ROASTED BUFFALO SHRIMP
This novel twist on Buffalo wings is a terrific way to kick off a casual party. Serve the shrimp and dip with cucumber spears, celery stalks, and wedges of crunchy fennel.

Steps:
- Preheat oven to 450 degrees. Place 2 rimmed baking sheets in oven to heat. Stir together lemon zest, garlic, celery seeds, paprika, cayenne, 2 teaspoons salt, the honey, and oil in a large bowl. Add shrimp, and toss to coat well.
- Place shrimp in a single layer on hot pans. Roast, without flipping, until browned on bottoms and opaque throughout, about 5 minutes.
- Meanwhile, make the dip: Stir together lemon juice, sour cream, celery leaves, and 1/4 teaspoon salt. Serve with cooked shrimp.
CRISPY BUFFALO SHRIMP
We serve these with ranch for dipping. You could serve with some celery stalks as well. Great for parties or football games. Definite crowd pleaser.

Steps:
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C). Pat shrimp dry with paper towels.
- Combine flour, lemon pepper seasoning, baking powder, salt, garlic powder, and cayenne together in a bowl. Whisk eggs and milk together in a second bowl.
- Dip each shrimp in the egg mixture, then the flour mixture to evenly coat. Transfer prepared shrimp to a baking sheet until ready to fry. Sprinkle additional flour as needed to fully cover.
- Cook 8 to 10 shrimp at a time in the hot oil until golden brown on the outside and cooked through on the inside, about 5 minutes. Transfer to a baking sheet lined with paper towels. Repeat with remaining shrimp.
- Toss shrimp together with hot sauce in a large bowl until each piece is coated.

- Make dip:
- Stir together ingredients, 1/8 teaspoon salt, and 1/4 teaspoon pepper.
- Make shrimp:
- Prepare grill for direct-heat cooking over medium-hot charcoal (medium heat for gas); see Grilling Procedure . Toss shrimp with oil and 1/2 teaspoon each of salt and pepper. Oil grill rack, then grill shrimp, covered only if using a gas grill, turning once, until just cooked through, 7 to 8 minutes total. Stir together butter and hot sauce in a large bowl. Add shrimp and toss until coated. Serve shrimp with dip and celery.
GARLICKY BUFFALO SHRIMP
Way better than buffalo wings, and lower in fat! Sooo quick and easy, too! Shrimp are sauteed right in the buffalo sauce for optimum flavor, rather than deep fried. Adjust hot sauce amounts to suit your taste, and a dash or so of your favorite BBQ sauce added will mellow it if you'd like it milder. Below is a medium spicy recipe.

Steps:
- Saute garlic in olive oil and butter over medium heat until translucent, being careful not to brown it, about 2 minutes.
- Add a dash of salt and pepper, then hot sauce, and cook until garlic is softened, about a minute or two more. Again, do not brown it or it will become bitter!
- Taste and adjust seasonings. Add BBQ sauce if desired, or more hot sauce if you'd like it spicier. More butter can be added if desired, to make it milder as well.
- Add shrimp and saute until done. (Pink and slightly curled).
- Remove from heat, toss with parsley.
