2 teaspoons olive oil
1 1/4 lbs sugar snap peas
1/2 teaspoon salt (I used just a shake)
1/4 teaspoon white pepper
1/3 cup coarsely chopped fresh basil
1/2 teaspoon grated lemon zest
1/2 lemon, cut in wedges

Steps:

  • Heat oil in a large nonstick skillet over medium heat.
  • Add Sugar snap peas, season with salt and pepper.
  • Stir-fry until crisp-tender, or about 3 minutes.
  • Add basil and lemon zest, stir-fry until basil is wilted and fragrant.
  • Serve immediately with lemon wedges.

  • In a large microwave-safe bowl, combine the peas and water. Cover and cook on high for 3-5 minutes or until crisp-tender; drain. Stir in the remaining ingredients.

Coarse salt and ground pepper
3/4 pound short pasta, such as gemelli
3 garlic cloves, halved
8 ounces snap peas, halved
10 ounces baby spinach
1/2 cup fresh basil leaves
1/3 cup heavy cream
3 ounces Parmesan, grated (3/4 cup)

Steps:

  • In a large pot of boiling salted water, cook pasta and garlic 1 minute less than package instructions. Add snap peas and cook 30 seconds. Add spinach and basil and stir once to wilt. Reserve 1/2 cup pasta water, then drain.
  • Add cream to pot and heat over medium-high until bubbling. Return pasta mixture and 1/4 cup pasta water to pot and cook, stirring, 2 minutes. Stir in Parmesan. If necessary, add remaining pasta water to create a light sauce that coats pasta. Season with salt and pepper.

Basil-Crusted Salmon with Snap Pea Salad image

Fragrant fresh basil, spicy shichimi togarashi and lemon zest brighten up crispy baked salmon for an easy weeknight meal served with a refreshing sugar snap pea salad tossed in a quick vinaigrette.

Kosher salt and freshly ground black pepper
1 cup packed basil leaves, plus 1/4 cup finely chopped stems
3 tablespoons olive oil
1 teaspoon plus pinch shichimi togarashi
1 lemon, zested and juiced
1 clove garlic, peeled
1/4 cup panko
Four 6-ounce skin-on salmon fillets
3 tablespoons honey
1/3 cup raw pine nuts
4 cups sugar snap peas, trimmed (about 14 ounces)
1 tablespoon Dijon mustard
1 tablespoon rice wine vinegar
2 teaspoons fish sauce
1 shallot, minced
2 tablespoons vegetable oil
1/2 cup flat-leaf parsley leaves

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with aluminum foil. Bring a medium pot of heavily salted water to a boil. Fill a medium bowl with ice water and set aside.
  • Add the basil leaves, 2 tablespoons olive oil, 1 teaspoon shichimi togarashi, lemon zest, garlic, 1 teaspoon salt and a few grinds of pepper to a food processor and process until finely chopped, scraping down the sides of the bowl as needed. Transfer to a small bowl and fold in the panko.
  • Place the salmon fillets skin-side down on the prepared baking sheet and brush the tops with 2 tablespoons honey. Press the breadcrumb mixture all over the tops of each fillet (about 1 tablespoon per fillet). Bake until the breadcrumbs are golden brown and the salmon is firm and flakes easily when pressed, 12 to 15 minutes.
  • Meanwhile, place the pine nuts in a single layer in a small nonstick skillet and cook, shaking frequently, until they're golden brown and smell nutty, 3 to 5 minutes. Transfer to a plate to cool.
  • Add the sugar snap peas to the boiling water and cook until very bright green and crisp tender, 1 to 2 minutes. Use a slotted spoon to immediately transfer the peas to the ice water to stop the cooking. Drain the snap peas, then cut them into thirds on a deep bias.
  • Put the lemon juice, mustard, vinegar, fish sauce, shallots, 1/4 teaspoon salt, a few grinds of pepper, the remaining 1 tablespoon of honey and the remaining pinch of shichimi togarashi in a large bowl. Use an immersion blender to mix and drizzle in the vegetable oil and the remaining 1 tablespoon of olive oil until all the ingredients are emulsified.
  • Fold in the snap peas until coated. Fold in the parsley leaves, toasted pine nuts and basil stems and serve alongside the salmon.

1 teaspoon table salt
4 cups sugar snap peas, stems snipped off and strings removed if needed
2 tablespoons olive oil
1 lemon, zest of, sliced very fine
1 tablespoon lemon juice
1 garlic clove, minced
6 -8 fresh basil leaves, chopped fine
1/2 teaspoon table salt
ground black pepper

Steps:

  • Bring 6 cups water to brisk boil in 3- or 4-quart saucepan. Add salt and peas and cook until crisp-tender, 1 1/2 to 2 minutes depending on size of peas.
  • Drain peas, shock in ice water, drain again, and pat dry. (Peas can be set aside for up to 1 hour.).
  • Heat oil over medium heat in medium sauté pan. Add zest and garlic; sauté until garlic is soft but not browned, about 2 minutes. Add peas, lemon juice, and basil; toss to combine. Cook until just heated through, 1 to 1 1/2 minutes. Season with salt and pepper to taste; serve immediately.
