How do you make overnight oats? It's EASY with this applesauce overnight oats recipe! Try this protein-packed fruit and yogurt parfait!

1 cup unsweetened cinnamon applesauce
1 cup rolled oatmeal, dry
2 tablespoons peanut flour
2 teaspoons chia seeds
¾ cup plain, unsweetened Greek yogurt ((I used nonfat))
¾ cup milk, 2%
2 tablespoons chopped peanuts ((for garnish))

Steps:

  • Note: This overnight oats recipe must be started a day ahead. If you will be using homemade applesauce, make it before beginning this recipe.
  • Stir the oats, peanut flour, and chia seeds in a bowl. Add in the milk and yogurt, and thoroughly combine. Set this mixture aside for 10 minutes to give it time to thicken.
  • Divide half of the oat mixture between two wide-mouth pint jars.
  • Top each jar with ¼ of the applesauce (i.e., you will use up ½ of the applesauce to do this).
  • Divide the rest of the oat mixture between the two jars.
  • Add the rest of the cinnamon applesauce evenly to the jars.
  • Cover the jars and refrigerate overnight. Top each jar with 1 tablespoon of chopped peanuts before eating. Enjoy your grab-and-go breakfasts for the next couple of mornings!

If you're thinking that applesauce is too much work to make from scratch, guess what? I made mine in less than 10 minutes using the microwave. And yeah, it's just as good if not better than any applesauce I've ever had. If you opt for a plain store-bought applesauce, make sure you add some cinnamon (or apple pie spices) to give it some more life.

1/2 cup milk of choice (soy, almond, cow, etc.)
1/2 cup applesauce
1/2 teaspoon cinnamon or apple pie spice (optional, depending on applesauce)

  • Stir the mixture, OR seal it tightly and shake vigorously until everything is thoroughly combined.

1 medium apple, we like gala or golden delicious apples
2 tbsp brown sugar
2 tbsp butter
¼ tsp ground cinnamon
1 cup milk of choice ((we like soy or almond milk))
¼ tsp ground cinnamon
A pinch of salt
1 tbsp maple syrup ((optional, for sweetness))
½ cup applesauce
1 cup old-fashioned rolled oats

Steps:

  • To a rimmed pan, melt butter over medium-high heat. Add the chopped apple, brown sugar, and cinnamon. Stir and cook for 5 minutes, until the apple is golden and saucy, and the brown sugar has melted.
  • Remove from the heat and transfer to a bowl. Set aside to cool.
  • To a bowl, or into two separate jars, add milk, cinnamon, salt, maple syrup (optional), and applesauce. Mix until well combined. Add the rolled oats and mix once again. Finally, stir in the caramelized apples.
  • Cover the bowl or the jars, and let the mixture sit in the fridge for at least 6 hours or overnight. Serve!

1 teaspoon baking powder

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.

4 tablespoons butter, melted
1/2 cup brown sugar
2 tablespoons maple syrup
2 eggs
1 cup applesauce
1 1/2 cups milk
3 cups oatmeal (quick or regular)
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup raisins (optional)
brown sugar
milk

Steps:

  • Mix all wet ingredients and combine with dry ingredients. If raisins are use, plump by letting raisins sit in warm water for 10 minutes. May add more cinnamon to taste.
  • Pour into greased 9 x 9 inch baking dish. Place in refrigerator overnight for oatmeal to dissolve into liquid.
  • Bake in a 350 degree oven for 30 minutes.
  • Top with brown sugar and milk when served.
