TAILGATING ASIAN WINGS

1 pound chicken wings, cut into segments, tips removed and discarded
1 tablespoon salt
1 tablespoon freshly cracked black pepper
2 tablespoons soy sauce
1/4 cup honey
2 teaspoons lime zest
3 tablespoons lime juice, from 1 lime
1/4 cup orange juice, from 1/2 orange
1 tablespoon freshly grated ginger
1 teaspoon chili garlic paste
1/2 teaspoon sesame oil
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon granulated garlic
1 tablespoon oyster sauce

Steps:

  • For the wings at home:
  • Preheat the oven to 350 degrees F.
  • Season the wings with salt and pepper. Arrange the chicken wings on a baking sheet in a single layer. Put in the preheated oven and cook for 45 minutes.
  • Remove the wings from the oven to a bowl and allow to cool. Cover and refrigerate until ready to finish at the event on the barbecue.
  • For the Asian sauce at home:
  • Combine all of the ingredients in a resealable gallon-size plastic bag and combine well.
  • For the wings tailgaiting:
  • Preheat a grill to 350 degrees F, prepared for indirect heat. Add all the wings and cook for 10 to 15 minutes to reheat and get some grill marks, turning after 7 minutes. Remove the wings from the grill to a serving bowl. Add the sauce and toss to combine.

⅓ cup soy sauce
⅓ cup brown sugar
2 tablespoons lime juice
2 tablespoons orange juice
1 tablespoon Thai-style sweet chili sauce
1 teaspoon chile-garlic sauce (such as Sriracha®)
3 cloves garlic, minced
¼ teaspoon curry powder
4 skinless, boneless chicken thighs

Steps:

  • Place the soy sauce, brown sugar, lime juice, orange juice, sweet chili sauce, chili-garlic sauce, garlic, and curry powder in a large plastic zipper bag. Seal and knead the bag with your fingers to mix all the ingredients and dissolve the sugar. Place the chicken thighs into the marinade, squeeze out the air from the bag, zip the bag closed, and refrigerate for 4 hours or overnight.
  • Preheat an outdoor grill for medium-low heat; lightly oil the grate.
  • Remove the chicken from the bag, pour the excess marinade into a small saucepan, and bring to a full boil for about 1 minute to sterilize the marinade.
  • Grill the chicken thighs until they are no longer pink in the middle and show grill marks, about 25 minutes, basting them generously with the sterilized marinade as they grill.

4 lbs chicken wings
1/2 cup honey
1/2 cup white sugar
1/4 cup gin
2 tablespoons garlic cloves, mashed
1/4 cup ketchup
1/4 cup soy sauce
1 cup oyster sauce
1/2 cup teriyaki sauce

Steps:

  • Mix up the marinade ingredients. Toss in the chicken wings, stir and then let marinate overnight. It's a good idea to reserve some of the marinade (before adding the chicken) and keep it for basting your wings as they come off the grill.
  • Preheat grill to medium heat.
  • Place your wings on the grill. Remember, there's lots of honey and sugar in this recipe. So, don't let the heat get too high and keep the wings turning.
  • After about 15 to 20 minutes your wings should be cooked through, depending on your grill. Remove from grill.
  • Baste the wings with your reserved marinade and enjoy.

¼ cup Asian chile paste (such as sambal oelek)
2 tablespoons fish sauce
2 tablespoons soy sauce
2 teaspoons chopped garlic
1 teaspoon grated fresh ginger
1 lime, juiced
2 ½ pounds jumbo chicken wings, tips removed

Steps:

  • Whisk chile paste, fish sauce, soy sauce, garlic, ginger, and lime juice together in a bowl, and pour into a resealable plastic bag. Add chicken wings, coat with the marinade, squeeze out excess air, and seal the bag. Marinate, turning the bag several times, in the refrigerator for 3 hours to overnight.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove chicken wings from marinade and discard unused marinade.
  • Grill chicken on the preheated grill until no longer pink at the bone and the juices run clear, 12 to 14 minutes.

2 1/2 lbs whole chicken wings
1 cup all-purpose flour
2 teaspoons salt
2 teaspoons paprika
1/4 teaspoon pepper
oil, for deep-fat frying
1/4 cup creamy peanut butter
2 tablespoons water
2 teaspoons louisiana hot sauce (increase or decrease to your taste)
1 1/2 teaspoons brown sugar
1 1/2 teaspoons lemon juice
1 1/2 teaspoons soy sauce
1/2 teaspoon ground ginger

Steps:

  • Cut chicken wings into three sections; discard wing tip sections. In a large resealable plastic bag, combine the flour, salt, paprika and pepper. Add wings, a few at a time, and shake to coat.
  • In an electric skillet or deep-fat fryer, heat oil to 375°. Fry wings, a few at a time, for 6-8 minutes or until no longer pink, turning once. Drain on paper towels. Transfer wings to a large bowl and keep warm.
  • In a small saucepan, combine the sauce ingredients. Cook and stir over medium heat for 1-2 minutes or until smooth. Pour over chicken wings and toss to coat. Serve immediately.

  • Add the wings to the bowl and toss to coat. Let the wings marinate 1-4 hours (in the refrigerator), stirring occasionally to make sure every piece marinates.
  • Grill the wings. I prefer charcoal but gas works as well. Set your grill up for high indirect heat. Cook the wings for about 12-15 minutes.
  • Move a few wings over direct heat. Watch them closely. You want them nicely crisped and brown. You don't want golden black (which is just black and nasty if you are new to this blog). Burnt wings suck.
