BAKED ARTICHOKE SQUARES
Game day or party these baked artichoke squares are a great appetizer.

Steps:
- Preheat oven to 325 degrees F. Grease a 9 x 13 inch baking dish. Set aside.
- Drain liquid from one jar of artichokes into skillet. Sauté the onion and garlic in liquid until soft. Drain liquid from remaining jar and discard. Chop all artichoke hearts.
- In mixing bowl combine eggs, breadcrumbs and parsley. Stir in onion mixture, artichokes, cheese, salt and pepper. Pour into prepared baking dish and bake for 30 to 35 minutes. Cool. Cut into small squares and arrange on serving plate.

SPINACH ARTICHOKE SQUARES
Steps:
- 1. Turn on the oven to 350 degrees. Use a non-stick cooking spray or olive oil to spray an 11 x 7-inch baking dish. Spread breadcrumbs to the bottom and sides of the baking dish. 2. Chop the artichoke hearts. 3. In a large bowl mix the artichoke hearts, spinach, scallions, garlic, and cheese. 4. Use a spoon to spread them into the baking dish, but make sure to be careful with the breadcrumbs. 5. Mix together in a blender or whisk together eggs, mayonnaise, mascarpone or cream cheese, half-and-half (or milk), salt and black pepper and pour them into the baking dish. 6. Put them into the oven and bake for about 30-35 minutes or until set and lightly browned. Leave them aside to cool slightly and cut into small squares.

THE BEST SPINACH ARTICHOKE DIP
This is our best version of the classic party dip. It's savory and creamy with a slight tang from sour cream and Parmesan -- so hard to resist. We like to use frozen whole leaf spinach and chop it ourselves for more control over the finished texture of the dish.

- Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.
- Put the cream cheese, sour cream, mayonnaise and garlic in a large bowl. Mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and 1/2 cup of the Parmesan, mixing to combine. Season with salt and pepper. Transfer the mixture to the prepared baking dish and top with the remaining 1/4 cup Parmesan.
- Bake until the dip begins to bubble, 20 to 25 minutes. Turn the oven to broil and continue to cook, keeping an eye on it so it doesn't burn, until the top is golden brown, about 5 minutes. Serve warm with crackers, chips or toasted bread.

- Preheat oven to 350-degrees.
- In a large bowl, combine the spinach, artichokes, onion, and nutmeg.
- In a medium bowl, whisk together the butter, eggs, and milk.
- Pour the wet ingredients into the spinach mixture and stir to combine.
- Add the flour, baking powder, and Parmesan cheese into the spinach mixture and stir until just combined.
- Pour the mixture into a 8 x 8 baking dish that has been sprayed with cooking spray.
- Bake in a preheated oven for approximately 35-40 minutes or until the center is set.
- Remove from oven and allow to cool slightly before cutting into appropriate sized squares.
- Serve warm or at room temperature.

CHEESY ARTICHOKE SQUARES
This is an old family favourite. I can't remember where I got the recipe, but I have been making these squares for 25 years. These spicy squares are excellent served hot or cold. If you are not a fan of alot of herbs, than please, add the amount you would prefer, this dish is very versatile.

- Preheat oven to 350°.
- Drain juice from one jar of artichokes into frying pan.
- Sauté onion and garlic in the artichoke juice, simmer and cool.
- Chop artichokes and mix with the cooled onions and garlic.
- Combine artichoke mixture, breadcrumbs, cheese, eggs, salt, pepper, parsley, oregano, basil, thyme, rosemary and Tabasco sauce together until well blended.
- Pour the artichoke mixture into a greased 8x8-inch or 9x9-inch pan.
- Bake in a 350° oven for 40 minutes.
- Let cool 5 minutes; cut and enjoy.

- Heat oven to 375 degrees. Spread crescent dinner rolls on the bottom of a 12x15 sheet pan. Bake 10-12 minutes until lightly golden.

- Preheat oven to 375*F.
- In bowl, combine artichokes, spinach, mozzarella cheese, feta cheese(or Parmesan, red bell pepper, mayonnaise, garlic and black pepper. Mix well. Set aside.
- Unroll the 2 packages of crescent rolls onto work surface. Separate into 16 triangles in a circle on a large round pizza pan(or baking stone) with wide ends 3" from edge of pan and points towards the outside. Points will extend off the edge of the baking stone or pan(depending on size).
- Arrange remaining triangles in center of baking stone or pan; matching wide ends with triangles already in place Points will overlap in the center.
- Using rolling pin, roll over seams of triangles where the wide ends meet, creating a smooth surface for filling. Do not seal center triangles.
- Using an ice cream scoop, scoop filling evenly over dough in a continuous circle.
- Beginning with the last triangle placed in center of baking stone or pan, bring point of triangle straight across filling.
- Next, bring point of opposite outside triangle diagonally across point of previous triangle. The filling will show.
- Repeat, overlapping points of inside and outside triangles to form a wreath. Tuck last end under first.
- Brush top of wreath with egg white. Sprinkle with grated Parmesan cheese.
- Bake 25-30 minutes or until golden brown. Enjoy!.
