Asparagus and eggs have an affinity for each other. The voluptuous yolk softens and smoothes the grassy sharpness of the vegetable, while the asparagus brightens up the dull richness of the egg. The pair's most classic expression is asparagus hollandaise, but that is too fussy and time-consuming a preparation for a regular home-cooked breakfast. This dish combines the flavors in a time- and cook-friendly way.

3 tablespoons olive oil, more for drizzling
3/4 pounds asparagus, trimmed and cut into 1/2-inch pieces
2 scallions, white and light green parts, thinly sliced
8 large eggs
6 tablespoons roughly chopped soft herbs like basil, cilantro, chives or parsley use at least 2
1/3 cup heavy cream
2 tablespoons grated Parmesan
Salt
black pepper, to taste
Lemon wedges, for serving
Flaky sea salt for sprinkling

Steps:

  • Heat the oven to 300 degrees. In a large skillet over medium heat, warm the olive oil until shimmering. Add the asparagus and the scallions and cook for 5 minutes, stirring occasionally, until asparagus is browned and tender.
  • Whisk together the eggs, 4 tablespoons of the herbs, and cream. Whisk in Parmesan, salt and pepper. Pour the egg mixture over asparagus and place the skillet in the oven.
  • Bake for about 20 minutes, until set, but still slightly jiggly in the center. Cool in the pan for about 10 minutes before serving. It is best warm, not hot.
  • Squeeze one or two lemon wedges over it, drizzle with olive oil, and sprinkle with flaky sea salt and remaining herbs. Cut into wedges.

20 thin slices sandwich bread, crusts removed
¾ pound butter
4 ounces blue cheese, at room temperature
1 (8 ounce) package cream cheese, at room temperature
1 egg, beaten
20 fresh asparagus spears

Steps:

  • Trim crusts from bread, and flatten slightly with a rolling pin.
  • In a bowl, stir blue and cream cheeses together with the egg until well blended and creamy. Spread a thin layer of cheese mixture over each slice of bread. Roll one asparagus spear inside each, and fasten with a toothpick.
  • Melt butter in a small saucepan. Roll each asparagus wrap in butter to coat. Place on a baking sheet small enough to fit into the freezer, and freeze for one hour, or until butter hardens and wraps are somewhat firm. Remove pan from freezer, discard toothpicks, and cut each wrap in half crosswise. Store in a resealable plastic bag in the freezer until ready to use.
  • To serve, preheat oven to 400 degrees F (205 degrees C).
  • Arrange frozen asparagus wraps on an ungreased baking sheet. Bake in the preheated oven for 25 minutes, or until lightly browned. Check occasionally, and turn if necessary, for even browning and to prevent burning. Enjoy!

2 tablespoons extra-virgin olive oil
1/2 cup panko breadcrumbs
1 teaspoon lemon zest (1 lemon)
1/4 teaspoon red pepper flakes
1/8 teaspoon kosher salt
1/2 cup Italian parsley leaves, chopped
2 tablespoons grated Parmesan
4 tablespoons extra-virgin olive oil, plus more for drizzling
1 pound thin asparagus, trimmed
1/2 teaspoon kosher salt
4 large eggs

Steps:

  • For the gremolata: Heat a large skillet over medium heat. Add the breadcrumbs and olive oil and toast, stirring often with a wooden spoon until golden brown. Place in a small bowl and while still hot, add the lemon zest, red pepper flakes and salt. Mix together and cool the mixture to room temperature. Stir in the parsley and cheese.
  • For the asparagus: Wipe the pan with a clean dish towel. Place over medium-high heat and add 2 tablespoons of the olive oil. Add the asparagus and 1/4 teaspoon of the salt. Cook, stirring and flipping often with tongs until the asparagus is bright green, cooked through and slightly browned, 4 to 5 minutes.
  • Divide the asparagus among four serving plates. To the same pan, add the remaining 2 tablespoons of olive oil and place over medium-high heat. Crack 2 of the eggs into the pan, being careful as it may splatter, sprinkle with salt and reduce the heat slightly and cook until the edges are light brown and crispy and the whites are just set, 2 to 3 minutes. The yolk should still be runny. Repeat for the remaining 2 eggs. Using a slotted spatula, slide an egg on each plate. Sprinkle each dish with the breadcrumb gremolata and a drizzle of olive oil if desired.

