3 eggs
5 tablespoons sugar
1/2 teaspoon cinnamon
1/4 teaspoon vanilla extract
2 cups unsweetened applesauce
1 tablespoon butter, softened

Steps:

  • Combine the sugar, 1/4 teaspoon of the cinnamon and the eggs. Beat until smooth.
  • Fold the applesauce and vanilla into the egg mixture and stir until well blended.
  • Pour into graham cracker crust.
  • Sprinkle the top with the remaining 1/4 teaspoon of cinnamon and place the pie in a preheated 450 degrees F oven for 15 minutes.
  • Reduce the heat to 350 degrees F and bake for another 30 minutes or until the center is set.

4 pounds tart apples
1 cup water
1 cinnamon stick or 1/2 teaspoon cinnamon extract
1/2 to 1 cup sugar

Steps:

  • Peel, core and quarter the apples. In a Dutch oven, bring apples, water and cinnamon to a boil. Reduce heat; cover and simmer 10-15 minutes or until apples are tender. Remove from the heat. Add sugar to taste and stir until dissolved. If you used a cinnamon stick, remove and discard. Mash apples with a potato masher until desired texture is reached. Serve warm or chilled.

3/4 cup sugar
2 tablespoons flour
1/4 teaspoon salt
1 teaspoon vanilla
2 1/2 cups diced apples, peeled
1 unbaked 9-inch pie crust
1/2 cup brown sugar
1/4 cup butter
1/3 cup flour
1 teaspoon cinnamon

Steps:

  • Beat sour cream and egg together.
  • Add flour, sugar, salt and vanilla.
  • Mix until smooth.
  • Stir in apples.
  • Bake at 400 degrees for 25 minutes.
  • Mix the crumb topping ingredients until crumbly.
  • Remove pie from oven and spread with crumb topping.
  • Bake 20 more minutes.

This is one of the recipes I remember most from my childhood. My grandmother always had this on hand for her grandkids who came to visit. It was invented especially for us kids because it had no "chunks" of apple in it. There was no surprise that the adults loved this pie, just as much as we did.

pastry for double-crust pie (your favorite recipe, or commercially prepared pie dough)
3 eggs
1/2 cup sugar
1/2 teaspoon nutmeg
1/4 teaspoon mace
1 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 cups applesauce

Steps:

  • Prepare pastry for 2 crust pie shell, using your favorite recipe for pie shells.
  • Roll out 2 balls of dough until they measure large enough to fit your pie pan.
  • Line bottom of 8" pie pan with one of the rolled out pastry pieces.
  • Set the other rolled-out dough aside for a bit.
  • Bake the shell for 10 to 15 minutes at 375 degrees; set aside.
  • In a mixing bowl, combine beaten eggs, applesauce, sugar and seasonings.
  • Pour mixture into 8" prepared pie shell.
  • Add top pastry to pie and seal edges.
  • With tines of a fork, prick holes on top of pie shell to vent.
  • Bake at 450 degrees for 10 minutes, then turn oven down to 350 degrees and continue baking 30 more minutes.
  • Note: If you like a more custard-y pie, try adding 1/2 to 1 cup of milk to the above ingredients before pouring into the pieshell (use a 9" shell in this case).

1 cup raisins
1 cup brown sugar
2 tablespoons butter
1/4 teaspoon salt
3 eggs

Steps:

  • Cook applesauce, raisins and brown sugar slowly for 20 minutes.
  • Add butter and salt.
  • Cool.
  • Beat eggs and add to mixture.

  • Mix sugar, flour, cinnamon and softened butter with a pastry blender.
  • Sprinkle on top.
