LINGUINE WITH PARMESAN CHICKEN AND ARTICHOKES

Kosher salt
8 ounces linguine
1/2 cup all-purpose flour
2 tablespoons finely grated Parmesan, plus more for garnish
1/2 teaspoon garlic powder
Freshly ground black pepper
8 thin chicken cutlets
2 to 3 tablespoons olive oil
1 1/2 cups chicken broth
2 cloves garlic, minced
One 14-ounce can artichoke hearts packed in water, drained and quartered
2 tablespoons drained capers
1 tomato, diced
2 tablespoons unsalted butter
2 tablespoons chopped fresh parsley

Steps:

  • Add 8 cups water and 2 teaspoons salt to a large pot and bring to a boil. Add the pasta to the boiling water and cook until al dente according to the package directions. Drain and keep warm.
  • Put the flour, Parmesan, garlic powder, 1 teaspoon salt and 1/4 teaspoon pepper in a shallow dish and mix well. Coat the chicken cutlets lightly in the mixture, shaking off excess.
  • In a large skillet, heat 2 tablespoons of the oil over medium heat. Add the chicken in batches if needed and cook until golden brown and cooked through, 2 to 4 minutes per side; add another tablespoon of oil to the skillet if necessary to cook all of the cutlets. Transfer to a dish and set aside.
  • Add the broth and garlic to the same skillet and cook for 2 to 3 minutes until it comes to a boil. Gently stir in the artichokes, capers and tomatoes, bring to a light boil, lower the temperature and cook until the artichokes are heated through, 1 to 2 minutes. Stir in the butter and parsley. Season with salt and pepper.
  • Serve the chicken over the pasta and spoon on the sauce. Sprinkle with Parmesan.

1/2 pound fresh asparagus, trimmed and cut into 1-1/2-inch pieces
4 cups uncooked bow tie pasta (about 12 ounces)
3 tablespoons olive oil, divided
1 can (14 ounces) water-packed quartered artichoke hearts, well drained
2 garlic cloves, minced
1 cup crumbled goat cheese
2 tablespoons minced fresh parsley
1 tablespoon grated lemon zest
2 to 3 tablespoons lemon juice
1/3 cup grated Parmesan cheese

Steps:

  • Fill a 6-qt. stockpot three-fourths full with water; add 2 teaspoons salt and bring to a boil. Add asparagus; cook, uncovered, 1-2 minutes or just until crisp-tender. Remove asparagus and immediately drop into ice water. Drain and pat dry., In same pot of water, cook pasta according to package directions for al dente. Drain, reserving 1 cup pasta water. Return pasta to pot., Meanwhile, in a large skillet, heat 1 tablespoon oil over medium-high heat. Add artichoke hearts; cook and stir 3-4 minutes or until lightly browned. Add garlic; cook 1 minute longer. Add to pasta., Add asparagus, goat cheese, parsley, lemon peel, lemon juice and the remaining salt and oil; toss to combine, adding enough reserved pasta water to coat. Heat through. Serve with Parmesan cheese.

2 (6.5 ounce) jars marinated artichoke hearts, drained and chopped
¼ cup chopped walnuts
3 tablespoons shredded Parmesan cheese

1 lemon, juiced
1 tablespoon dried basil
1 teaspoon dried oregano
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook the farfalle pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain and set aside.
  • Mix artichoke hearts, walnuts, Parmesan cheese, olive oil, lemon juice, basil, and oregano in a large bowl. Season with salt and black pepper. Add farfalle and stir to coat.

100g artichoke heart from a jar
handful black olive
100g bag wild rocket

Steps:

  • Boil the pasta. While it cooks, mix together the lemon zest and juice, oil and Parmesan.
  • Drain the pasta, reserving 3 tbsp of the cooking water, then return to the pan with the lemon mix, cooking water, artichokes and olives. Heat through briefly, season well, stir through the rocket, then serve.

