CHURRASCO (ARGENTINE GRILLED MEAT MARINADE )
This is a marinade for the churrasco dish. In Argentina, where this style of cooking developed, "churrasco" actually refers to many types of meats prepared on the grill. It's also popular with Nicaraguans. The churrasco cut steak is a long flat cut of skirt steak, cut from the "plate" of the cow. You might find it sold at some butcher shops as a "plate" steak. Don't confuse it with the flank steak, a similar cut, but NOT the same! The churrasco steak is typically marinated to make it tender and full of flavour. Serve topped with Recipe #456210. Steps:
- Mash garlic, salt, and peppercorns into a paste, using a mortar and pestle. Stir in orange juice, lime juice, lemon juice, onion, and oregano. Let sit at room temperature for 30 minutes or longer. Whisk the garlic-orange juice mixture with the olive oil until well blended.
- Preparing the Meat: Preparing the meat is very easy. Place the meat in a large bowl or pan. Add enough marinade to cover the meat. Place a cover over the bowl or pan and place in the refrigerator a minimum of five hours, but preferably overnight.
- Grill the marinated meat outdoors on the barbecue. (Make sure your coals are hot and white!). For the steak - you can cook them however you like your it -- from rare to well done. However, the rarer the meat, the more tender and flavorful!

GRILLED MARINATED LEG OF LAMB
Steps:
- Combine oil, lemon juice, garlic, oregano, salt, and pepper in sealable plastic bag. Add lamb and seal bag, pressing out air. Turn bag to coat lamb, then put bag in a shallow baking pan and marinate, chilled, turning bag over occasionally, at least 8 hours.
- Bring lamb to room temperature, about 1 hour, before grilling.
- Prepare grill for cooking over direct heat with medium-hot charcoal (moderate heat for gas); see Grilling Procedure.
- Remove lamb from marinade (discard marinade) and run 3 or 4 skewers lengthwise through lamb about 2 inches apart. Grill on a lightly oiled grill rack, covered only if using gas grill, turning over occasionally and, if necessary, moving around on grill to avoid flare-ups, until thermometer registers 125 to 128°F, 8 to 14 minutes total for medium-rare.
- Transfer lamb to a cutting board and remove skewers. Let lamb stand, loosely covered with foil, 20 minutes. (Internal temperature will rise to 135°F while meat stands.) Cut across the grain into slices.

- After the 4 days are up, rinse the tongues, then cold or hot smoke (not too hot, the tongues shouldn’t cook too much). After smoking the tongues, braise them with the liquid or stock and vegetables in covered pan in the oven at 325 °F for 1.5 hours, or until fork tender.
- Cool the tongues to room temperature, then peel, wrap tightly in plastic, label, date and refrigerate. The tongues can be frozen or will keep for one week if properly refrigerated.

- Put the tongues in a saucepot that can accommodate them along with the remaining ingredients for cooking the tongues. Cover the tongues and vegetables with water by a inch, then bring to a simmer, turn the heat to low, cover, and cook until easily pierced with a knife, about 1.5-2 hours.
- Cool the tongues in their liquid until you can handle them, then peel each one, chill, and slice into ¼ inch thick slices.
- For the tomato sauce, in a 3 qt or similar size sauce pan, heat the garlic in the oil until golden and light brown on medium-high heat, then add the onion, cumin and jalapeno and cook for a minute more.
- Add the sliced tongue and tomato juice or puree, then simmer until the mixture is slightly thickened, but still juicy, about 15 minutes.
