- Heat a large skillet over medium high heat and add 1 Tbs of olive oil. Add the chicken and salt and pepper. Cook chicken about 3 minutes on each side or until thermometer reads 165 degrees and brown on each side. Set chicken aside on plate.
- In the skillet whisk together brown sugar, soy sauce, hoisin sauce, sweet chili sauce, ginger, red pepper flakes, garlic and lime juice. Bring to a boil over medium heat for 1-2 minutes until sauce thickens. **
- Add chicken back to the sauce and coat each side with the sauce. Garnish with sesame seeds and chopped green onions.

STICKY BAKED CHICKEN WINGS

- For the wings: Place the wings in a resealable plastic bag. To the wings, add the sesame oil, soy sauce and lime juice. Seal the bag and mix the wings around to coat in the marinade. Place in the refrigerator and marinate for 3 hours.
- Preheat the oven to 425 degrees F.
- Spread the wings on a rimmed baking sheet and bake for 20 minutes.
- For the sauce: While the wings are baking, combine the honey, chili paste, soy sauce, sesame oil, lime juice and garlic in a small saucepan over medium heat. Whisk until smooth. Bring to a simmer. Reduce heat to low and cook until the mixture has thickened, about 5 minutes.
- Remove the wings from the oven and brush with the sauce. Using a metal spatula, toss to coat well. Return the tray to the oven and cook an additional 5 to 10 minutes or until glazed and cooked through. Toss the cooked wings to coat well and serve.

- In a large skillet, heat oil over medium-high heat. Brown chicken on both sides., In a small bowl, mix soy sauce, wine, sugar and garlic; pour over chicken. Bring to a boil. Reduce heat; simmer, covered, 5-7 minutes or until a thermometer inserted in chicken reads 170°. Remove chicken; keep warm. , Remove cooking juices from pan; skim fat and return juices to pan. CRISPY SESAME CHICKEN WITH A STICKY ASIAN SAUCE
Crispy Sesame Chicken with a Sticky Asian Sauce - tastier than that naughty takeaway and super simple to make. Sweet, salty, crispy, sticky and a little bit spicy - it covers all the bases for one of these meals that everyone polishes off. Its a real family favourite!

- Heat the oil in a wok or large frying pan until very hot.
- Whilst the oil is heating, place the egg in one shallow bowl and the cornflour in another shallow bowl. Add the flour, salt, pepper, garlic salt and paprika to another shallow bowl and mix together.
- Dredge the chicken in the cornflour, then dip in the egg (make sure all of the chicken is covered in egg wash), and finally dredge it in the seasoned flour. Add to the wok and cook on a high heat for 6-7 minutes, turning two or three times during cooking, until well browned. You may need to cook in two batches (I find I can do it in one batch so long as it's no more than 3 chicken breasts). Remove from the pan and place in a bowl lined with kitchen towels.
- Add all of the sauce ingredients to the hot wok, stir and bubble on a high heat until the sauce reduces by about a third (should take 2-3 minutes). Add the chicken back in and toss in the sauce to coat. Cook for 1-2 minutes.
- Turn off the heat and divide between four bowls. Serve with boiled rice and top with sesame seeds and spring onions.

The original recipe was in "Eat, Shrink and Be Merry" by Janet and Greta Podleski. I have tweaked it a tiny bit for my family's tastes. We all loved this. It is a bit of a nuisance to have to pour off the sauce at the end there, but it is SO worth it! I love this served over white rice.

- Preheat oven to 400°F Spray a 9x13 baking pan with cooking spray. Arrange chicken thighs in pan in single layer.
- Whisk together sauce ingredients (barbecue sauce through cumin) in a medium bowl. Pour evenly over chicken. Turn pieces to coat both sides with sauce. Bake, uncovered, for about 40 minutes, or until chicken is no longer pink in the center.

STICKY CHICKY
My kids love this sweet and sour chicken served with rice. The recipe calls for marinating the chicken for a day before cooking. You can do this, but personally, I think it the flavor overpowers it if soaked that long if you are using skinless boneless breasts. I just cook it with the sauce.

- Combine vinegar, soy sauce, sugar, garlic and ginger in a large zip bag with the chicken pieces.
- Seal and turn several times to coat chicken pieces.
- Put in refrigerator for a day.
- The next day, put chicken and marinade in large heavy skillet or dutch oven.
- Over medium heat, bring the marinade to a boil.
- Reduce the heat to low, cover the skillet and simmer for 15 minutes, turning each piece of chicken occasionally.
- Preheat oven to 200°F.
- Uncover and continue to cook the chicken over low on the stove top, turning the chicken occasionally.
- When the chicken is done (juices run clear when pierced with a fork), put the chicken pieces on a platter, cover it with foil and keep warm in the oven.
- Turn the heat up to medium and cook the sauce in the skillet until it is syrupy and caramelized, stirring frequently.
- This will take about 10 to 15 minutes.
- After 10 minutes, turn the heat back to low so you don't overcook it.
- Return chicken to the skillet, coat it with the sauce and serve immediately.

- Heat sesame oil in a skillet over medium-high heat.
- Add chicken thighs to the skillet. Quickly brown on both sides.
- Add all remaining ingredients except the chopped scallions.
- Bring just to a boil.
- Reduce heat. Cover and gently simmer for about 30 minutes.
- Remove lid and turn over thighs. Continue to cook uncovered until sauce is a thick glaze. This may take only a few minutes. Careful not to let it burn.

- Combine all of the ingredients except the chicken in a shallow baking dish and stir until the sugars dissolve.
- Add the chicken and turn to coat well.
- Cover the dish tightly with foil and chill in the refrigerator for at least 24 hours.
- When you are ready to eat, transfer the chicken and the marinade to a large heavy nonstick skillet.
- Bring to a boil over medium heat.
- Reduce the heat to low, cover the skillet, and simmer for 8 to 13 minutes, moving each piece around with tongs occasionally.
- Check the breasts for doneness (160 F on an instant-read thermometer ) and remove to a shallow pan as soon as they test done.
- Cover the cooked chicken and place in a warm oven to keep warm.
- Increase the heat to medium when the chicken is all cooked and removed from the pan, and cook the marinade remaining in the skillet until syrupy, stirring occasionally at first, then stirring constantly as the mixture starts to thicken. This should take about 4 to 7 minutes total.
- Return the chicken to the skillet, coat it with the sauce, and serve sticky chicken immediately - with lots of hot cooked rice and napkins!

MY MOM'S EASIEST STICKY CHICKEN
Steps:
- Pre-heat the oven to 180°c.
- Place the chicken in an oven-proof baking dish.
- Whisk together the mayonnaise, chutney, lemon juice, salt and water and pour over the chicken.
- Place in the oven and allow to bake for 30-45 minutes until the chicken is golden brown and the sauce is sticky. (I spoon some of the sauce over the chicken at the 20 minutes mark.)
- Remove from the oven and serve.
