3/4 cup (1 1/2 stick) unsalted butter
1 1/2 cup firmly packed light-brown sugar
2 large eggs
1 1/2 cup raisins
1 1/2 cup currants
1 1/2 cup coarsely chopped walnuts
2 2/3 cups cake flour
3/4 teaspoon coarse salt
3/4 teaspoon ground cloves
1 1/2 teaspoon baking soda
1 1/2 teaspoon ground cinnamon
3/4 teaspoon freshly grated nutmeg
1 1/2 cup thick applesauce, warmed

Steps:

  • Preheat oven to 350 degrees. Butter and flour a 12-cup nonstick Bundt pan. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy; add eggs and beat well.
  • Combine the raisins, currants, and walnuts in a small bowl. Sprinkle with a tablespoon of flour and toss to coat to prevent sinking during baking. Whisk remaining flour with other dry ingredients in a medium bowl. Beat flour mixture into butter mixture alternating with applesauce. Reduce to low speed and beat in raisins, currants, and nuts. Pour batter into prepared pan and bake until a cake tester inserted into the center comes out clean, about 60 minutes.
  • Remove from oven and let cool in pan 5 minutes before turning out onto a wire rack to cool completely.

2 teaspoons baking powder
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 cup 1 stick unsalted butter, at room temperature
1 cup granulated sugar
1 cup dark brown sugar (firmly packed)
4 large eggs
1/2 cup peanut oil (or vegetable or canola oil)
2 teaspoons vanilla extract
1 1/4 cup buttermilk *see note below for alternatives

Steps:

  • Preheat oven to 350F.
  • Butter and flour a 10 to 12 cup bundt pan (or spray with a baking spray that includes flour), and refrigerate while preparing the cake.
  • Whisk flour, baking powder, salt, cinnamon, ginger, cloves, & nutmeg together in a bowl and set aside. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, sugar, & brown sugar together on high speed until light and fluffy, about three minutes. Scrape down the sides of the bowl and add the eggs, one at a time, scraping between additions. In a small bowl or measuring cup, stir together oil, vanilla, & buttermilk (or substitution). In the bowl with the butter and sugars, alternate additions of the flour and buttermilk mixtures at low speed, beginning and ending with flour. Mix just until combined and do not overwork the batter. Scrape down the sides of the bowl to make sure all ingredients are well incorporated.
  • Pour the batter into the prepared bundt pan, smooth out the top, and firmly pound the pan against the countertop several times to tap out any air bubbles. Bake in the center of the oven for 50 to 55 minutes, or until a toothpick or cake tester comes out clean from the center of the cake.
  • Transfer the pan to a wire rack to cool for about 20 to 30 minutes before turning the cake out onto the rack to cool completely. Once cool, drizzle with cream cheese glaze (recipe below) if desired. Cake should keep, in an air tight container at room temperature, for about 3 or 4 days.

Beat for 2 minutes with an electric mixer on medium speed. Beat in eggs. Fold in 3/4 cup chopped nuts. Pour batter into a greased and floured 9 x 13 inch pan.
  • Bake at 350 degrees F (175 degrees C) for 50 minutes.
  • Mix confectioners' sugar, cream cheese, and vanilla until smooth. Melt 1/4 cup butter over medium heat, and add 1 cup chopped pecans. Keep stirring until browned. Stir cooled pecans into cream cheese mixture. Frost the cooled cake.

1/2 cup butter ((room temperature))
1 cup sugar
1 large egg
1 cup raisins
1 cup black walnuts ((or English walnuts))
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cloves
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 1/2 cups unsweetened applesauce

Steps:

  • Grease a 10 cup bundt cake pan generously with shortening, then dust with flour (or use our perfect cake release). Preheat the oven to 350º Fahrenheit.
  • In the bowl of a stand mixer (or using a hand mixer), cream the butter and sugar until well blended and smooth, scraping the sides of the bowl as needed.
  • Add the egg. Mix until blended.
  • Mix in the raisins and walnuts.
  • In a small bowl, whisk together the flour, soda, salt, cloves , nutmeg and cinnamon.
  • Add the applesauce and flour to the butter mixture alternately, mixing well between each addition. Batter will be thick.
  • Add the batter to the pan by large spoonfuls and smooth out evenly.
  • Bake for 45 minutes or until the top of the cake springs back when you touch it. The exact time will depend on the shape of your bundt cake pan. If it makes a thicker cake, it could take up to an hour to bake. Ours took 45 minutes in the Autumn Wreath Bundt Pan.
  • Allow the cake to cool in the pan for 5 minutes, then turn out on a cake plate to cool completely.
  • Dust with powdered sugar if desired.

2 stick butter, softened
1 c brown sugar
1 c sugar

2 c applesauce

1 c raisins
RUM GLAZE
2 Tbsp butter
1 c powdered sugar
1/2 tsp rum flavoring
3-4 tsp milk

Steps:

  • 1. Heat oven to 350. Grease and flour (or spray) bundt pan generously.
  • 2. Combine flour, soda, cinnamon, and allspice. Set aside.
  • 3. In large bowl, mix together butter, brown sugar and sugar until creamy. Beat in egg. Add applesauce and mix until just combined. Add flour mixture one cup at a time until fully incorporated. Stir in raisins and nuts by hand.
  • 4. Spoon into bundt pan. Cook 60-70 minutes until wooden skewer inserted comes out clean. Cool in pan for about 10 minutes before removing.
  • 5. To make glaze, melt butter in microwave. Add all remaining ingredients, mixing well until smooth. Let cool slightly before spooning over cooled cake.