  • Cook 1 bunch thin asparagus (trimmed and cut into 1/2-inch pieces) in salted boiling water until crisp-tender, 2 minutes. Drain and transfer to ice water to cool; drain and pat dry. Mix with 4 chopped hard-boiled eggs, 1 chopped avocado, 1/4 cup each plain yogurt, mayonnaise and minced red onion and 1 tablespoon each lemon juice and Dijon mustard; season with salt and pepper. These pinwheels are absolutely delicious... don't wait for a party to make them, whip them up for a weekend brunch or evening snack! You can make these up to 1 day ahead and refrigerate. You should get around 48-50 pinwheels/sandwiches if you slice each bread roll into 8 pieces, but it will depend on how large you slice them, so servings is only estimated. Don't purchase the completely square slices of bread, purchase the sandwich loaf that is higher on the top. Plan ahead these need to chill for a minimum of 2 hours before slicing. You can also make these with fresh steamed asparagus, but I prefer the canned better.

1/4 cup mayonnaise
6 slices soft sandwich bread (crusts removed, can use white or whole wheat bread I like to use both)
12 ounces smoked salmon
6 canned asparagus spears
1 pinch cayenne (optional)

Steps:

  • In a bowl stir together softened cream cheese and mayo; season with a pinch of cayenne pepper or to taste (if using) mix very well to combine.
  • Remove crusts from ends of bread slices.
  • Using a rolling pin roll out the bread slices to flatten slightly.
  • Divide/spread the the cream cheese mixture between the 6 slices of bread.
  • Divide and top with smoked salmon slices.
  • Place one asparagus spread along the shorter end of each slice of bread (trim ends more if necessary to roll).
  • Roll each slice of bread up firmly.
  • Wrap EACH roll of bread up firmly in plastic wrap and refrigerate for at least 2 hours or up to 24 hours.
  • Remove from fridge, using a serrated knife, slices each roll into 6-8 pieces.
  • Cover and refrigerate pinwheels if not serving immediately.

16 -20 large asparagus, stalks tough ends broken off
1 tablespoon extra virgin olive oil
1/2 teaspoon kosher salt
20 sprigs fresh thyme
4 slices sourdough bread
2 -4 tablespoons butter
1 garlic clove, peeled
2 tablespoons white wine vinegar
1 pinch kosher salt
4 extra-large eggs
3 ounces fontina or 3 ounces gruyere cheese, cut into four 1/8 inch thick slices
2 ounces good-quality prosciutto
extra virgin olive oil, for drizzling over the sandwiches
freshly cracked black pepper, to taste

Steps:

  • To roast the asparagus: Place the asparagus in a large bowl, drizzle the olive oil over it and sprinkle with the salt, tossing to coat.
  • Scatter 16 of the thyme sprigs onto a baking sheet and lay the asparagus over them to cover.
  • Roast in a preheated 450-degree oven for about 10 minutes, until tender to the touch but firm in the center.
  • To grill the bread: Butter each side of each slice.
  • In a pan over medium heat, lightly brown each side; remove to a plate and let cool just long enough to handle.
  • Rub one side of each slice with the garlic clove, then place on a baking sheet, garlic side up.
  • Arrange the asparagus evenly over the bread.
  • To poach the eggs: Use Paula G's easy poaching method Recipe #118761, or in a medium saucepan, bring 2 quarts of water to a boil.
  • Turn the heat down to just below a simmer and add the vinegar and salt.
  • Crack an egg into a small bowl to check that the yolk isn't broken.
  • Slowly stir the water in one direction to create a whirlpool effect.
  • Once the whirlpool has slowed a little, carefully slide the egg into the water against the side of the pan, following the current of the water as you pour, so the white envelops the yolk.
  • Repeat the process with each egg, poaching them for 2 to 2-1/2 minutes until the whites are set and the yolks are runny.
  • Carefully remove them with a slotted spoon to a plate; cup the eggs with your hand and tip the plate to drain off the water.
  • To assemble: Center an egg on top of the asparagus on each toast; drape a slice of the cheese over each egg.
  • Heat the sandwiches under the broiler just until the cheese melts.
  • Remove the sandwiches from the oven, rumple a slice of prosciutto over each, drizzle with a little olive oil and sprinkle with fresh pepper.
  • Garnish with the remaining thyme; serve immediately.

