This Honey Roast Duck recipe makes a beautiful holiday main dish but is easy enough for any special occasion or Sunday dinner. With crispy skin and tender, juicy meat, this post will show you how to cook duck to get that beautiful roasted look and amazing flavor!

2 teaspoons salt
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon black pepper
1/4 cup honey
5 pounds whole duck

Steps:

  • Completely defrost the duck in the refrigerator for 2-3 days if using a frozen duck, then remove giblets and neck. Rinse well, inside and out, with cold water and pat completely dry using paper towels. Let the duck sit out on the counter for 30 minutes to come up in temperature a bit.
  • Use a sharp knife to score the skin on the duck's breast in a diamond pattern, trying to cut only the skin without reaching the breast meat below. If there are other fatty areas like where the duck legs connect to the body, give those a poke or slash as well.
  • Stuff the cavity of the duck with garlic cloves, a quartered onion, and a couple sprigs of rosemary. You could also use lemon slices or a quartered apple.
  • Fold the loose skin on both ends of the duck to hold everything inside and tie the duck legs with butcher's twine or string to truss it by tying a loop around one duck leg, then crossing it over the other leg and wrapping the twine around both legs a time or two, then tying it off.
  • In a small bowl, combine the salt, paprika, garlic powder, and pepper, then rub over all over the duck.
  • Place the duck with the scored breast side up on a wire cooling rack over a baking sheet or on the rack of a large roasting pan.
  • Start the duck by roasting it at a higher temperature of 425 degrees for 15 minutes, then decrease the oven temp to 350 degrees and roast for 1 hour and 15 minutes. At the 60 minute mark, brush half of the honey over the duck, then cook for 10 minutes before brushing the duck with the remaining honey.
  • If the juices are still running pink after a total of 1 1/2 hours, let it roast another 15 minutes before pulling it out of the oven and tenting with foil for 15 minutes to let the juices redistribute before carving. The duck will be done with the juice running from the thigh after poking it are just barely a rosy pink color.

Steps:

  • Gather the ingredients.
  • Preheat a large skillet over medium-high heat.
  • Cut small slits in the skin side of the duck breast. The slits should be shallow without slicing all the way through into the flesh.
  • Season the duck e both sides with the salt and pepper
  • Sear the duck breasts, skin side down for 3 minutes.
  • Reduce the heat to medium-low and flip the duck breasts over, cooking them for an additional 4 to 5 minutes.
  • Transfer them to a plate and cover them with foil so they retain their warmth.
  • Pour off the rendered duck fat and turn the heat up to medium.
  • Deglaze the skillet with the honey and balsamic vinegar , scraping up the browned bits as the sauce cooks.
  • Simmer the honey vinegar glaze for 2 to 3 minutes until it turns slightly thick. Season with just a dash of salt.
  • Return the duck breasts to the pan, turning them a few times to coat them evenly with the honey glaze.
  • Carve and serve them immediately, garnished with a drizzle of extra glaze and the chopped nuts if desired.

1 whole duck, from maple leaf farms defrosted, giblets removed
salt and pepper, To Taste
10 tablespoons balsamic vinegar
2 teaspoons balsamic vinegar
1/4 cup honey
1/2 teaspoon black pepper, freshly ground
1/2 teaspoon red wine vinegar

Steps:

  • Preheat oven to 425°F.
  • Remove (thawed) duck from bag and rinse under cold water.
  • Generously season duck cavity and skin with salt and pepper. Tie legs together with string.
  • Roast duck, breast side up, for 20 minutes. Remove duck from oven.
  • Rake skin numerous times with a sharp meat fork being careful not to pierce meat; return to oven. Continue to roast for 1 hour and 10 minutes. While roasting, frequently baste duck with juices from bottom of roasting pan.
  • While duck is roasting, combine 10 tablespoons balsamic vinegar, honey and pepper in small saucepan. Over high heat, bring to a boil. Boil until mixture starts to thicken. Stir constantly until mixture is very thick and reduced to about 3 tablespoons. Remove from heat; add remaining balsamic and red wine vinegar. Keep warm until duck is cooked. (If glaze cools and becomes too thick, warm over low heat, stirring constantly.).
  • When duck is cooked, remove from oven and dry skin with paper towels. Brush duck with a thick coat of warm glaze; place in oven for 1 minute. Remove from oven and serve immediately. Garnish with fresh herbs.