1 pound fettuccine ((1 cup pasta water reserved, see notes 1 and 2))
4 tablespoons butter
1/4 cup olive oil
1 onion (large, chopped)
1 teaspoon lemon zest ((see note 3))
1/8 teaspoon crushed red pepper flakes
18 ounces frozen artichoke hearts (thawed and drained (see note 4))
2 tablespoons lemon juice (freshly squeezed)
1 cup grated Parmesan cheese ((about 3 ounces))

Steps:

  • In a large pot, bring 4 quarts water and 1 tablespoon salt to boil. Add fettuccine and cook until al dente, about 9 to 11 minutes. Reserve 1 cup of pasta water and then drain well.
  • Meanwhile, in a large skillet over medium heat, heat butter and oil until melted and combined. Add onion, lemon zest, red pepper flakes, 1 teaspoon salt, and a pinch of black pepper. Cook until softened, about 8 minutes.
  • Stir in artichokes and sauté until heated through, about 3 minutes. Stir in lemon juice and remove from heat.
  • To a large serving bowl, add drained pasta, artichoke mixture, 1/2 cup reserved cooking liquid, and cheese. Toss until combined, adding more liquid if needed to bring the sauce together. Season to taste with salt and pepper.

Starting with prepared artichoke hearts saves time, and makes it a year-round dish for any locale, but if you've got fresh artichokes available, feel free to substitute.

4 cups uncooked pasta (your choice)
3 tablespoons olive oil (divided)
14 ounces artichoke hearts (canned or frozen)
2 garlic cloves (minced)
1 tablespoon capers
1 cup feta (crumbled)
1/2 teaspoons salt
1/2 teaspoon black pepper (freshly ground)
3/4 cup fresh parsley (chopped)
1 large lemon (zest & juice)
1/2 cup grated Parmesan cheese

Steps:

  • If you are using canned artichoke hearts, drain them thoroughly, and rinse if they are packed in oil. Thaw frozen artichoke hearts. In both cases, cut them into quarters.
  • Cook the pasta in a large saucepan of salted water until al dente. When it's just the right consistency, drain, but reserve 1 cup of the pasta broth. Add the pasta back to the pot.
  • Heat 1 tablespoon of the oil in a large skillet over a medium-high setting. Add the garlic and cook 1 or 2 minutes until fragrant.
  • Add the artichoke hearts, and saute for 2 or 3 minutes, until heated all the way through and starting to brown slightly. Add the parley and capers for the last minute.
  • Transfer the artichokes, parsley, capers and garlic to the pot with the pasta, and add the feta, lemon juice and zest, and salt and pepper. Pour in the pasta water and toss to thoroughly coat. You can heat/keep warm at a low setting, but avoid cooking the pasta any more.
  • Serve sprinkled with Parmesan.

4 cups (1 L) unsalted chicken stock (see cook's tips)
2 tbsp (30 mL) lemon juice
1 cup (250 mL) fresh parsley, loosely packed
1 can (14 oz./398 mL) quartered artichoke hearts in water, drained
¼ cup (60 mL) olive oil
2½ tsp (12 mL) Lemon Garlic Rub or Lemon Pepper Rub
4 garlic cloves, pressed
2 medium zucchinis
2 oz. (60 g) fresh Parmesan cheese, finely grated (½ cup/125 mL)

Steps:

  • Add the spaghetti, stock, and lemon juice to the Rockcrok® (4-qt./3.8-L) Dutch Oven or Deep Covered Baker. Microwave, covered, for 8 minutes.Finely chop the parsley in a food processor. Add the artichokes, oil, rub, and garlic. Process again, scraping down the sides of the bowl, until the artichokes are coarsely chopped. Carefully remove the Dutch oven from the microwave; stir. Return to the microwave. 1 14-oz jar marinated artichoke hearts, drained
2 garlic cloves, minced
½ cup pine nuts or walnuts
⅓ cup fresh parsley
¼ cup freshly grated Hirten cheese
½ teaspoon lemon zest
2 tablespoons lemon juice
¼ cup olive oil
Salt and pepper to taste (I seasoned very generously!)
1 lb spinach pasta (I used fettuchini)
1 carton grape tomatoes, cut into halves
Additional cheese for grating over pasta

Steps:

  • In the large bowl of a food processor, combine artichoke hearts, garlic cloves, pine nuts, parsley, cheese, lemon zest and lemon juice. Pulse until well blended.
  • Add the olive oil to the feed tube and let it slowly drain into the bowl as you blend. Salt and pepper to taste.
  • Use immediately or store in an airtight container in the refrigerator.
  • Cook pasta according to package directions. Drain (but do not rinse).
  • Add artichoke pesto and grape tomatoes to warm pasta.
  • Generously grate Hirten cheese over top. Serve warm.

2 tablespoons vegan margarine
1/4 cup extra virgin olive oil
1/2 cup vegetable broth
12 ounces artichoke hearts, quartered

1/3 cup soymilk, unsweetened
2 teaspoons oregano
2 teaspoons italian seasoning

  • Simmer sauce while pasta cooks.