4 large hard-boiled eggs
1/4 cup mayonnaise
2 tablespoons unsalted butter, room temperature
1 teaspoon Dijon mustard
1/2 teaspoon white-wine vinegar
1/8 teaspoon coarse salt, plus more for cooking water
1 bunch (about 1 pound) asparagus, tough ends removed
16 slices thin white bread

Steps:

  • Peel eggs, and remove yolks; reserve whites for another use. With a wooden spoon, mash yolks in a small bowl. Add mayonnaise, butter, mustard, vinegar, and salt; stir until smooth. Cover, and refrigerate yolk butter until ready to use.
  • Prepare an ice bath; set aside. Fill a large skillet with 1 inch of water, and bring to a boil over high heat. Add a dash of salt, and asparagus, and blanch until just tender and bright green, 2 to 3 minutes. Place asparagus in ice bath to stop cooking and chill completely. Transfer to paper towels to drain, and set aside.
  • Spread butter on two slices of bread. Layer one slice with asparagus; place the other slice on top of it. Gently trim crusts with a serrated knife. Cut into finger sandwiches. Cover with a damp paper towel until ready to serve.

1 cup best-quality whole-milk ricotta cheese
Coarse salt and freshly ground pepper
2 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
10 ounces asparagus, trimmed
4 ounces small morel mushrooms (halved or quartered if large)
1/2 cup homemade or low-sodium store-bought chicken stock
3 tablespoons heavy cream
4 teaspoons finely chopped fresh flat-leaf parsley
4 teaspoons finely chopped fresh chervil
1 teaspoon fresh lemon juice
4 very fresh large eggs
4 slices (1/2 inch thick) rustic bread, lightly toasted

Steps:

  • Stir together ricotta, 1/4 teaspoon salt, and pinch of pepper in a bowl; set aside.
  • Heat a large skillet over medium-high heat. Add butter and oil; heat until butter has melted. Add asparagus, and cook, stirring, 1 minute. Stir in mushrooms. Add stock, and bring to a simmer. Cover, and cook 2 minutes. Uncover, and cook until asparagus is tender and bright green, about 2 minutes more. Add cream; cook until reduced and slightly thickened, 1 to 2 minutes. Stir in herbs and lemon juice. Season with salt and pepper; remove from heat.
  • Bring a large shallow saucepan of water to a simmer. Working with 1 egg at time, break into a cup, and slide egg into water. Cook the eggs until whites are set, 2 to 3 minutes. Using a slotted spoon, transfer eggs to a plate lined with paper towels to drain.
  • Spread ricotta mixture over bread slices, dividing evenly. Divide asparagus among slices, and drizzle with sauce. Top each with a poached egg. Season with salt and pepper. Serve immediately.

1/2 pound asparagus (preferably pencil-thin)
4 tablespoons olive oil
Salt and freshly ground black pepper to taste
4 large eggs
1/2 16-inch loaf Italian bread

Steps:

  • Wash the asparagus under cold running water. Snap off and discard the tough bottom portion. If using thicker asparagus, scrape each stalk to remove the skin, then cut it into thirds lengthwise, leaving the the asparagus head intact.
  • In a medium-size saucepan, heat the oil until just warm. Add the asparagus and salt. Saute over medium heat, stirring, for about 2 minutes. Cover and cook for another 2 minutes, shaking the pan or stirring occasionally.
  • Meanwhile, break the eggs into a bowl and beat, adding a pinch of salt and pepper. Cut the bread in half lengthwise. Remove the soft, doughy part and toast the loaf slightly.
  • Uncover the asparagus, raise the heat slightly and add the eggs, stirring. Cook for 1 minute, or until the eggs are set. Scoop onto the bread and cut in half.

  • Heat the oil in a large skillet over medium heat, and add the onion, asparagus, and 1/4 cup water. Season with 1/4 teaspoon of the salt, cover, and let simmer until the asparagus is tender, about 10 minutes, until the water has evaporated.
  • Beat eggs with the remaining salt. Pour the eggs into the skillet, and cook, stirring, until just beginning to set but still wet, about 1 minute. Sprinkle with the grated provola, then cover and cook until cheese melts, about 1 minute more. Uncover, stir to mix in the cheese, and serve on the toasted bread or rolls.

  • Place asparagus spears in a single layer in a shallow baking pan. Pour enough boiling water over asparagus to cover. Let stand for 10 to 12 minutes or until bright colored and crisp-tender. Drain. Finely chop three of the asparagus spears; set aside.
  • In a small bowl use a fork to mash avocado; stir in lime juice. Stir in chopped asparagus; set aside.
  • For omelet, in a small bowl whisk together eggs, the water, salt, and pepper until combined but not frothy. Heat an 8-inch nonstick skillet with flared sides over medium-high heat until skillet is hot. Melt 1 tablespoon of the butter in skillet. Add half of the egg mixture; reduce heat to medium.
