- In a bowl, combine the oats, flours and baking powder. In another bowl, combine milk, applesauce and egg whites; add to dry ingredients and mix well. , Pour batter by 1/4 cupfuls onto a heated griddle coated with cooking spray. Cook until bubbles appear on the top; turn and cook until lightly browned.

Steps:
- Gather the ingredients.
- Place ingredients in a medium bowl and whisk until well blended.
- Heat a griddle to 375 F. When the griddle is hot, pour about 1/4 cup of pancake batter per pancake. Cook until bubbles appear and edges are puffed. Flip the pancakes and cook until golden brown on both sides.

- In a large bowl, combine the oatmeal, flour, baking powder and spices, mixing well.
- In a separate bowl, combine the remaining ingredients.
- Beat with a wire whisk until blended.
- Add to dry mixture, mixing until all ingredients are moistened.
- Let stand 5 minutes, then mix again.
- Spray griddle with non-stick cooking spray and preheat over medium heat.
- Using 2 tablespoonfuls for each pancake, drop batter onto griddle.
- Turn pancakes when edges are dry and bottoms are lightly browned.
- Cook until golden brown on both sides.
- Note: If the batter becomes too thick while standing, add a tablespoon or more of skim milk.
- Serve with favorite toppings.

- In a large bowl, combine the cake flour, sugar, baking powder and salt. Stir together and set aside.
- In a separate bowl, whisk together the milk, Applesauce, vanilla, cinnamon and eggs. Slowly drizzle the wet ingredients into the dry ingredients, stirring gently with a spoon as you go. Once combined, if the mixture needs more moisture, splash in a little more milk. The batter should be pourable.
- Heat a large skillet or griddle over medium-low to low heat. Smear a little bit of butter over the surface and drop tablespoon-sized amounts of batter onto the pan (more if you want larger pancakes). Wait a minute or so, then flip to the other side. The pancakes should be light golden brown and set in the middle.
- Top with butter and drizzle with warm maple syrup.
- Throw the apples, apple juice and lemon juice into a pan and bring it to the boil over medium-high heat. Lower the heat and simmer until the apples are soft, about 15 minutes. Stir through the sugar and mix until melted. Add the cinnamon and stir through.
- Puree the mixture in a food processor, blender or food mill. If not using right away, leave to cool and then refrigerate.

- Mix the water, oats, salt, cinnamon, ginger, and vanilla in medium sauce pan.
- Bring to a boil and reduce heat to just above medium.
- Continue boiling for 3 minutes.
- Add sugar and stir.
- Add applesauce and stir.
- Scoop into bowls and add small amount of milk (do not stir).

- Lightly oil an electric frypan or pancake griddle with no-stick cooking spray and heat.
- Whisk (wet ingredients) milk, oil, and eggs together; combine remaining (dry) ingredients and add them to the wet ingredients; stir to combine all.
- Pour 1/4 cup of batter at a time onto hot griddle to form 5-6" pancakes; cook until surface of pancakes is bubbled; flip pancakes over and cook until both sides are light golden brown.
- NOTES: The ratio of white flour to whole wheat flour can easily be varied (example: 1 cup white with 1/2 cup wheat flour) to suit your family's preference. - Blend 1 cup of the oats in a food processor or high-speed blender until they resemble a flour. Transfer to a large mixing bowl and add the rest of the dry ingredients.
- In a separate mixing bowl, beat together the wet ingredients until full incorporated. Add the wet ingredients to the dry and beat until smooth. Let sit for 5 - 10 minutes to let the oats soften a little.
- Heat a griddle pan over medium-low and grease with your desired ingredient (I used coconut oil which was lovely). Ladle the batter on the pan, whatever size you would like. Cook until small bubbles start to form about 3 - 5 minutes, or until browned. The bottom of the pancakes should be fully cooked and sturdy enough to slide the spatula under them. If it's not and the pancake starts to break, continue to cook.
- Flip (carefully!) the pancakes over and cook for another 2 - 3 minutes until brown. Serve immediately with your choice of toppings.
