This recipe comes from a popular authentic Asian restaurant in San Fransisco, California This makes a big amount of sauce, but it can be scaled down to meet requirements, or it will store nicely in the fridge for up to 2 weeks.

2 1/4 quarts cider vinegar
22 ounces honey
2 cups chopped green onions
3/4 cup fresh minced ginger
2/3 cup asian garlic and red chile paste (or 2/3 cup chili-garlic sauce)
10 ounces sesame oil

Steps:

  • In a large bowl, combine all ingredients except the sesame oil; stir to mix thoroughly.
  • Using a wire whisk, slowly drizzle in sesame oil while whisking sauce to combine Sauce can be stored in the refrigerator for up to 2 weeks.
  • Serve at room temperature.
  • Whisk again before serving to combine ingredients.

2 tablespoons rice vinegar
2 tablespoons granulated sugar
1 tablespoon light soy sauce
1 tablespoon dark soy sauce
2 teaspoons chinese rice wine or 2 teaspoons dry sherry
1/4-1/2 teaspoon chili sauce (Sriracha to taste)
1/4 teaspoon sesame oil
1 1/2 teaspoons cornstarch
1 tablespoon water
1 tablespoon vegetables or 1 tablespoon peanut oil
3 -4 medium garlic cloves, finely chopped

Steps:

  • Combine the rice vinegar, sugar, soy sauces, rice wine or sherry, chili sauce and sesame oil in a small bowl, stirring to combine. In a separate small bowl, dissolve the cornstarch in the water.
  • Heat 1 tablespoon oil over medium heat in a saucepan. Add the garlic and cook, stirring until aromatic (about 30 seconds).
  • Quickly restir the sauce, add it into the saucepan and bring to a boil, stirring. (This will take about a minute).
  • Re-stir the cornstarch/water mixture and add it to the sauce, stirring to thicken. Refrigerate after use.

I created this recipe for a chili cook off at my fiances work, and it won! I even made a double batch and it was gone in minutes! I think it's a completely original spin on chili with an asian flare!

3 -4 tablespoons oil
2 small onions, chopped finely
1 shallot, minced
2 garlic cloves, minced
2 serrano peppers, chopped finely (if you don't like spicy I would only add in 1 pepper)
1 cup vegetable stock
2 tablespoons hoisin sauce (to taste)
1 teaspoon sesame oil
1/2-1 teaspoon chili oil
1 -2 teaspoon Chinese five spice powder, to taste
1 -2 teaspoon soy sauce, to taste
1 (15 ounce) can black beans
1 (15 ounce) can pinto beans
1 (15 ounce) can chickpeas
chow mein noodles
chopped green onion

Steps:

  • Heat the oil in a large pan and sauté the onion, shallot, garlic and Serrano pepper until onion is tender.
  • Add the Chinese 5 spice and mix around until combined completely.
  • Pour in veggie stock and stir.
  • Let that simmer, and then stir in the hoisin sauce, sesame oil, chili oil, and soy sauce. You don't have to be exact with measurement because all of these flavors are pretty acquired, so do what you like.
  • Once all of that is mixed you can mix in the drained beans.
  • You can go ahead and serve it now, but I have also transferred this to a slow cooker and cooked from 1-12 hours, the longer you cook it the softer the beans with get.
  • Serve with the crunchy chow mein noodles and chopped green onion.

5 cloves Garlic
1 pound Raw whole shrimp
1 tablespoon Lee Kum Kee garlic chili sauce
1/2 tablespoon Soy sauce
1 tablespoon Water
1/2 tablespoon Brown sugar
1/2 tablespoon Vegetable oil
3 sticks Green onion

Steps:

  • Mince 5 cloves of garlic.
  • Cut 3 sticks of green onion.
  • Pour ½ tablespoon of vegetable oil into a non-stick pan and turn on medium to high fire. Then, add minced garlic and stir fry for a minute.
  • Next, add the washed whole raw shrimp and stir fry a little bit.
  • After that, add 1 tablespoon of chili garlic sauce, ½ tablespoon of soy sauce, ½ tablespoon of brown sugar and 1 tablespoon of water and stir fry a few minutes.
  • Until the shrimp cooks. It turns orange red. (Around 3-5 minutes and don't over cook them because the texture of shrimp will change.)
  • When the shrimp is cooked, add the chopped green onion, mix it and ready to serve.

1 cup chopped Chili Peppers ((about 100 grams). *for a more mild hot sauce, start with less chilies)
3 Tablespoons Vegetable Oil
2 heads Garlic ((crushed or minced))
3 Shallots (, medium size (minced))
15 ounces Tomato Sauce
1/4 cup Rice Vinegar
3 Tablespoons Sugar
1 Tablespoon Fish Sauce ((this is a vital ingredient for wonderful flavor, please don't skip it))

Steps:

  • Rinse, clean and remove stems of the chiles. Blot dry with paper towel.
  • Wearing rubber gloves, mince chili peppers. The smaller the cut, the smoother your final sauce will be. Or you can just leave them minced small for a more spicy bite and bigger texture.
  • In medium sauce pan, heat oil then add minced garlic and shallots. Over medium heat saute garlic and shallots for a about 1 minute or until light brown and fragrant. Fry the garlic and shallots enough so that they become crispy, but not burnt. (don't burn your garlic!)
  • Add tomato sauce and minced chili peppers. Let the sauce come to a simmer then lower heat to keep at a low simmer. Add fish sauce, vinegar, and sugar. Mix well.
  • Continue simmering the garlic hot sauce for about 5 minutes. This will break down the chili peppers and soften them to create the smooth consistency.Remove hot sauce from heat and allow to cool completely.
  • Transfer hot sauce sauce to blender and blend until smooth or until most of the chili pepper skin and seeds break down- preferably on the "liquefy" mode.Taste the hot sauce to further customize the hot sauce to your liking.
  • Add more sugar, vinegar or water. Blend one last time till smooth. Pour into clean, air tight jar and refrigerate and use within about 1 week. Or pour into sterilized jars and use safe canning techniques to store for longer.

Steps:

  • Add sugar, cayenne, minced garlic, soy sauce, salt, vinegar, and water to a saucepan and let it simmer (about 3-4 minutes), stirring occasionally till the sugar dissolves completely and the mixture reduces slightly.
  • Add the chilli paste and mix. Simmer again for 2-3 minutes.
  • Mix together cornflour and water in a bowl till no lumps exist and stir in this cornflour slurry into the sauce. Mix continuously till the sauce comes to a boil. Then reduce the heat and simmer till for 3-4 minutes till the sauce is thick, translucent and shiny. Turn off the flame.
  • Serve immediately or cool completely and then transfer to a clean jar. Refrigerate for up to 4 weeks.

  • Add the strained juice and reserved chunky bits to a pot.
