3 cups finely chopped cooked chicken
1/2 cup shredded carrots
1/4 cup finely chopped water chestnuts
2 teaspoons cornstarch
1 tablespoon water
1 tablespoon soy sauce
1/2 to 1 teaspoon ground ginger
1 package (16 ounce) wonton wrappers
2 tablespoons butter, melted
1 tablespoon canola oil
Plum or sweet-and-sour sauce

Steps:

  • In a large bowl, combine the chicken, carrots and water chestnuts. In a small bowl, combine the cornstarch, water, soy sauce and ginger until smooth. Add to chicken mixture; toss to coat. , Position a wonton wrapper with one point toward you. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Place 1 teaspoon of filling in the center of wrapper. Fold bottom corner over filling; fold sides toward center over filling. Roll toward the remaining point. Moisten top corner with water; press to seal. Repeat with remaining wrappers and filling., Place on greased baking sheets. Combine butter and oil; brush over wontons. Bake at 375° for 10-12 minutes or until golden brown. Serve with plum or sweet-sour sauce.

Cooking spray
3 tablespoons creamy peanut butter
3 tablespoons water
2 tablespoons fresh lime juice
1 tablespoon rice vinegar
1 tablespoon honey
2 teaspoons chili puree with garlic
2 teaspoons dark sesame oil
1/2 cup sliced almonds, toasted
2 medium green onions, sliced (2 tablespoons)
1 cup chopped cooked chicken
1/2 cup shredded Chinese (napa) cabbage

Steps:

  • Heat oven to 375°F. Spray 24 mini muffin cups with cooking spray. Carefully press 1 wonton skin into each cup (wrapper will extend above rim); spray lightly with cooking spray.
  • Bake 8 to 10 minutes or until lightly browned and crisp. Remove from cups to cooling rack; cool completely.
  • Meanwhile, in medium bowl, mix peanut butter, water, lime juice, vinegar, honey, chili puree and sesame oil with whisk until blended. Add almonds, onions and chicken; toss to coat.
  • Just before serving, fill wonton cups evenly with cabbage (about 1 teaspoon) and chicken mixture (about 2 1/2 teaspoons).

1 tbs sesame oil
3/4 lb ground chicken
1/2 cup Hoisin sauce
1/2 cup broccoli slaw, chopped
1/3 cup Teriyaki sauce
sesame seeds
salt & pepper to taste

Steps:

  • Preheat oven to 350° degrees.
  • Place wonton wrappers into mini muffin pan, gently pressing down and to the sides with a small spoon.
  • Bake 5 minutes until lightly browned.
  • In non-stick skillet heat sesame oil over medium-high heat, add ground chicken and break apart while cooking thoroughly. Drain once cooked. Stir in Hoisin sauce and heat through.
  • Stir broccoli slaw into chicken mixture, add in Teriyaki sauce and stir.
  • Using small cookie scoop place filling into par-baked wonton wrappers, sprinkle with sesame seeds if desired.
  • Return to oven and bake approximately 5 minutes until filling is warmed.
  • Cool prior to serving.

Steps:

  • Preheat oven to 160C/320F.
  • Place wonton wrappers into a regular muffin tin, moulding it into the cups. Bake for 12 to 15 minutes, until crisp and light golden brown. Remove from the oven and let the cups cool in the muffin tin. Store in an airtight container until required (stays crisp for up to 3 days).
  • Combine Dressing ingredients in a jar and shake to combine. Set aside for at least 10 minutes to allow the flavours to infuse.
  • Combine Chicken Salad ingredients in a bowl and toss to combine.
  • To serve: Discard the garlic clove from the Dressing, then toss it through the Chicken Salad. Divide the Chicken Salad between the cups. Garnish with sesame seeds and cilantro/coriander, if using. Serve immediately.

