1/4 cup DOLE® Pineapple Juice
1 tablespoon soy sauce
1 teaspoon packed brown sugar
1 clove garlic, finely chopped
2 (8 oz.) boneless, skinless chicken breasts
1 pkg. DOLE All Natural Asian Island Crunch™ Salad Kit
1 cup red bell pepper, thinly sliced
1/4 cup DOLE® Red Onion, thinly sliced

Steps:

  • Combine pineapple juice, soy sauce, brown sugar and garlic with 1 tablespoon provided sesame ginger dressing in small sauce pan. Bring to boil and reduce to 1/3.
  • Heat the grill or grill pan over medium-high heat; brush grill lightly with oil or spray with non-stick vegetable cooking spray.
  • Baste chicken with pineapple mixture. Grill chicken, turning once (and continuing to baste), 10 to 12 minutes or until no longer pink in center.
  • Slice chicken. Place salad blend in large bowl with provided accompaniments and toss with remaining dressing.
  • Arrange salad on plates; top with bell pepper, onion, and chicken.

1/4 cup chopped thawed frozen pitted sweet cherries, juices reserved
2 tablespoons low-sodium soy sauce
2 tablespoons creamy peanut butter
1 tablespoon rice vinegar (unseasoned)
3 tablespoons vegetable oil
1/2 teaspoon sesame oil
1 cup thawed frozen pitted sweet cherries, juices reserved
1/2 cup low-sodium soy sauce
1/2 cup dry white wine
1/4 cup packed light brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon freshly grated ginger
1 clove garlic
1 1/2 pounds skinless, boneless chicken breasts
Vegetable oil, for brushing
2 cups sauerkraut, drained and rinsed
1/2 12-ounce package wonton wrappers, thinly sliced
6 cups chopped romaine lettuce
1 red bell pepper, julienned
1 green bell pepper, julienned
3 scallions, julienned
2 medium carrots, julienned
1 cup snow peas, trimmed and julienned
1 cup drained sliced water chestnuts

Steps:

  • Make the dressing: Whisk the cherries, 1 tablespoon reserved cherry juice, the soy sauce, peanut butter, vinegar, vegetable oil and sesame oil in a bowl. Set aside.
  • Make the chicken: Put the cherries, 3 tablespoons reserved cherry juice, the soy sauce, white wine, brown sugar, Worcestershire sauce, ginger and garlic in a blender and puree until the cherries and garlic are finely chopped. Pour the marinade into a large resealable plastic bag. Pierce the chicken all over with a fork. Add to the bag with the marinade, seal and refrigerate at least 20 minutes or up to 8 hours. Preheat a grill to high. Brush the grates with vegetable oil. Remove the chicken from the marinade, brushing off any excess. Grill the chicken, covered, until the juices run clear, 5 to 7 minutes per side. Transfer to a cutting board and let rest 5 minutes.
  • Meanwhile, prepare the salad: Preheat the oven to 350 degrees F. Soak the sauerkraut in a bowl of ice water 10 minutes; drain, rinse and squeeze out the excess water. Arrange the wonton strips in a single layer on a baking sheet and bake until crisp, about 5 minutes. Toss the sauerkraut and romaine with half of the dressing in a bowl; divide among plates. Top with the bell peppers, scallions, carrots, snow peas and water chestnuts. Slice the chicken and serve with the salad. Top with the crispy wonton strips. Serve with more dressing on the side. 1 3/4 cups Swanson® Chicken Stock
2 tablespoons soy sauce
1 tablespoon vinegar
1 teaspoon sugar
1 teaspoon garlic powder
1/8 teaspoon crushed red pepper
4 skinless, boneless chicken breast halves

Steps:

  • Stir the stock, soy sauce, vinegar, sugar, garlic powder and red pepper in a shallow nonmetallic dish or a gallon-size resealable plastic bag. Add the chicken and turn to coat. Cover the dish or close the bag and refrigerate for 1 hour. Remove the chicken from the marinade.
  • Lightly oil the grill rack and heat the grill to medium. Grill the chicken for 15 minutes or until it's cooked though, turning and brushing often with the marinade.
  • Heat the remaining marinade in a 1-quart saucepan over medium-high heat to a boil and serve with the chicken.