1 lb box (454g) of penne or other pasta (cooked until al dente, then drained and tossed with 1 tablespoon butter.)
2 tablespoons olive or vegetable oil
1 pound chicken breasts ((454g))
Salt and pepper to taste
1 small onion diced
1 red bell pepper diced
4 cloves garlic finely minced
¾ cup chicken broth ((6oz, 170g))
1 ½ cup cream or half and half ((12oz, 340g))
¾ cup finely grated parmesan cheese ((3oz, 85g))
1 batch Easy Marinated Artichoke Hearts drained and chopped (*see note)
1 cup chopped fresh parsley ((1oz, 28g))
1 tablespoon lemon juice or to taste
Salt and pepper to taste

Steps:

  • For quicker, more even cooking, slightly flatten breasts with a kitchen mallet. If they are very thick, slice them in half horizontally before flattening. Season with salt and pepper.
  • Heat a skillet over high heat. When pan is hot, add 1 tablespoon oil.
  • When oil is hot, put chicken breasts in pan and cook until golden brown on both sides and cooked through. Remove chicken from pan and cut into slices.
  • Add remaining tablespoon oil to pan. Add onions and cook until softened.
  • Add red bell pepper and cook until almost softened.
  • Add the garlic. Stir, and cook for about 1 minute.
  • Deglaze pan with broth, scraping bottom to release any bits sticking to the bottom of the pan.
  • Add cream and bring to a simmer. Allow to simmer for about 2 minutes. Turn off heat.
  • Slowly add parmesan while whisking and whisk until melted and incorporated into sauce.
  • Gently stir in chopped artichoke hearts and parsley.
  • Add lemon juice to taste. You may not need the whole tablespoon if the artichoke hearts are lemony enough.
  • Salt and pepper to taste
  • Toss sauce with sliced chicken and hot buttered pasta. Serve.

1/4 cup chopped Italian parsley leaves
1 tablespoon butter
Kosher salt
Freshly ground black pepper
Grated Parmesan, for serving
1/2 cup extra-virgin olive oil
1/2 cup freshly squeezed lemon juice
1 1/2 teaspoons finely chopped fresh thyme leaves, or Herbes de Napa, recipe follows
1 1/2 teaspoons minced garlic
1 1/2 teaspoons kosher salt
Small pinch freshly ground pepper
4 medium to large artichokes
1/2 lemon
6 tablespoons dried thyme leaves
3 tablespoons fennel seed
2 1/2 tablespoons dried summer savory leaves
1 1/2 tablespoons dried rosemary leaves
1 1/2 tablespoons crumbled bay leaves
1 1/2 tablespoons dried lavender flowers

Steps:

  • Cook fettuccine according to package directions. While pasta is cooking, heat olive oil in a large skillet over medium heat. Add garlic. When garlic is golden, add the oregano and broth. Bring to a simmer, stir in the spinach to wilt. Add the artichokes. Drain the pasta and place in a serving bowl. Pour over the artichoke mixture and toss with the parsley and butter and season with salt and pepper. Sprinkle with Parmesan and serve.
  • Preheat the oven to 375 degrees F.
  • Combine the olive oil, lemon juice, thyme, garlic, salt, and pepper in a medium nonreactive saucepan. Mix well and set aside while preparing the artichokes.
  • Snap outer leaves from an artichoke. Cut off the top half, and then use a paring knife to trim down to the heart, rubbing cut surfaces with the lemon half as you work to avoid discoloration. Cut the heart in half and scrape out the choke with a spoon. Cut each piece in half again.
  • As each artichoke heart quarter is completed, immediately turn it in the marinade to coat completely. When all the artichokes are trimmed, put the pan over high heat and bring to a boil. Pour the artichokes and marinade into a baking dish (or cook them in the saucepan if it is ovenproof), cover with foil, and cook until the artichokes are tender when pierced with a fork, about 45 minutes. Remove from the oven and let cool in the cooking liquid.
  • Combine all ingredients. Store in an airtight container away from light and heat for up to 4 months.

This can be stored in the fridge for 3 to 4 days before using.
  • Cook the pasta according to the directions, making sure to reserve some of the starchy water. Drain the pasta and place it back in the hot pot. Immediately pour the artichoke sauce over it and toss to combine - this will take a few minutes to fully toss it. Add in a few tablespoons of the pasta water to bring it all together. This will not be overly creamy or saucy - it’s more like a pesto that coats the noodles!