DUCK BREAST WITH BALSAMIC VINEGAR GLAZE

1 cup balsamic vinegar
2 tablespoons honey
1/4 cup dried currants
1/4 teaspoon cayenne pepper
4 whole duck breasts, approximately 6 to 8 ounces each
Salt and freshly ground black pepper to taste
3 tablespoons pine nuts, toasted 4 minutes in a 250 degree oven

Steps:

  • Combine the balsamic vinegar, honey, currants and cayenne in a small pot. Bring to a boil, reduce to a simmer and reduce by half to form a thick, syrupy glaze. Remove from the heat and set aside.
  • With the point of a knife, score the skin side of the duck breasts in a crosshatch pattern, being careful not to pierce the flesh.
  • Season the duck breasts with the salt and pepper. Heat a saute pan over medium heat 2 minutes before adding the breasts, skin-side down. Cook over medium to low heat approximately 6 to 8 minutes to render the fat.
  • Carefully remove the excess fat from the saute pan, then turn the breasts over and saute the flesh side 3 to 4 minutes before removing the duck breasts from the pan.
  • The breasts should now be medium rare. Slice lengthwise or crosswise and arrange several slices on each plate. Reheat the balsamic vinegar glaze and drizzle some over each of the duck breasts. Sprinkle with toasted pine nuts and serve with Ginger Chestnut Stuffing

DUCK WITH BLACKBERRY SAUCE

3 tablespoons butter
3 tablespoons sugar
1/3 cup dry white wine
1/3 cup orange juice
2 tablespoons raspberry vinegar
1 1/4 cups frozen blackberries, thawed
1 1/4 cups canned beef broth
1/2 cup canned low-salt chicken broth
2 tablespoons Cognac or brandy
1 tablespoon pure maple syrup
4 5- to 6-ounce duck breast halves with skin
Additional blackberries (optional)

Steps:

  • Melt 2 tablespoons butter in heavy large nonstick skillet over medium-high heat. Add sugar; stir until sugar dissolves and mixture turns deep amber color, about 5 minutes. Add wine, orange juice and vinegar (mixture will bubble vigorously) and bring to boil, stirring to dissolve caramel. Add 1 1/4 cups berries and both broths and boil until sauce thickens and is reduced to about 1 cup, stirring occasionally, about 25 minutes. Strain sauce through sieve into heavy small saucepan, pressing on berries with back of spoon. Mix in Cognac and maple syrup. Set sauce aside. (Can be prepared 1 day ahead. Cover and chill.)
  • Preheat oven to 400°F. Trim any excess fat from duck breasts. Cut three 4-inch-long by 1/16-inch-deep lengthwise slits in skin (not meat) of duck. Season duck with salt and pepper. Heat heavy large ovenproof skillet over high heat until hot. Add duck, skin side down, and sear until brown, about 5 minutes. Turn over; cook 3 minutes. Transfer skillet to oven; continue cooking to desired doneness, about 3 minutes for medium.
  • Meanwhile, bring sauce to simmer over low heat. Add remaining 1 tablespoon butter and whisk just until melted. Season to taste with salt and pepper.
  • Spoon sauce onto plates. Slice duck and place atop sauce. Garnish with additional berries, if desired, and serve.

2 (4 1/2 lb) ducks, neck and giblets removed (Muscovy duck is recommended)

3 medium shallots, minced
1 cup demi-glace
1 tablespoon lavender honey, plus
1 teaspoon lavender honey
2 teaspoons red wine vinegar

Steps:

  • Make the glaze: in a small bowl, combine the honey, boiling water, and pepper; stir to blend and set aside.
  • Preheat oven to 275°; season ducks with salt and pepper.
  • With a kitchen fork, prick skin about ¼ inch deep all over, particularly in the fatty area around the thighs and wing area; do not pierce the meat.
  • Place duck breast-side down on a rack in a roasting pan; pour boiling water over them; roast for 2 hours.
  • Turn the duck breast-side up and brush with the glaze.
  • Roast for another 1 to 1 ¼ hours, or until the legs wiggle easily; transfer to a carving board and let cool.
  • Using heavy poultry shears, quarter the ducks-cut the backbones out to make this easier.
  • Place the duck quarters in plastic bags and refrigerate.
  • About 45 minutes before serving, preheat the oven to 375°; place the duck, skin-side up on a rimmed baking sheet and roast for 30 minutes, or until the duck is cooked through and crisp.
  • Meanwhile, make the sauce-in a small skillet, melt butter over med-highheat.
  • Add in shallots; saute for 2 minutes or until softened.
  • Add in demi-glace, honey, and vinegar; turn up heat to high, and reduce the sauce to a light glaze, about 3 minutes.
  • Whisk the remaining 1 tablespoons butter into the sauce to thicken it and add a sheen; season with salt and pepper.
  • Place the duck on a platter and spoon over a little sauce; serve the remaining sauce on the side.