1/4 teaspoon ground ginger
1/3 cup honey
1/3 cup red wine vinegar
4 boneless skinless chicken breast halves
1/4 cup vegetable oil
1 tablespoon Dijon mustard
1/3 cup Worcestershire sauce
8 cups mixed greens

Steps:

  • Place chicken breasts in a deep dish.
  • In small bowl, whisk together all other ingredients EXCEPT lettuce.
  • Pour half of this mixture over chicken, reserving remaining halv as dressing.
  • Cover breasts & refrigerate for 30 minutes.
  • Preheat broiler or prepare grill.
  • Place chicken under broiler or on grill, cooking until no longer pink in center & juices run clear, about 5-10 minutes on each side.

1 lb boneless skinless chicken breast
2 tablespoons sesame oil
2 minced garlic cloves
16 wonton wrappers, cut into strips
2 -3 chopped romaine lettuce hearts
1 cup shredded carrot
1 bunch chopped onion
1/4 cup chopped cilantro
1/2 cup slivered almonds
1 cup mandarin orange, well drained
3 tablespoons hoisin sauce
2 tablespoons peanut butter
2 teaspoons brown sugar
3/4 teaspoon chili paste (I've used Texas Pete's to substitute)
1 teaspoon fresh ginger, grated
3 tablespoons rice wine vinegar
1 tablespoon sesame oil

Steps:

  • Place the chicken in a ziplock with 2 T sesame oil and 2 garlic cloves. Let marinade for 20 minute.
  • Whisk all dressing ingredients together till well incorporated, set aside.
  • Place wonton strips onto sprayed baking sheet (or you can just fry them) Bake just till browned at 350° (watch closely).
  • Grill chicken breasts till no longer pink. Cool and slice into strips.
  • Toss romaine, carrots, cilantro, and onions. Then add chicken, wontons, almonds and mandarin oranges and toss w/ dressing till well coated. Serve.

This is a super-simple recipe that I received in an e-mail from Swanson's Creative Cooking. I have not tried it yet, but I'm posting it for Zaar World Tour II. (Note: Cooking time includes 1 hour marinating time.)

2 tablespoons soy sauce
1 tablespoon vinegar
1 teaspoon sugar

Steps:

  • MIX broth, soy, vinegar, sugar, garlic powder and red pepper in shallow nonmetallic dish. Add chicken and turn to coat. Cover and refrigerate 1 hours Remove chicken from marinade.
  • GRILL or broil chicken 15 minute or until done, turning and brushing often with marinade.
  • HEAT remaining marinade to a boil and serve with chicken.

2 lbs chicken (bone-in or boneless, your choice)
1 cup Bourbon
1 cup soy sauce
1/2 cup brown sugar
1 teaspoon paprika
1 tablespoon molasses
3 garlic cloves, smashed
2 tablespoons ginger, freshly grated
1 1/2 teaspoons onion powder
1 1/2 teaspoons garlic powder

Steps:

  • Combine all ingredients (except chicken) for marinade (may be processed in a blender).
  • Set aside 1/2 cup of this marinade
  • Place the rest of the marinade into a Ziploc bag with chicken and distribute evenly.
  • Marinate chicken for 6-12 hours in refrigerator.
  • Remove chicken from marinade and drain. Allow to sit at room temperature while grill heats up.
  • Grill over medium high heat (grill open) for 5 minutes, then close grill and reduce heat; continue cooking over low heat, for 15-20 minutes, or until chicken is done (juices will run clear when pierced with a fork).
  • Baste with fresh marinade every few minutes, turning chicken to cook both sides evenly.