1 pound skinless, boneless chicken thighs, diced
1/3 cup diced carrot
1/3 cup diced celery
1/3 cup diced red bell pepper
1/3 cup diced sugar snap peas
1/3 cup diced red onion
1 teaspoon minced peeled ginger
1 teaspoon minced garlic
1/3 cup mung bean sprouts, halved
1/2 cup sliced shiitake mushroom caps
2 tablespoons diced scallions
1 tablespoon crushed peanuts
6 wonton wrappers
Kosher salt
Iceberg lettuce leaves, for serving

Steps:

  • Make the sauce: Combine all the ingredients in a bowl and set aside. Stir again just before using.
  • Prepare the cups: Heat 2 tablespoons canola oil in a skillet over high heat. Add the chicken and stir-fry until cooked through, about 3 minutes. Add the carrot, celery, bell pepper, peas and red onion and stir-fry about 3 minutes. Add the ginger, garlic, sprouts and shiitakes. Add 1/4 cup of the prepared sauce and cook until thickened, about 30 seconds, scraping up any browned bits. Transfer the stir-fry to a bowl; top with the scallions and peanuts.
  • Wipe out the skillet. Heat the remaining 4 tablespoons canola oil over high heat. Fry the wontons until golden and crisp, about 15 seconds per side. Transfer to paper towels and season with salt.
  • Fill the lettuce leaves with the stir-fry. Sprinkle with the sesame seeds. Crumble the wontons on top or serve alongside. Serve with the remaining sauce.

2 teaspoons sesame oil
1 lb uncooked 99% lean ground chicken breast (you can substitute ground turkey breast)
2 garlic cloves (minced)
1 tablespoon fresh minced ginger
3 oz shiitake mushrooms (diced (you can substitute another mushroom if unable to locate shiitake))
1 cup shredded green cabbage (or bagged coleslaw mix)
2 sliced scallions (divided)
¼ teaspoon black pepper
2 tablespoons low sodium soy sauce
2 tablespoons Hoisin sauce (divided (found by the other Asian sauces))
1 teaspoon sriracha hot sauce
24 wonton wrappers

Steps:

  • Pre-heat the oven to 375. Lightly mist 12 cups in a standard muffin/cupcake tin with cooking spray and set aside.
  • Pour the sesame oil in a large skillet or saute pan and bring over medium-high heat. Add the ground chicken and cook, stirring and breaking up into small pieces, until the chicken is cooked through. Add the garlic and ginger to the meat and stir together. Cook for another minute and then add the mushrooms, cabbage, half the scallions and the black pepper. Stir together and cook for 2- 3 minutes until the veggies are softened. Remove from heat. Add the soy sauce, 1 tablespoon of the Hoisin sauce, and the sriracha and stir to combine.
  • Push a wonton wrapper into the bottom of each of the sprayed cups in the muffin tin. Using about half of the chicken mixture, spoon evenly into the wonton wrappers. Press another wonton wrapper on top and fill with the remaining chicken mixture.
  • Bake for 18-20 minutes until the wontons are golden brown and the contents are heated through. Remove the muffin tin from the oven and allow to cool for 2-3 minutes before removing from the tin. Drizzle the remaining tablespoon of Hoisin sauce onto the tops of the wonton cups and sprinkle with the remaining sliced green onions.

8 ounces boneless, skinless chicken breast
cooking spray
24 wonton wrappers, about 6 oz.
2 tablespoons tahini
2 tablespoons soy sauce or tamari sauce
2 tablespoons pure maple syrup, dark or amber
2 tablespoons mayonnaise
½ cup thinly sliced snow peas
½ cup shredded carrot
½ cup thinly sliced scallions
2 tablespoons chopped basil and/or cilantro
black sesame seeds for garnish, optional

Steps:

  • Place chicken breast in a medium skillet and cover with cold tap water. Place over high heat and bring to a simmer. Reduce heat to maintain a gentle simmer and cook until the chicken is no longer pink in the center and cooked through, 8 to 12 minutes, depending on thickness of the meat. Remove the chicken and let cool. Cut chicken into small cubes.
  • Meanwhile, Preheat oven to 350°F. Coat two 12-cup mini-muffin tins with cooking spray. Cut corners off wonton wrappers to make an octagonal shape. Gently press wrapper down into each cup. Lightly spritz wrappers with cooking spray. Transfer the pans to the oven and bake until the wrappers are starting to turn golden brown and are crispy and bubbling, 10 to 14 minutes. Let cool completely.