1 (2 kg) duck
40 g maple syrup
60 g honey
20 g Dijon mustard
1/2 teaspoon dried thyme
100 ml orange juice
100 ml balsamic vinegar
10 g garlic
40 ml orange liqueur or 40 ml port wine

Steps:

  • Preheat oven to 190c.
  • Mix all the ingredients (except the duck!) together in a small saucepan and simmer for 5 minutes.
  • Reserve 1/4 of the glaze.
  • Sit the duck on a rack over a baking dish, baste and place in oven.
  • Baste the duck every 10 minutes throughout the cooking process with remaining 3/4 of glaze.
  • A 2kg duck should take about 1 hour 15 minutes to cook, but give one of his legs a pull, and if it moves freely and any juices run clear, your duck will be cooked.
  • Place on a serving platter brush with reserved glaze and serve.
  • Pass any remaining reserved glaze to be spooned over carved duck.

2 lbs. boiling potatoes
4 oz. bacon
4 eggs
1 c. creme fraiche
salt and black pepper
1 c. grated Emmenthal cheese
3 duck breasts, boned
1/2 c. acacia honey
1/2 c. raspberry vinegar

Steps:

  • Cook the unpeeled potatoes in boiling salted water until cooked through, but not mushy; drain and reserve. Cut the bacon into thin strips and cook over moderate heat until brown and crisp. Remove with a slotted spoon and reserve. Peel potatoes and pass them through a food mill. Stir in the eggs, creme fraiche, bacon, salt and pepper. Place the mixture in an overproof serving dish and cover with cheese. Preheat oven to 425 degrees F. Score the skin of each duck breast 4 times and roast, skin-side down, for 15 mins; remove from oven and sprinkle with salt and pepper. Roast breasts for 5 mins more. At this time place the potato dish in the oven to bake for 15 mins. Remove the duck from the oven and keep warm. Remove almost all of the fat from the roasting pan; place pan over low heat; stir in honey, vinegar, salt and pepper. Cook, stirring continuously for about 3 mins. Remove potatoes from the oven. Cut the duck into 1/2" slices and serve with sauce and potatoes.

STICKY DUCK WITH CHINESE PICKLED RADISHES

2 bunches radishes , sliced, leaves reserved (see below)
2 tbsp golden caster sugar
1 tbsp white wine vinegar
1 tbsp low-salt soy sauce
1 tbsp brown sugar
1 red chilli , deseeded and sliced
1 tsp clear honey
1 tbsp low-salt soy sauce
1 tbsp rice wine
1 tbsp white wine vinegar
1 tsp five spice powder
2 duck breasts
1 tbsp vegetable oil
leaves from 2 bunches radishes
2 garlic cloves , sliced
1 tsp low-salt soy sauce
1 tsp sesame oil
1 tsp sesame seeds

Steps:

  • Put the radishes in a sieve over a bowl. Sprinkle with the caster sugar and 2 tsp salt, and leave for at least 30 mins or up to 1 hr. Make a dressing by mixing the vinegar, soy sauce, brown sugar and chilli together until the sugar dissolves. Gently press the radishes to release any liquid, then tip them into a bowl and pour over the dressing.
  • Heat oven to 180C/160C fan/gas 4. For the duck, mix the honey, soy, rice wine and vinegar in a small bowl. Slash the skin of the duck breasts and season with salt, pepper and the five-spice powder. Heat an ovenproof frying pan and cook the duck, skin-side down, for 5 mins until golden. Flip over, baste with the honey and soy mix, then put the pan in the oven for 15-20 mins, turning the breasts a couple of times to glaze the skin. Leave the duck in the pan to rest.
  • For the radish leaves, heat the oil in a small wok, add the leaves and garlic, and stir-fry until the leaves are just wilted. Splash with soy, drizzle with sesame oil and scatter with sesame seeds. Serve the duck breasts whole or sliced - it's up to you - with the pickled radishes and the stir-fried leaves.

Using a slotted spoon, transfer the pancetta to a plate. Add the onions and a generous pinch of salt to the skillet and cook over moderate heat, stirring occasionally, until browned in spots and heated through, about 3 minutes; transfer to the plate. Add the remaining 2 tablespoons of olive oil to the skillet, then add the mushrooms and a generous pinch of salt and cook over moderately high heat, stirring occasionally, until browned and tender, about 7 minutes. Transfer to the plate and keep warm.
  • Transfer the duck to a plate and keep warm. Using a slotted spoon, transfer the vegetables to a medium bowl. Skim off the fat from the casserole, then return the vegetables to the casserole and bring to a boil. Simmer over high heat until reduced by half and the vegetables are coated in the sauce. Stir in the vinegar and honey and season with salt and pepper.
