SUGAR-FREE JELLO APPLESAUCE DELIGHT
I was diagnosed with Type II diabetes a few months ago and have of course gotten very serious about loosing weight, etc. I came up with this recipe as a tasty, super-easy dessert. Use any flavor sugar-free jello. Grape tastes good, but the apple sauce makes it a funny color. Cherry is my favorite so far. Enjoy! Prep time doesn't include chilling/setting time.

Steps:
- Make Jello according the package instructions MINUS 1/4 cup of water.
- Refrigerate for 1 hour then stir in the apple sauce.
- Refrigerate another hour and stir again.
- Chill until set.

THE BEST HOMEMADE APPLESAUCE
After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

Steps:
- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.
APPLESAUCE DELIGHT
This is one of my favorite "diet" dessert recipes. Using unsweetened applesauce and sugar free Jello makes a wonderful refreshing and light dessert. My favorite Jello flavors to use are mixed fruit, cherry and raspberry.

- In a medium size bowl, mix the Jello and boiling water. Mix well until gelatin is dissolved.
- Add the applesauce and mix well.
- Refrigerate for at least 1 hour or until set.
HOMEMADE APPLESAUCE
Steps:
- Preheat the oven to 350 degrees F.
- Place the zest and juice of the oranges and lemon in a large bowl. Peel, quarter, and core the apples (reserving the peel of 2 of the red apples) and toss them in the juice. Pour the apples, reserved apple peel, and juice into a nonreactive Dutch oven or enameled iron pot. Add the brown sugar, butter, cinnamon, and allspice and cover the pot. Bake for 1 1/2 hours, or until all the apples are soft. Remove and discard the red apple peel. Mix with a whisk until smooth, and serve warm or at room temperature.
APPLE YAM DELIGHT
An all new way to enjoy the natural sweetness of Yams. Not a casserole...not a side dish. It's a delicious dessert that you can serve hot, cold, alone or topped with vanilla ice cream or whipped cream. Anyway you serve it, it's Yamtastic! This recipe comes from Princella. I found this recipe in Woman's Day magazine. I have not tried this recipe, but I'm posting it for safe keeping.

- Arrange a little less than half of the apple sauce in a 6"x10"x2" baking dish. Sprinkle with 1/2 teaspoon cinnamon. Spoon 3 tablespoons of the topping over the apple sauce base. Evenly arrange the Princella Yams. Add the remaining apple sauce to cover yams. Sprinkle with remaining 1/2 teaspoon cinnamon. Add the rest of the topping and spread evenly. Bake at 350 until heated throughout (30-40 minutes). Serve hot, plain, or for a special touch, top with whipped cream or vanilla ice cream.
- Topping: Mix together rolled oats, flour and brown sugar. Cut in butter until evenly mixed and crumbly.