36 square wonton wrappers
2 1/2 tablespoons extra-virgin olive oil
1/2 pound cooked chicken
1 1/2 cups shredded red cabbage (see note 1)
1 1/2 cups shredded green cabbage
1 large carrot, peeled and shredded
2 stalks of scallions, thinly sliced (about 1/3 cup)
2 tablespoons toasted sesame seeds
2 tablespoons soy sauce
2 tablespoons honey
1 1/2 tablespoons extra-virgin olive oil
1 1/2 tablespoons rice vinegar
2 teaspoons grated ginger
1/2 teaspoon garlic powder (see note 2)
2 teaspoons toasted sesame oil
2 12-count count mini muffin pans
1 large sheet pan

Steps:

  • Prepare Wonton Cups
  • Preheat the oven to 350ºF. Position an oven rack to the center position.
  • Take one of the wonton wrappers and brush a thin layer of olive oil on one side. Flip it over and brush oil on the other side. Lay another wonton wrapper on top of the first wrapper. Brush olive oil over the second wonton wrapper. The other side of the wrapper will be greased when it comes in contact with the first wrapper.
  • Continue stacking and brushing the wonton wrappers with oil until you get a stack of 5 wrappers.
  • Cut the stack of wrappers diagonally so that you get 2 stacks of triangles. Repeat this process until you get 24 triangles.
  • Then, take a triangular piece of wonton wrapper with the longest side (hypotenuse) facing up. Make a small pinch in the middle and gather the two top corners together to form a cup (see photos or video above for reference). Make sure there is no gap when you are shaping the wonton cups.
  • Press the bottom of the wonton cup into a hole of a mini muffin pan to flatten it.
  • Continue shaping the wontons until you have filled all the holes with the wonton cups.
  • Place the muffin pans onto the baking sheet. This way, the muffin pans won't drop into the oven rack or get stuck.
  • Bake the wonton cups for 10 to 12 minutes, until the edges are golden brown.
  • Let the wonton cups cool for a few minutes before transferring them to a cooling rack. You may notice that the wonton cups look powdery. That's just excess starch from the wonton wrappers.
  • Continue baking 2 more batches of wonton cups until you get 72 total.
  • Prepare Chicken Salad
  • Dice the chicken into 1/4-inch cubes. Transfer the chicken cubes to a mixing bowl.
  • Add the shredded red cabbage, green cabbage, carrots, scallions, and sesame seeds. Toss everything together.
  • In a small bowl, mix the soy sauce, honey, olive oil, vinegar, ginger, garlic powder, and sesame oil. Stir until the honey completely dissolves.
  • Drizzle the dressing over the chicken and vegetables. Toss everything together.
  • Spoon the chicken salad into the baked wonton cups. Serve.

2 minced garlic cloves
16 wonton wrappers, cut into strips
2 -3 chopped romaine lettuce hearts
1 cup shredded carrot
1 bunch chopped onion
1/4 cup chopped cilantro
1/2 cup slivered almonds
1 cup mandarin orange, well drained
3 tablespoons hoisin sauce
2 tablespoons peanut butter
2 teaspoons brown sugar
3/4 teaspoon chili paste (I've used Texas Pete's to substitute)
1 teaspoon fresh ginger, grated
3 tablespoons rice wine vinegar
1 tablespoon sesame oil

Steps:

  • Place the chicken in a ziplock with 2 T sesame oil and 2 garlic cloves. Let marinade for 20 minute.
  • Whisk all dressing ingredients together till well incorporated, set aside.
  • Place wonton strips onto sprayed baking sheet (or you can just fry them) Bake just till browned at 350° (watch closely).
  • Grill chicken breasts till no longer pink. Cool and slice into strips.
  • Toss romaine, carrots, cilantro, and onions. Then add chicken, wontons, almonds and mandarin oranges and toss w/ dressing till well coated. Serve.

These little appetizers take traditional chicken egg rolls and open them up for all the world to see, nestling the filling into baked wonton cups. They are perfect hors d'oeuvres at any cocktail party and can be made ahead of time, heated briefly before serving.

48 wonton wrappers
1 pound ground chicken
1 cup shredded carrot
1 cup shredded savoy cabbage
½ red pepper (small dice)
3 scallions (chopped, white and light green parts only)
¼ cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon sesame oil
freshly ground black pepper
⅓ cup duck sauce
scallions (for garnish)

Steps:

  • Pre-heat the oven to 350ºF.
  • Grease the inside of a mini muffin pan with a little olive oil. Place a wonton wrapper in each cavity of the muffin tin and press it down to form a cup. The wonton will fold over onto itself and hang over the top of the tin. Brush the inside of the wonton cup with a little olive oil.
  • Bake at 350ºF for 8 to 10 minutes, until lightly browned. Allow to cool a few minutes in the pan and then cool on a cooling rack. Repeat with remaining wonton wrappers.
  • Pre-heat a large sauté pan over medium-high heat. Add a little olive oil to the pan and then add the ground chicken, breaking it up with a wooden spoon. Cook until the chicken is no longer pink and then add the shredded carrot and diced red pepper. Sauté for a few minutes and then add the shredded cabbage and scallions. Sauté for two more minutes and add the hoisin sauce, soy sauce, and sesame oil. Continue to sauté until everything is heated through.
  • When you are ready to serve, spoon the warm chicken mixture into the crispy wonton cups. Top with a dollop of the duck sauce, garnish with some chopped scallions and serve immediately.

