HEALTHY APPLE MUFFINS

Healthy Apple Muffins image

Amazing, healthy apple muffins made with maple syrup and whole wheat flour! No one will guess that this simple cinnamon apple muffin recipe is good for you, too. Recipe yields 12 muffins.

Provided by Cookie and Kate

Categories     Muffins

Time 28m

Number Of Ingredients 14

1 3/4 cups white whole wheat flour or regular whole wheat flour
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup grated apple
1 cup apple diced into 1/4" cubes
1/3 cup melted coconut oil or extra-virgin olive oil
1/2 cup maple syrup or honey*
2 eggs, preferably at room temperature
1/2 cup plain Greek yogurt (I used full-fat but any variety should do)
1/2 cup applesauce
1 teaspoon vanilla extract
1 tablespoon turbinado sugar (also called raw sugar), for sprinkling on top

Steps:

  • Preheat oven to 425 degrees Fahrenheit. If necessary, grease all 12 cups on your muffin tin with butter or non-stick cooking spray (my pan is non-stick and doesn't require any grease).
  • In a large mixing bowl, combine the flour, baking powder, cinnamon, baking soda and salt. Blend well with a whisk. Add the grated apple (if it is dripping wet, gently squeeze it over the sink to release some extra moisture) and chopped apple. Stir to combine.
  • In a medium mixing bowl, combine the oil and maple syrup and beat together with a whisk. Add the eggs and beat well, then add the yogurt, applesauce and vanilla and mix well. (If the coconut oil solidifies in contact with cold ingredients, gently warm the mixture in the microwave in 30 second bursts.)
  • Pour the wet ingredients into the dry and mix with a big spoon, just until combined (a few lumps are ok). The batter will be thick, but don't worry! Divide the batter evenly between the 12 muffin cups. Sprinkle the tops of the muffins with turbinado sugar. Bake muffins for 13 to 16 minutes, or until the muffins are golden on top and a toothpick inserted into a muffin comes out clean.
  • Place the muffin tin on a cooling rack to cool. If you have leftover muffins, store them, covered, at room temperature for up to 2 days, or in the refrigerator for up to 4 days. Freeze leftover muffins for up to 3 months.

Applesauce Muffins image

Soft and moist homemade applesauce muffins that can be oil free and are great for a healthy breakfast.

Provided by Chocolate Covered Katie

Categories     Breakfast

Time 20m

Number Of Ingredients 11

1 cup applesauce
3 tbsp oil OR applesauce or mashed banana
2 tbsp milk of choice
2 tsp pure vanilla extract
2 tsp white or cider vinegar
1 cup spelt,
1/4 cup sugar or unrefined sugar
1/2 tsp salt
1/2 tsp each: baking soda and baking powder
1/4 tsp cinnamon
optional handful raisins, (crushed walnuts, shredded coconut, etc.)

Steps:

  • *If you want to make mini muffins, bake only 10 minutes. I recommend this mini muffin pan.Whisk all liquid ingredients together. Preheat oven to 350, and line a muffin tin. In a new bowl, stir remaining ingredients very well. Pour dry into wet, and stir until just evenly mixed. Fill each liner about 2/3 of the way, leaving a little room because they will rise. Bake on the center rack, 20 minutes or until muffins have domed and a toothpick inserted into the center of a muffin comes out mostly clean. Let cool. (If you loosely cover overnight on the counter or refrigerated, the liners peel off easily the next day and flavor and texture are even better.) Leftovers can be frozen if desired. LOW-FAT APPLE SPICE MUFFINS

Low-Fat Apple Spice Muffins image

What I like the most about these muffins is that the spices make the muffin what it is. The raw cane sugar and whole wheat pastry flour are the best to use because they are the least processed ingredients available and retain more of their natural goodness. The chunky apple bits give me more for my bite and add another level of sweetness to the muffin. These make a great breakfast or brunch item, or you can have one with a cup of coffee and unwind! Enjoy!

Chuck Hafner's Farmer's Market is a Syracuse favorite for produce, plants and garden supplies. Chuck's wife Linda wrote Simple, Fresh and Healthy: A Collection of Seasonal Recipes, the inspiration for these muffins. LOW FAT (BUT TASTY!) BUTTERMILK APPLE BRAN MUFFINS WW FRIENDLY

Low Fat (But Tasty!) Buttermilk Apple Bran Muffins Ww Friendly image

A healthier variation of my Recipe #101530. I have found they are a perfect WW 2 Points Plus snack after a workout. (They are 3 points plus with the oats added.) They also are very good for keeping your system regular when you are limiting your fat intake. ;) You can keep the batter in the refrigerator for several days and bake them as you need them, but they also freeze really well. (If you don't have fat free buttermilk, place 2 Tbls. of vinegar or lemon juice in a measuring cup then add low fat milk until it totals 2 cups altogether.) Sometimes I get bored with the original plain muffins and add some or all of the optional ingredients. I've also started adding 1 cup of old fashioned oats to mimic nuts in the muffins. They are delicious with WW's cream cheese on them too. PLEASE NOTE: wheat bran is NOT cereal. I buy mine at the bulk food store, and it looks like sawdust. Oat bran can be used in its place but the muffins aren't as tasty IMHO.

LOW FAT APPLE MAPLE MUFFINS

Low Fat Apple Maple Muffins image

I made these this morning based on Dancer's Dried Cherry Muffin recipe (36519), and they turned out moist and delicious! They're just sweet enough, and the whole wheat flour gives them a nice texture. Leave the peels on the apples for fiber; the baking makes them soft anyhow.

Categories     Quick Breads

Time 30m

Yield 18 serving(s)

Number Of Ingredients 15

1 cup whole wheat flour
3/4 cup unbleached flour
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon cinnamon
1/8 teaspoon salt
1/2 cup sugar
1/4 cup light maple syrup
3 egg whites
1/2 cup unsweetened applesauce
1/4 teaspoon vanilla extract
3/4 cup fat-free buttermilk
1 1/2 cups apples, chopped
1 tablespoon sugar
1/2 teaspoon cinnamon

Steps:

  • In a large bowl combine the dry ingredients (flour through sugar); mix well.
  • Make a well in the center and add the egg whites, applesauce, vanilla, and buttermilk. Mix gently.
  • Fold in the apples and mix just until all ingredients are combined.
  • Pour batter into lightly greased muffin tins.
  • Bake at 350 for 20 minutes.
  • While muffins are baking combine the remaining cinnamon and sugar. Sprinkle over muffins as soon as they come out of the oven; the moisture of the muffins will hold just enough sugar in place.