With its perfectly moist texture and soft crumb, this applesauce cake is a serious crowd-pleaser. Made with 1 1/4 cups yogurt and 1 3/4 cups applesauce, it will be one of the moistest bundt cakes you ever make. It's super simple, and it bakes beautifully and evenly every time. Notes: Sugar: Over the years many of you have asked if you can cut the sugar back in this recipe, and many of you have reported back with successful results. Some of you have used 1 cup, others have used 1.5 cups. Encouraged by you, I recently made the cake with 1.5 cups (330 g) of sugar, and it was a great success. That said, I promise you this cake is not too sweet with 2 cups of sugar. Teddie's apple cake, which is about the same size, also calls for 2 cups of sugar. Cinnamon: I like it this cake both with cinnamon and without. It all depends on your preferences. If you're in the mood for those warming fall spices, use cinnamon. If you're not in the mood for the spiced flavor, use vanilla. The texture of the cake will be divine no matter what spices you use. Yogurt: Geri, the woman who shared this recipe with me, uses Dannon plain nonfat yogurt, and her cake always came out incredibly deliciously. I get nervous about these things sometimes and can't keep myself from buying the full-fat tubs. I used Stonyfield whole milk plain. To freeze: Let the cake cool completely - this may take several hours from when you turn it out onto a cooling rack. Then wrap the cake in plastic wrap and tuck it into a jumbo Ziplock bag. Steps:

  • Make cake:
  • Place oven rack in middle position and preheat oven to 350°F. Butter pan and set aside.
  • Whisk together flour, baking soda, spices, and salt in a bowl.
  • Beat together sugar, butter, and rum with an electric mixer at medium-high speed until combined well, then add egg and beat until pale and fluffy, 2 to 3 minutes with a stand mixer or 5 to 6 minutes with a handheld. Reduce speed to low and add dry ingredients, mixing until combined well. Add applesauce and mix until combined well.
  • Spread batter evenly in springform pan and bake until a wooden pick or skewer comes out clean, 30 to 35 minutes.
  • Cool cake in pan on a rack 10 minutes, then remove side of pan and cool completely.
  • Make icing:
  • Melt 2 tablespoons butter in a 1 1/2- to 2-quart heavy saucepan, then add sugar and evaporated milk and simmer, stirring constantly until sugar is dissolved, about 4 minutes.
  • Remove from heat and whisk in rum, vanilla, salt, and remaining tablespoon butter, then whisk in confectioners sugar 1 tablespoon at a time. Cool to warm, about 20 minutes, then spread over cooled cake.

Whether you use store-bought applesauce or make your own, this lovely, moist cake will make it hard to stop after one piece. It's very important to beat the eggs and sugar until they are thick, as this, along with the baking powder, is what gets the cake to rise nicely. This cake makes a great gift - it can be made ahead, cooled, glazed, then frozen.

baking sheet for toasting walnuts
sharp, heavy knife for chopping walnuts
mesh sieve

2 tablespoons unsalted butter, softened
2 tablespoons all-purpose flour
3 1/3 cups cake flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons ground cinnamon
1 1/4 teaspoons ground allspice
1 1/4 teaspoons ground nutmeg
1 teaspoon ground ginger
1/2 teaspoon salt
3 extra-large eggs, at room temperature
1 2/3 cups packed dark brown sugar
1 cup vegetable oil
1 tablespoon pure vanilla extract
2 cups unsweetened applesauce
1 1/2 cup walnuts, toasted and coarsely chopped

Steps:

  • Baking time: 55 minutes
  • 1. Preheat the oven to 350°. with a rack in the center of the oven. Coat the sides and center tube of the pan with the butter. Toss in the flour and shake the pan to coat the tube surface and sides. Knock out the excess flour. Set aside.
  • 2. Place a mesh sieve over a medium mixing bowl and add the cake flour, baking powder, baking soda, cinnamon, allspice, nutmeg, ginger, and salt. Shake the contents into the bowl and set aside.
  • 3. Break the eggs into a large mixing bowl. Stir them briefly with a fork to break them up slightly, then add the dark brown sugar. With the mixer on high speed, beat the eggs with the sugar until the mixture is very thick, about 6 minutes. Move the beaters around the bowl and scrape down the sides of the bowl with a rubber spatula several times while mixing. Reduce the mixer speed to medium and beat in the oil and vanilla. Beat until the mixture is smooth, about 2 minutes. Reduce the mixer speed to low and beat in the flour mixture alternately with the applesauce, beginning and ending with the flour mixture. Fold in the walnuts with a rubber spatula. Scrape the batter into the prepared pan and smooth the top with a rubber spatula.
  • 4. Bake for 55 minutes, or until a cake tester inserted into the center of the cake comes out clean. Transfer the pan to a wire rack to cool for 10 minutes, then invert the cake onto the rack. Remove the pan and let the cake cool completely.
  • 5. The baked cake can be stored at room temperature, wrapped in plastic wrap, for up to 2 days, or refrigerated for up to 1 week. It may also be frozen for up to 3 months. Wrap the cooled cake securely in plastic wrap, then place it in a freezer-strength recloseable jumbo-size plastic bag. Label the bag with a waterproof marker and freeze. Defrost the cake, in its wrapping, overnight in the refrigerator or at room temperature for 3 to 4 hours.