This unique spin on a chicken salad is made even more special in the way it's served. Using wonton wrappers as serving bowls is an easy and fun way to control portion size. Wonton wrappers are such a visually appealing way to serve food that you'll soon be finding excuses to use them in all kinds of other dishes!

Number Of Ingredients 20

2 cups chicken, cooked
½ lb whole wheat spaghetti
2 tbsp soy sauce
2 tbsp rice vinegar
2 tbsp ketchup
1 tbsp honey
1 tbsp sesame oil, toasted
1 tbsp canola oil
2 tbsp ginger, fresh, minced
2 cloves garlic, minced
1 tsp hot red chili pepper flakes
2 cups carrots, peeled, grated
2 cups yellow pepper(s), sliced
1 cup green onion(s), thinly sliced
½ cup cilantro, fresh, minced
6 egg roll wrappers
cooking oil spray
6 small metal bowls
2 tbsp sesame seeds
4 sprigs cilantro, for garnish

Steps:

  • Cook spaghetti in boiling unsalted water until al dente.
  • Shred cooked chicken into strips using 2 forks or your hands.
  • Mix salad dressing by combining soy sauce, rice vinegar, ketchup, honey, sesame and canola oil, minced ginger and garlic and hot chili pepper in a jar with a tight fitting lid. Cover with lid and shake well.
  • Toss chicken, carrots, peppers and green onions with cooked pasta, minced cilantro and dressing.
  • Make the wonton cups by coating outside of metal bowls with vegetable oil. Mould the egg roll wrapper around the outside of the bowl and bake with wonton wrapper up for approximately 15 minutes at 350°F (175°C) or until golden. Let cool and remove baked wonton wrapper from bowl.
  • Toast the sesame seeds in a dry skillet. Don't leave unattended as they burn easily.
  • To serve, arrange salad in baked wonton cups and top with toasted sesame seeds. Garnish with a cilantro sprig (optional garnish).

Steps:

  • Wonton Cups:.
  • Preheat the oven to 350 degrees. Spray a miniature muffin pan with cooking spray.
  • Press 1 wonton wrapper into each muffin cup so that the edges extend over the sides. Spray the wrappers with cooking spray.
  • Bake for 8-10 minutes of until golden brown. Cool in the pan on a wire rack.
  • Filling:.
  • Spray a frying pan with cooking spray. Add the chicken, sesame seeds, & green beans, cook until the chicken is no longer pink.
  • Remove from the heat then add the remaining ingredients, stir to mix. Spoon a tablespoon of the mixture into each wonton cup.

24 wonton wrappers
2 lbs. chicken thighs (trimmed)
2 tbsp. hoisin sauce
1/4 c. soy sauce
1 tsp. lemon juice
1/2 c. carrots (shredded)
4 cloves garlic (minced)
1/2 c. green onions (diced)
1/2 c. cilantro (diced)
1/2 c. cabbage (diced)
1/4 c. cashews (crushed (optional))

Steps:

  • Preheat oven to 350 degrees. Lightly grease each cup in the mini muffin pan with non-stick spray.
  • Separate wonton wrappers and press them down into each individual cup, molding the wonton to the inside of the pan. Bake for 10 - 15 minutes, or until golden brown. Remove from the oven and set aside.
  • Cut the chicken thighs into small pieces and saute them in a non-stick pan for 4-5 minutes, or until browned. Reduce heat to low, stir in the soy sauce, hoisin sauce, lemon juice, and optional cashews.
  • Next, add all of the veggies and stir until they are coated and thoroughly combined. Cover and simmer for about 10 minutes.
  • Remove from heat and allow the chicken mixture to cool. Dice chicken up into smaller pieces and evenly spoon into each wonton cup.
  • Place wonton cups on a platter or serving dish and sprinkle with a few more green onions and crushed cashews.

Slowly pour that into the saucepan stirring constantly. Lower the heat so that the sauce is at a low simmer. The sauce will thicken quite quickly. Watch that the sauce does not start to burn at the bottom of the pan.
