Homemade pickling with armenian cucumber and small cucumbers aka gherkins.

1 kilo Armenian cucumber
1 kilo gherkin
10 cloves garlic, peeled
A few celery stalks
½ bunch of parsley
2 lemons, 1 squeezed, 1 sliced
1 ½ cup grape vinegar
1 tbsp sugar
Kosher salt or sea salt
Boiled cold water

Steps:

  • Wash armenian cucumbers and gherkins, wait them to dry.
  • Make a few tiny holes on veggies with a toothpick or knife so that they can absorb the brine. Place them into jars adding garlic cloves, lemon slices and celery stalks among them.

2 cups peeled, seeded, and shredded cucumber
3 eggs
1 cup vegetable oil
2 cups white sugar
1 teaspoon vanilla extract
1 cup coarsely chopped pecans
3 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon baking powder
⅛ teaspoon ground nutmeg
⅛ teaspoon ground cloves

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Spray 2 5x9-inch loaf pans with cooking spray.
  • Place shredded cucumbers into a colander and let drain for about 30 minutes.
  • Stir eggs, vegetable oil, sugar, vanilla extract, drained cucumber, and pecans together in a large bowl. Whisk flour, cinnamon, baking soda, salt, baking powder, nutmeg, and cloves in a separate bowl. Stir dry ingredients into the cucumber mixture until batter is thoroughly combined. Spoon batter into prepared loaf pans.
  • Bake loaves in the preheated oven until lightly browned and a toothpick inserted into the center of each loaf comes out clean, 50 minutes to 1 hour. Let loaves cool in pans for 10 minutes before removing from pans to finish cooling on wire racks.

Spicy and delicious dill vegetable pickles. They are easy to make...I usually make a 5 gallon jug in the fall and give them away to my friends. They are usually ready by Thanksgiving. You can also use kirby cucumbers, peppers, hot or sweet, green tomatoes or any combination you like.

2 large heads cauliflower, cut up into florets
1 large head of cabbage, cut into wedges
1 lb carrot, peeled and sliced
1 lb green beans
1 head garlic, divided
16 large dill sprigs, divided
4 tablespoons whole mixed pickling spices, divided
3 quarts water
1 quart white vinegar
1 cup kosher salt
1 teaspoon turmeric

Steps:

  • Sterilize 8 large mouth quart jars and lids.
  • Prepare vegetables and divide among eight quart jars .I use raw vegetables because I like the crunch. Stuff jars tightly with vegetables, adding carrots and green beans into the corners, pushing down with a wooden spoon. Put two sprigs of dill and two cloves of garlic in each jar with one or more teaspoons of pickling spice, to taste.( I use about 1-1/2 tsps.) Add one or more hot peppers to each jar if you like spicy pickles.
  • Boil water, vinegar, salt and turmeric.
  • Pour into each jar to fill and seal.
  • Store in a cool dry place for four to six weeks.

1 3/4 cups milk
1/4 cup butter
2 tablespoons lard
1 compressed yeast cake
1 teaspoon brown sugar
12 cups flour, sifted
2 tablespoons sesame seeds
2 tablespoons sunflower seeds, toasted
1 1/2 teaspoons salt
2 eggs
1/2 cup parmesan cheese, grated
1 tablespoon cumin seed
1 tablespoon walnuts, chopped
1 tablespoon black pepper, coarsely ground

Steps:

  • Scald the milk and stir in the butter and lard.
  • Allow to cool to about 100°F, then crumble in the yeast and add the sugar and a few spoonfuls of warm water and leave in a warm place till frothy.
  • Mix together the flour, sesame seeds, sunflower kernels and salt.
  • Stir the yeast and milk mixture into the flour together with 2¾ cups of lukewarm water.
  • Beat well and knead till smooth and silky.
  • Leave to rise for about 45 minutes.
  • Knead again and form into 3 large flat loaves.
  • Lay the loaves on greased baking sheets and leave to rise again for 30 minutes.
  • Mix together the eggs, cheese, cumin, walnuts, and pepper and spread this thick paste over the loaves.
  • Bake at 425° for 15 minutes, then reduce heat to 350° and bake for 30 minutes more or till the loaves are firm and golden and sound hollow when tapped.
  • Cool on wire rack.

1 1/4 ounces dry yeast
1 1/2 cups warm water
1 teaspoon salt
2 cups all-purpose flour
2 cups whole wheat flour
toasted sesame seeds

Steps:

  • Sprinkle yeast into warm water in large bowl and stir until dissolved.
  • Add salt.
  • Combine all-purpose and whole wheat flours and add enough to yeast mixture to make stiff dough.
  • Turn out on floured surface and knead until smooth and elastic, 8 to 10 minutes.
  • Shape into ball.
  • Place in greased bowl and turn to grease top. Cover and let rise until doubled in bulk, about 1-1/2 hours.
  • Punch down and let rise again until doubled, about 30 minutes. Divide dough into 8 pieces and roll each out on lightly floured surface to very thin circle about 9 inches in diameter.
  • Place, one at a time, on baking sheet and sprinkle with sesame seeds.
  • Bake at 400F 5 to 6 minutes, or until bread appears dry, lightly browned and blistered.

1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon baking powder

Steps:

  • In a bowl, beat eggs. Beat in sugar, cucumbers, oil and vanilla until well blended. Combine the remaining ingredients; add to cucumber mixture and beat just until combined. Pour into two greased 9x5-in. loaf pans. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.
