too diluted, use just a small amount of water and trust that the cabbage will release moisture as it cooks. Use this warming braise to sauce fat noodles, or eat it with polenta, mashed potatoes, beans, sausage or a fried egg. The cabbage can be cooked up to three days ahead.

- In a large Dutch oven, heat 4 tablespoons oil over medium-high. Working in batches if necessary, add the cabbage wedges cut side down in a single layer, season with salt and cook until well browned, 3 to 5 minutes per side. Transfer to a cutting board to cool slightly. Repeat with remaining cabbage, adding more oil as needed.
- Reduce the heat to medium-low and add the remaining 2 tablespoons oil and the onion to the empty pot. Season with salt and pepper, and cook, stirring occasionally, until softened and starting to turn golden, 5 to 7 minutes. Bring a large pot of salted water to a boil. Coarsely chop the cooked cabbage, including the core.
- Reserve 1 teaspoon of the garlic, and add the remaining garlic and the tomato paste to the onions. Cook, stirring constantly, until the tomato paste is a shade darker, 3 to 5 minutes. Add the wine and cook, scraping up browned bits, until nearly evaporated, 1 to 2 minutes.
- Add the chopped cabbage, 1/4 cup parsley and the sugar, and stir to coat in the tomato paste. Season with salt. Add 1/4 cup water, cover and cook, stirring occasionally, until the cabbage is soft and shiny, 15 to 20 minutes. (If the cabbage is sticking to the pot, add 1 tablespoon water and reduce the heat.)
- In a small bowl, stir the reserved 1 teaspoon garlic into the remaining 1/2 cup parsley. Add the red-pepper flakes, if using.
- When the cabbage is just about done, add the pasta to the boiling water and cook until al dente. Reserve 2 cups pasta water, then drain the pasta. (If the cabbage is ready before the pasta, keep covered off the heat.) Add the pasta and 1 cup pasta water to the cabbage. Stir over medium-low until the pasta is glossed with sauce. Add more pasta water as needed to thin the sauce. Divide among bowls and top with parsley-garlic mixture.
BAKED PASTA WITH ASPARAGUS, LEMON, AND MASCARPONE

- Preheat the oven to 450°F.
- Spray a 9x13 pan with cooking spray.
- Heat a large pot of water to boil.
- Add asparagus and cook 2 minutes, remove with a slotted spoon and run under cold water to stop cooking process, drain well.
- Add fettuccine to boiling water and cook until al dente, about 10 minutes.
- While fettuccine is cooking, heat oil in a skillet, add scallions and saute 1 minute.
- Add asparagus, saute 1 minute.
- Remove from heat and add half the zest, lemon juice, thyme, salt, pepper; mix well; set aside.
- In a saucepan melt butter, add flour and mix well.
- Whisk in milk and stir until boiling, lower heat and cook until thickened.
- Remove from heat and stir in mascapone, remaining zest and 1/2 cup parmigiano-reggiano, whisking until smooth.
- Season with allspice, cayenne, salt and pepper.
- Mix remaining cheese, breadcrumbs, salt, pepper in a small bowl.
- For assembly:.
- Drain the cooked fettucine and return to pot.
- Stir in asparagus mixture, cheese sauce, toasted nuts and mix well.
- Pour into prepared pan, top with breadcrumb mixture.
- Bake uncovered 15-20 minutes until bubbling and golden; serve.

PICKLED RED CABBAGE WITH WALNUTS & APPLE

- Tip the cabbage and red onion into a bowl and season with 2 tsp sea salt, then toss together. Set aside for to cure for 20 mins.
- Meanwhile, pour 200ml water into a saucepan and add the chilli, juniper, allspice, vinegar and sugar, then bring to the boil. Tip the cured cabbage into a colander and rinse once under cold water to remove any excess salt. Pack into a large, clean container and pour over the warmed spiced pickling liquid. Put on the lid and leave in the fridge until needed. Can be made up to a week ahead.
- When you are ready to serve, drain the pickling liquid from the cabbage and discard the dried chilli. Bring up to room temperature, then stir through the nuts, dill and sliced apple. Spoon the salad into a large salad bowl to serve.
